RESUMO-O objetivo deste estudo foi caracterizar física e físico-quimicamente frutos de 21 matrizes de pupunheira (Bactris gasipaes Kunth), visando a obter subsídios que permitam avançar com o programa de melhoramento genético, em especial para características da polpa do fruto. Os frutos provenientes de diferentes genótipos foram caracterizados quanto à dimensão dos frutos e caroço, umidade, proteínas, lipídeos, cinzas, fibras e carotenoides totais. Os resultados obtidos para as diferentes variáveis analisadas demonstraram diferenças entre os frutos obtidos de diferentes genótipos. A análise de proteínas apresentou valores que variaram de 4,20 a 6,79%, com destaque para a matriz B04-P20, que apresentou o maior valor. Para lipídeos, os teores variaram bastante, com valores entre 8,25 e 40,83%, destacando-se a matriz B02-P30 com o maior teor de lipídeos. Os teores de carotenoides totais das matrizes de pupunheira variaram de 8,02 a 124,90µg/g, com destaque para as matrizes B02-P30 (124,90µg/g) e B05-P45 (123,04µg/g), indicando que a pupunha pode contribuir de maneira importante na ingestão de antioxidantes na dieta. De maneira geral, as análises físicas e físico-químicas dos frutos mostraram diferenças significativas entre as matrizes para os caracteres estudados, evidenciando ser um conjunto geneticamente promissor para a prática da seleção. PHYSICAL AND CHEMICAL CHARACTERISTICS OF PEACH PALM FRUITS IN THE STATE OF PARÁABSTRACT -The aim of this study was to assess the physical and physical-chemical characteristics of the fruits of 21 reproductive peach palms to help guide future research on genetic improvements of the species, especially regarding the fruit pulp. Fruits from each genetic material were characterized by fruit and seed size, moisture, protein, lipid, ash, fiber and total carotenoids. Average values for all studied variables were significantly different among all individuals. Protein values ranged from 4.20 to 6.79%, especially for B04-P20 that showed the highest value. Lipid levels varied markedly, with values ranging between 8.25 and 40.83%, and matrix B02-P30 presenting the greatest levels of lipids. Total carotenoids ranged from 8.02 to 124.90 mg/g, with matrices B02-P30 (124.90µg/g) and B05-P45 (123.04µg/g) presenting the highest values. The high total carotenoid values observed indicates that peach palms could make a significant contribution to antioxidants in the diet. Overall, the physical and physical-chemical assessment revealed significant differences among the studied reproductive individuals for the characters studied, indicating that this species offers considerable promise for future research on genetic improvements.
Eight pepper genotypes (Capsicum sp., Capsicum annun L., C. chinense Jacq, and C. baccatum L. var. umbilicatum) were assayed for total phenolics, anthocyanins, carotenoids, vitamin C, and total antioxidant activity in order to determine their bioactive compound profile and to establish the correlations between these compounds and their antioxidant activity. The genotype IAN 186311 (C. chinense Jacq.) showed the highest total antioxidant activity and the highest concentrations of phenolic compounds. As for the content of carotenoids, the genotype with the highest concentration was IAN 186324 (Capsicum sp.), and the genotype IAN 186305 (C. baccatum L. var. umbilicatum) showed the highest content of vitamin C and anthocyanins. Terefore, it can be concluded that the Capsicum sp. genotypes analyzed demonstrated a rather high diversity of bioactive compounds that should be further explored given the benefits they can provide to consumer health.
Este trabalho teve por objetivo desenvolver nova formulação de snack por extrusão termoplástica a partir de mistura de farinhas de quirera de arroz e de bandinha de feijão, bem como avaliar o potencial nutricional, tecnológico e sensorial do novo produto. A farinha de bandinha de feijão carioca foi incorporada à farinha de quirera de arroz na proporção de 30%. O snack foi produzido em extrusora monorrosca, escala piloto. Os parâmetros de extrusão foram fixos, utilizando-se três zonas de extrusão com temperaturas de 40, 60 e 85 °C; velocidade do parafuso de 177 rpm; taxa de alimentação de 292 g.min-1, e matriz circular de 3,85 mm de diâmetro. A amostra de snack foi submetida a caracterizações fisicoquímica, tecnológica e sensorial. Observou-se efeito significativo da farinha de bandinha de feijão no aumento dos teores proteico e de fibras no snack obtido, quando comparada à farinha de quirera de arroz. Em relação às características tecnológicas do produto, obteve-se 0,17 g.cm-3 para densidade aparente, 7,75 para o índice de expansão e 435, g.f para a dureza instrumental. A formulação estudada foi aceita sensorialmente, com índice de aceitação para impressão global de 76%. Conclui-se que é possível produzir snacks por extrusão a partir da incorporação de 30% de farinha de bandinha de feijão à farinha de quirera de arroz, resultando em produto aceito sensorialmente e com adequado valor nutricional.
