Se analizó la viabilidad del mosto de malta de cebada para utilizarse como materia prima en la producción de oligosacáridos funcionales mediante el uso de la levadura Saccharomyces boulardii. Se llevaron a cabo las siguientes determinaciones en cebada de cuatro variedades (Esmeralda, Josefa, Pastor Ortiz y Gabyota): un análisis selectivo de acuerdo a la NMX-FF-043-SCFI-2003, análisis proximal, azúcares reductores y totales. También se evaluó el crecimiento de la levadura en el mosto de malta. Los resultados obtenidos del análisis de las maltas de cebada, mostraron que los mayores contenidos de humedad, cenizas, carbohidratos y proteína se encontraron en la variedad Pastor Ortiz, (8.9%), Gabyota (6.8%), Josefa (77.4%) y Gabyota (11.8%), respectivamente. En cuanto a azúcares totales y reductores, las mayores concentraciones se encontraron en la variedad Josefa (216.24 g/L y 17.1 g/L, respectivamente). La cinética de crecimiento demostró que S. boulardii tiene la capacidad de adaptación a un medio no funcional (mosto) y que cuenta con las enzimas capaces de hidrolizar la mezcla de azúcares presentes y convertirlos en carbohidratos más sencillo, posiblemente funcionales con un efecto prebiótico.
