ResumoEste trabalho teve por objetivo investigar os parâmetros relevantes para a estruturação de polpa de açaí, avaliando-se o efeito da combinação de diferentes hidrocoloides nas características do gel de fruta. Foi realizado planejamento experimental 2 3 , em que as concentrações de alginato (X 1 ), pectina (X 2 ) e gelatina (X 3 ) foram testadas, tendo como respostas atividade de água (Y 1 ), firmeza (Y 2 ), sólidos solúveis (Y 3 ) e pH (Y 4 ). A polpa de açaí e a formulação de estruturado selecionada a partir da análise do planejamento experimental foram caracterizadas em relação aos compostos funcionais, avaliando-se o teor de taninos e antocianinas, além das análises de composição centesimal, pH, acidez titulável, sólidos solúveis, atividade de água, fração Nifext e valor energético total. Os resultados obtidos por meio do planejamento experimental indicam que, à medida que se aumenta a concentração dos hidrocoloides, independentemente da combinação entre eles, aumenta-se também a firmeza dos estruturados. A variação dos hidrocoloides não afetou de forma significativa os sólidos solúveis e a atividade de água final dos produtos; porém, observou-se que a presença de alginato afeta a acidez do produto, reduzindo-a. Sensorialmente, o produto selecionado apresentou médias de aceitação elevadas, indicando potencial de consumo na forma em que se apresenta, além da possibilidade de utilização na formulação de produtos de confeitaria ou alimentos congelados.

SummaryThe objective of this study was to investigate the important parameters in the structuring of assai palm fruit pulp gel, evaluating the effect of combinations of different hydrocolloids on the characteristics of the fruit gel. A 2 3 factorial design was prepared, varying the concentrations of alginate (X 1 ), pectin (X 2 ) and gelatine (X 3 ), the responses being water activity (Y 1 ), firmness (Y 2 ), soluble solids (Y 3 ) and pH (Y 4 ). The assai palm fruit pulp and the structured gel formulation selected from the results of the experimental design were characterized in terms of their functional compounds (tannin and anthocyanin contents), and also the proximate composition, pH, titratable acidity, soluble solids, water activity, carbohydrate contents and total energetic value. The results indicated that the firmness of the structured gels increased with increasing hydrocolloid concentration, and was not affected by their interactions. Variations in the hydrocolloids did not significantly affect the soluble solids content or water activity of the products, but the presence of alginate reduced their acidity. The selected product presented good average sensory acceptance scores, indicating its potential for consumption as presented, as well as the possibility of being used in the formulation of confectionery products or in frozen foods.
