Agricultural production activities generate a large amount of waste, most of which is of organic origin from plant remains. These residues could easily be transformed into a resource, specifically, into a substrate for use in soilless cultivation; however, in most cases, they are not used. Therefore, a characterization of local agricultural residues was carried out to determine their use as a substrate for crop cultivation without soil in a protected environment. The selected substrates were Sphagnum peat, coir fiber, and compost, which were managed alone or in mixtures of 50/50, 75/25, or 25/75% v/v ratios. We also included a mixture of virgin mountain soil and earthworm humus (known as INIA mixture) because it is used by local growers. The results showed that the substrates based on coir fiber, peat, and mixtures of both presented suitable characteristics for horticultural crops. On the contrary, compost-based substrates had high pH values and low organic matter contents that could be improved before use. The relationship found between the evaluated parameters of each substrate allowed us to establish that variables, such as the content of organic matter and water at different tensions and particle sizes, can be utilized to make a quick selection of the substrates produced locally, which would lead to the use of waste in a way that is more consistent with sustainable agricultural production and minimal environmental impact, by being used in the production of crops in containers without soil. In addition, these results can be used as an alternative reference in localities where these residues are easily available.

The objective of the present study was to use molecular techniques to identify a wild mushroom isolated from A. salmiana, and then evaluate its biological efficiency, production rate, and nutritional and morphological characteristics when grown on A. salmiana bagasse with various concentrations of urea as a source of nitrogen. Two types of inoculum were employed: in grain (WG) and pellet (WP) form. The substrate was supplemented with total nitrogen concentrations (TN) of 0.77, 0.95, 1.14, 1.32, and 1.5% to evaluate its effect on the biological efficiency (BE), production rate (PR), and morphological and nutritional characteristics of the fruiting bodies. The molecular analysis of the ITS region permitted the amplification of a product of 750 pb. The mushroom was identified as Pleurotus djamor. After supplementing the substrate with urea, a BE of 70% was obtained in the sample inoculated with WG at 1.32% TN. Observations found that the TN concentration of 1.5% produced malformations in the fruiting bodies. The analysis of the sporocarps indicated a raw protein content (RP) of 15–26% and that the mushroom’s nutritional composition changed according to the inoculum utilized and the percentage of nitrogen in the substrate. This is the first report on the isolation of P. djamor on A. salmiana as an atypical substrate, and so represents an opportunity for further study and commercialization. To its chemical composition and high availability, A. salmiana bagasse is a suitable alternative substrate for cultivating edible mushrooms, specifically P. djamor.

En Oaxaca, en 2019, se produjo 90.1% del mezcal certificado producido a nivel nacional, además de una cantidad desconocida de mezcal no certificado, que en su producción generan residuos, el bagazo el de mayor importancia. Aunque en Oaxaca actualmente es subutilizado, existen diversas investigaciones sobre su potencial, que han sido destinadas a la obtención de productos y metabolitos diversos de uso industrial. Se desconoce el dato exacto de la cantidad generada en los palenques y las características de estos; sin embargo, es información importante ya que es la base para establecer estrategias de manejo. En este trabajo, realizado en la región Valles Centrales de Oaxaca durante 2017, se presenta la caracterización básica de los residuos sólidos de la agroindustria del mezcal por especie utilizada, y se estiman coeficientes que pueden ser de aplicación general para la estimación rápida de la producción de estos residuos, y sirva como base para las estrategias de manejo. Se concluye que existen diferencias en las características de los residuos y la cantidad de bagazo generado entre las diferentes especies evaluadas.
