In order to increase the availability to consumers and add even more value to peaches (Prunus persica (L.) Batsch) and to identify which cultivars grown in tropical regions are more suitable for jelly processing, the objective of this study was to characterize and evaluate the influence of different peach cultivars (‘Aurora’, ‘Biuti’, ‘Bonão’, ‘Centenário’, ‘Diamante’, ‘Douradão’, ‘Libra’, ‘Régis’ and ‘Tropical’) cultivated in tropical regions on the physicochemical characteristics, rheological properties and sensory acceptance of the resulting jelly. The evaluated cultivars presented great variability among themselves in relation to the physical and physicochemical characteristics. The jellies elaborated from these cultivars; although, presenting great variability in relation to the physicochemical and rheological parameters, presented similar, high acceptance. All cultivars studied are suitable for processing and can be used for industrialization.

Chemical treatment is a mean to accomplish fruit thinning; although its efficiency depends on the compound used, application time, and dosage. Effect of the chemical hydrogen cyanamide (CH2N2) on the thinning of flowers and fruits of the peach cultivar Coral was assessed in this study. Treatments consisted of five doses of CH2N2 (0, 0.2, 0.4, 0.6, and 0.8%) spray application to the point of run-off, at two stages (50% and 100% flowering). The experiment was conducted in a completely randomized design with six replicates and one plant per plot. The following parameters were assessed: percentage of flowers thinned at 25 days after spraying, percentage of fruits thinned, fruiting index, production per plant, fruit mass, diameter and length, flesh firmness, soluble solids (SS) and titratable acidity (TA). Concentrations of 0.6 and 0.8% CH2N2application at 50% flowering resulted in thinning 84.4 and 84.7% of the flowers and 0.4% CH2N2 at 100% flowering thinned 87.3%, values close to index assessed in manual thinning (88.0%) experiments. The highest production per plant was recorded for treatments with CH2N2 application at 50% flowering, resulting from a high percentage of flowers opening after spraying the chemical thinner. As such, flowers opening late were not affected by the chemical, thereby ensuring a higher fruiting index. Peach yield with 50% CH2N2 was not significantly different from yield observed for manual treatment, and 0.6% spray was reported to be the optimal dosage. Treatment with 0.6% CH2N2 application at 50% flowering was not significantly qualitatively different from manual thinning. CH2N2 application is efficient for the thinning of ‘Coral’ peach flowers and fruits.

RESUMO -O objetivo deste trabalho foi estimar os coeficientes de repetibilidade em cultivares de pessegueiro e nectarineira e predizer o número de medições necessárias para as principais características de fruto. Em três ciclos, avaliaram-se quatorze características químicas e físicas de frutos. Para a estimativa dos coeficientes de repetibilidade, do número de medições necessárias e do coeficiente de determinação, foi utilizado o método da análise de variância (ANOVA). Determinou-se, para cada característica, o número mínimo de medições, para predizer o valor real das cultivares. Observou-se variabilidade genética entre os genótipos. As estimativas de repetibilidade foram elevadas, o que mostra a regularidade das cultivares. Para predizer o valor real dos caracteres de fruto com confiabilidade acima de 80%, são necessários a realização de medições em quatro frutos e quatro anos de avaliação. REPEATABILITY TRAITS OF PEACH FRUITSABSTRACT -The objective of this study was to estimate the coefficients of repeatability in peach and nectarine cultivars, and predict the number of required measurements for main fruit traits. Fourteen chemical and physical characteristics of fruits were measured in three cycles. The repeatability coefficients, the number of measurements required and the coefficient of determination were performed by the method of analysis of variance (ANOVA). For each trait, the minimum number of measurements to predict the actual value of the cultivars was determined. Genetic variability was observed among genotypes. Repeatability estimates were high, showing the regularity of cultivars. Measurements in four fruits and four years of evaluation are needed to predict the actual value of fruit characters with reliability above 80%.