The objective of this work was to develop an extruded breakfast product containing broken rice and split old beans and to verify the influence of the extrusion process on their physicochemical, technological, and sensory characteristic. The final product had a protein content of 9.9 g.100 g-1, and therefore it can be considered a good source of proteins for children and teenagers. The dietary fiber content of the final edible product was 3.71 g.100 g-1. Therefore, the breakfast meal may be considered as a source of dietary fiber according to Brazilian law . As for the technological properties, the extruded product presented an expansion index of 8.89 and apparent density of 0.25 g.cm-3. With regard to the sensory analysis, the acceptance average was ranked between 6.8 and 7.7, corresponding to the categories "liked slightly" and "liked very much". With regard to purchase intention, 79% of the panelists said they would certainly or possibly purchase the product. Broken rice and split old beans are interesting alternatives for the elaboration of extruded breakfast products presenting good nutritional, technological, and sensory qualities.
RESUMO-O presente trabalho teve por objetivo realizar a caracterização física e físico-química de três cultivares de bananeira do subgrupo 'Maçã', em diferentes estádios de maturação, bem como a avaliação sensorial dos frutos maduros. Os cachos de banana das cultivares Caipira, Thap Maeo e BRS Tropical foram colhidos no estádio 2 de coloração da casca (verde-maduro) e armazenados sob condição ambiente, sendo avaliados com relação ao comprimento e diâmetro dos frutos, firmeza, pH, sólidos solúveis, acidez titulável, açúcares redutores, não redutores e totais da polpa neste mesmo estádio, e à medida que atingiam os graus 3; 5 e 7 de coloração da casca. Os frutos completamente maduros foram ainda analisados quanto à aceitação sensorial, por meio dos atributos aroma, cor da polpa, textura e sabor dos frutos. Durante o período de maturação das bananas, observaram-se, para todas as cultivares avaliadas, aumento da acidez, sólidos solúveis e açúcares, fatores responsáveis pelo aroma e sabor da fruta. Verificou-se também redução na firmeza dos frutos com o amadurecimento e redução do pH para as cultivares estudadas. Com relação à análise sensorial, destacaram-se as cultivares Tropical e Thap Maeo, com as maiores notas médias para todos os atributos sensoriais analisados. POSTHARVEST QUALITY OF 'MAÇA' BANANA CULTIVARS IN BELÉM REGION-PAABSTRACT -The present study aimed to characterize the physical and physical-chemical properties and perform sensory evaluation of ripe fruits of three banana cultivars of the subgroup 'Maçã ' at different stages of maturation. Bunches of Caipira, Thap Maeo, and BRS Tropical cultivars were harvested at stage 2 of color peel (green-mature) and stored at room temperature. They were evaluated at color peel stages 2, 3, 5, 7 with respect to length and diameter of the fruits. The following properties of the pulp were investigated: firmness, pH, soluble solids, titratable acidity and sugar concentration (reduced, not reduced and total). Fully ripe fruits were also analyzed regarding the sensory acceptance through the attributes aroma, pulp color, texture, and flavor of fruit. As the ripening progressed, acidity, soluble solids and sugars increased, factors responsible for the fruit flavor, as well as the decrease in fruit firmness and the pH reduction were observed for all cultivars. With respect to sensory analysis, the Tropical and Thap Maeo cultivars presented the highest average scores for all sensory attributes evaluated.
AbtractThe aim of this study was to determine the physical and microbiological characteristics of extruded broken beans flour, in addition to developing mixtures for gluten-free cake with these flours, evaluating their technological and sensory quality. Glutenfree formulations were prepared with 45%, 60% and 75% of extruded broken beans. All analyzes of the flours and mixtures for cakes were performed according to standard techniques found in the literature. Sensory analyzes of cakes applied the 9-point structured hedonic scale. Results were submitted to variance analysis and comparison of means test (Tukey, p<0.05). The use of extruded broken beans improved the water absorbed and water solubility index of the mixtures for gluten-free cake, and for the lower viscosity and retrogradation when compared to the standard formulation. All cakes were accepted (rate ≥ 7) for all the analyzed attributes. From the technological and sensory standpoints, the development of gluten-free cake mixtures is feasible with up to 75% of extruded broken beans.
Frutos e hortaliças minimamente processados devem apresentar atributos de conveniência e qualidade do produto fresco. O objetivo deste trabalho foi estudar o efeito do processamento mínimo de frutos tratados com soluções a 1% de ácido ascórbico, ácido cítrico e cloreto de cálcio, durante armazenamento refrigerado, na qualidade do kiwi (Actinidia deliciosa cv. Hayward). A perda de massa foi mínima durante o período de armazenamento. O ácido ascórbico fornecido pelo tratamento foi eficientemente absorvido pelos tecidos, mantendo os níveis de vitamina C cerca de 25% mais elevados nesses frutos do que nos demais tratamentos. A análise microbiológica detectou presença de bolores e leveduras e psicrotróficos, somente no tratamento com ácido cítrico, aos 8 e 10 dias, respectivamente. Não se detectaram coliformes totais e fecais e mesófilos, o que indica que o processamento foi realizado em boas condições higiênicas. Os kiwis minimamente processados e tratados com cloreto de cálcio apresentaram uma vida útil de dez dias. Nos demais tratamentos e no controle, esse tempo foi de seis dias.
