The objective of this study was, through mixing design and response surface methodology, to optimize a reduced calorie mixed juice of persimmon, orange and pineapple based the sensory and nutritional characteristics. This study also aimed to carry out the survey of the physicochemical characteristics that are desirable in this product. It was found that juice of these fruits, when combined, have better sensory and nutritional characteristics than when isolated. The consumer has a preference for mixed fruit juices made up of orange, pineapple and persimmon that are sweeter and more acidic and regarding color, consumers prefer a juice with less intense red color. According to evaluation, the most recommended mixed juice formulations are 50% pineapple and 50% persimmon, and 33% pineapple, 33% persimmon, and 33% orange.
At the end of the production period of strawberries grown in subtropical regions, postharvest durability is severely diminished due to rising temperatures which compromises the commercialization of fresh fruit. An ideal option would be to process strawberries in the form of preserves, jams, and jellies. Along this line it becomes extremely important to conduct a survey of which cultivars grown in subtropical regions are more suitable for processing in the form of jelly, as well as to understand what the consumer profile is for this product. The objective of this study was to evaluate the influence of different strawberry cultivars grown in subtropical regions of Brazil (Camarosa, Festival, San Andreas, Oso Grande, Camino Real, and Albion) on the physicochemical characteristics, rheological properties and sensory acceptance of the resulting jelly in order to identify cultivars with the greatest potential for industrial use. The strawberry cultivars presented different physicochemical characteristics which resulted in jellies with different physicochemical and rheological characteristics. In this study, however, we verified that all cultivars have potential to be processed in the form of jelly due to good acceptance of all formulations prepared. In general consumers prefer a lighter-colored strawberry jelly, with a less intense red color, more acidic, and less consistent/firm.
Faced with the need for greater knowledge of the different physalis species, the aim of this study was to characterize different Native American physalis species (Physalis peruviana L., Physalis pubescens L., Physalis angulata L., Physalis mínimos L. and Physalis ixocarpa Brot) as to their physicochemical characteristics, bioactive compounds and antioxidant activity. Besides that, in order to increase their use and add even more value to this fruit, we also evaluate the influence of these different species on the physicochemical, rheological and sensory characteristics of physalis jelly. In addition, this study evaluated the sensory acceptance of the combination of physalis jellies obtained from different species with brie-type cheese. The Peruviana, Pubences and Angulata, are highlighted for being the nutritionally richest species, with the highest levels of phenolic compounds, vitamin C and antioxidant. Moreover, they stand out for originating the most widely sensory accepted jellies, either in pure form or in combination with brie-type cheese.Keywords: Physalis L.; different species; characterization; jelly processing; harmonization. O objetivo deste trabalho foi avaliar a fenologia e a produção de cultivares de framboeseiras em condições subtropicais, no Brasil. O experimento foi realizado nos municípios de Lavras, MG, e Marechal Cândido Rondon, PR. Foram avaliadas sete cultivares, com as espécies Rubus idaeus (vermelhas, 'Heritage', 'Polana', 'Autumn Bliss' e 'Batum'; e amarelas, 'Golden Bliss', em Lavras, e 'Fall Gold', em Marechal Cândido Rondon) e R. niveus (framboesa-negra), além de um híbrido (Boysenberry) entre R. idaeus e amora-preta (R. ursinus). Foram coletados dados fenológicos (florescimento e período de colheita) e produtivos de dois ciclos de produção, e analisadas características físico-químicas dos frutos (dimensão, acidez titulável e conteúdo de sólidos solúveis). As cultivares de R. idaeus e o híbrido interespecífico não se adaptaram às condições climáticas do oeste paranaense, com baixa produção de frutos. No entanto, a framboesa-negra é uma excelente opção de cultivo na região, com alta produtividade (acima de 25 Mg ha-1) e qualidade de frutos (ratio de 9,3). No Sul de Minas, as framboeseiras apresentam boa adaptação, principalmente a framboesa-negra (18,2 Mg ha-1), a framboesa amarela (5 Mg ha-1) e a framboesa vermelha 'Batum' (4,4 Mg ha-1).
-Physalis peruviana L. is a perennial plant, but commonly referred as annual in commercial crops. The cultivation of this species might be successful in Brazilian subtropical areas with an adequate and planned management. The objective of the present study was to quantify the production of Physalis peruviana L. with or without plastic covering over plant canopies, using two planting densities, managing the number of stems, and pruning side stems. This study was divided in two experiments; the first experiment evaluated the effect of spacing between each plant and the use of plastic covering in fruit production. The second experiment investigated the effect of the number of productive stems and of pruning in fruit production. The experimental design used for both experiments was randomized blocks, in 2 x 2 factorial scheme, which contained 6 blocks and 10 plants per plot. The following were analyzed for both experiments: production variables, estimated production, number of fruits per plant, mean fruit mass, mean fruit length and diameter, and chlorophyll relative index. Plastic covering and number of stems did not influence fruit production. The 3.0 x 0.5 m spacing without pruning side stems provided a larger production. Keywords:Thickening. Small fruits. EM REGIÃO SUBTROPICALRESUMO -A Physalis peruviana L. é uma planta perene, mas usualmente tratada como anual em plantios comerciais. Com um manejo adequado e planejado, o cultivo pode ter sucesso nas zonas subtropicais brasileiras. Objetivou-se neste trabalho, quantificar a produção de Physalis peruviana L. através da utilização ou não de cobertura plástica sobre o dossel das plantas, do uso de duas densidades de plantio, do manejo no número de hastes e utilização de poda das hastes laterais. O trabalho foi dividido em dois experimentos, onde no primeiro experimento avaliou-se o efeito do espaçamento entre plantas e uso de cobertura plástica na produção de frutos. O segundo experimento constituiu do efeito do número de hastes produtivas e uso da poda na produção de frutos. O delineamento experimental adotado, para ambos os experimentos foi blocos ao acaso, em esquema fatorial 2 x 2, contendo 6 blocos e 10 plantas por parcela. Para ambos os experimentos foram analisadas as variáveis produção, produtividade estimada, número de frutos por planta, massa média dos frutos, comprimento e diâmetro médio dos frutos e índice relativo de clorofila. A cobertura plástica e o número de hastes não influenciaram na produção dos frutos. O espaçamento de 3,0 x 0,5 m sem o uso da poda das hastes laterais proporcionaram a maior produção.
