The aim of extending shelf-life and maintaining quality is one of the major issues regarding mango fruit preservation. The quality of mango fruits is greatly affected by postharvest factors, especially temperature and fruit treatment. In this study, the effect of coating and storage temperature on the characteristics of mango fruits was investigated. The mango fruits were immersed in different concentrations (1.5%, 2.0%, and 2.5%) of pectin/nanochitosan dispersion (with ratios of pectin:nanochitosan 50:50), and (0.75%, 1% and 1.25%) of nanochitosan dispersion and stored at 17, 25, and 32 °C for 24 days. Changes in fruit, including weight loss, firmness, color, chemical composition (such as the total soluble solids concentration (TSS)), total sugar, reducing sugar, titratable acidity (TA), and vitamin C were periodically recorded. The results indicated that the pectin/nanochitosan coating significantly prevented reductions in the fruit weight, firmness, TSS, TA, and vitamin C content. Additionally, pectin/nanochitosan at a low temperature (17 °C) had a greater positive effect on fruit shelf-life and weight maintenance than 25 and 32 °C. The coated mango fruits maintained good quality for 24 days at 17 °C, while coated fruits stored at 25 °C and 32 °C, as well as uncoated ones stored at 17 °C, were destroyed after two weeks. At the maximum storage time evaluated, the coating formulations containing pectin and nanochitosan exhibited microbial counts below the storage life limit of 106 CFU/g of fruit. In general, the results showed that the pectin/nanochitosan coating (2%) with a storage temperature of 17 °C is the most effective strategy for improving quality and extending the shelf-life of mango fruits.

The aim of the study was to consider the suitability of a mixture of juices from jicama, winter melon, and carrot as a raw medium for producing probiotic juice by Lactobacillus strains (Lactobacillus plantarum CICC22696 and Lactobacillus acidophilus CICC20710), as well as evaluate changes of physicochemical and microbiological characteristics during fermentation and cold storage (4˚C, 28 days). Both strains grew well in juice mixtures after 24 h of fermentation at 37˚C, reaching nearly 9 and 8 log CFU/mL when inoculated with L. plantarum and L. acidophilus respectively. The viability of L. plantarum was near 8 log CFU/mL at the end of storage whereas viability of L. acidophilus only remained 4.57 log CFU/mL. Degradation of total carotenoids was in the range of 12%-23% in fermentation periods and 16%-23% during cold storage depending on the strain used. The values of lightness, redness, and yellowness increased during fermentation. However, this tendency was variable during cold storage when the values of redness and yellowness decreased. Sensory acceptability of the products was enhanced by adding sucrose or multi fruit juice (containing mainly tropical fruit juices). The fermented juice with L. plantarum is efficient to produce a functional probiotic beverage.

Sorafenib is an oral multi-target kinase inhibitor that has been used to treat unresectable hepatocellular carcinoma and advanced renal cell carcinoma. The aim of the study was to prepare gum Arabic-chitosan (GA-CS) and gum Arabic-modified chitosan (GA-MCS) microcapsules containing sorafenib as the core phase by complex coacervation. The fluorescence microscopy, dynamic light scattering (DLS), drug loading, and encapsulation efficiency of the microcapsules were clarified. The GA-MCS microcapsule was successfully performed at approximate pH of 4 with a 1% modified chitosan -to-5% gum Arabic ratio of 5:1 (v/v), while the GA-CS microcapsule was successfully prepared at pH 3.5 with a volume ratio of 1% chitosan -to-5% gum Arabic 1:1 (v/v). Sorafenib was encapsulated in the microcapsules as shown through the fluorescence microscopy images. The formation of GA-CS and GA-MCS microcapsules with hydrodynamic sizes of 6.31 μm and 6.56 μm, respectively, was successfully achieved. The drug loading and encapsulation efficiency of the GA-MCS microcapsule was greater than that of the GA-CS microcapsule. The findings indicated that the GA-MCS microcapsule could be an appropriate formation to load sorafenib with a high encapsulation yield.
