Gelatin gummy jelly is a chewable snack with attractive synthetic colour and flavour. The use of natural carotenoid colourant, found in Gac aril or pulp, potentially benefits consumer health. The objectives of this study were to formulate gummy prototypes designed with varying levels of gelatin, sucrose, and glucose syrup, to vary the addition of whey protein concentrate (WPC) and freeze-dried (FD) Gac aril and pulp to the selected prototype, and to investigate changes in coloured WPC-mixed gelatin gummy during storage. The prototype containing gelatin, sucrose, and glucose syrup at 10, 50, and 40%, respectively, was selected based on its hardness, gumminess, and chewiness values. The addition of WPC (0.75%) to the selected prototype increased the values of hardness, springiness, and gumminess but reduced the values of cohesiveness and chewiness. Coloured WPC-mixed gelatin gummy with blends (0.5 g/100 g) of FD Gac aril and pulp at a ratio of 75:25 appeared yellow-orange and received the highest acceptance score. The quality of coloured WPC-mixed gelatin changed to a dull colour and a softer texture gel during storage. Therefore, Gac-coloured WPC-mixed gelatin gummy improvement for colour and texture qualities should be of concern for shelf-life stability.

Gac fruit is one of the exceptional varieties of fruits that contain numerous secrets and wonders; which according the text of Qur'an, the benefits of fruits in paradis frequently discussed and as natural resource, medical and health. However, since prior studies have solely concentrated on the content and nutrients of Gac fruit, the value chain ecosystem for this valuable product has not been explored through research. Therefore, this concept paper will literately focus on the nutritional position of this fruit according to the text in the Quran as well as the exploring the value chain that can strengthen the viability of the product. Methodology used to provide sufficient information on Gac fruit are the Qur'anic literature and value chain inter-sectoral upgrading model literature review. The findings of the study is expected to provide a list of Gac fruit's benefit according to Quran and products value chain as part of a large -scale source of food security and sustainability, as well as to reinforce the national aim in the Sustainable Development Goal led by the Ministry of Agriculture and Food Industry (MAFI).

Gac fruit (Momordica cochinchinensis Spreng) is a popular tropical fruit in southeast Asia. What is amazing is that its seeds (Momordicae Semen) and arils are traditional herbs with anti-tumor activity, and have protected human health for more than 1000 years. In recent years, its anti-tumor activity has received extensive attention and research. This manuscript summarized the chemical composition of saponins, fatty acids, volatile constituents, proteins, peptides, and other components from Momordicae Semen (MSE). The effect and mechanism of MSE and its extract on breast cancer, gastric cancer, lung cancer, esophagus cancer, melanomas, and human cervical epithelial carcinoma were discussed. In addition, its antioxidant, anti-inflammatory, and other pharmacological effects were also analyzed. We hope that this review will provide new ideas for the treatment of cancer and other diseases, and become a reference for the further research into complementary and alternative medicine.
