RESUMOEstudaram-se as características de farinha de bagaço de jabuticaba fermentado e algumas propriedades funcionais (índice de expansão e índice de solubilidade) dos extrusados elaborados a partir deste bagaço e arroz, em proporções que variaram de 11,59 a 25% (bagaço/arroz). A farinha de bagaço de jabuticaba fermentado foi avaliada quanto à distribuição do tamanho de partícula, cor, sabor e aroma, composição centesimal, minerais e fibras. Algumas das características desta farinha foram comparadas com as das farinhas de bagaço de jabuticaba doce (sem fermentar) e arroz polido. O extrusor utilizado para obtenção das farinhas pré-gelatinizadas constituiu-se em um único parafuso com taxa de compressão de 1:3, com rotação variável (65,90 a 234,10 rpm). Usou-se uma matriz circular de 3 mm e uma taxa de alimentação de 5 kg/h. As temperaturas da 1 a e 2 a zonas de aquecimento do extrusor foram mantidas fixas (50 e 100 °C, respectivamente) e a 3 a zona variou entre 99,54 e 200,46 °C. A Metodologia de Superfície de Resposta foi usada para avaliar a tendência das propriedades funcionais frente às variações de bagaço na formulação e dos parâmetros do processo (temperatura e rotação do parafuso). Os resultados mostraram que a farinha de bagaço de jabuticaba fermentado é uma boa fonte de fibras, de proteínas e de minerais, constituída de partículas finas com aroma característico do fruto e de sabor azedo-adstringente e ligeiramente salgado. A expansão dos extrusados aumentou com o aumento da rotação do parafuso e diminuiu com o aumento da adição de farinha de bagaço de jabuticaba, apresentando um comportamento quadrático com o aumento da temperatura. O índice de solubilidade aumentou com o aumento da rotação do parafuso e com a diminuição da temperatura. Maiores índices de expansão (3,26) e de solubilidade (17,55%) foram alcançados numa formulação contendo aproximadamente 10% de bagaço de jabuticaba fermentado a 240 rpm e temperaturas de 130 e 100 °C, respectivamente. A farinha de bagaço de jabuticaba fermentado misturada com farinha de arroz polido poderá ser usada como matéria-prima para a produção de farinhas pré-gelatinizadas, se as circunstâncias operacionais apropriadas forem aplicadas. Corn is one of the most cultivated cereals in Brazil. However, its grains are constantly exposed to contamination by mycotoxins. Corn grits are used by the food industry to produce a large variety of corn products such as canjiquinha, a cultural food easily purchased by the Brazilian consumer at low prices. Some studies have demonstrated high contamination of this product by aflatoxins (AFs), representing a potential risk of exposure due to such a contamination. In this study, the efficacy of gaseous ozonation was evaluated on the levels of aflatoxins and on the microbial contamination of corn grits. The application of gaseous ozone was tested in different combinations of exposure time, ozone concentration, and canjiquinha mass. After the ozonation treatment, samples were collected for aflatoxin and microbiological analyses. Aflatoxins were evaluated using a high-performance liquid chromatography with fluorescence detection (HPLC-FD) system using pre-column derivatization, and the microbiological analyses were carried out for toxin-producer fungi and mesophilic bacteria. After ozone detoxification, results showed reductions up to 57% in aflatoxin levels. Total fungal count was reduced around 3.0 cycles log CFU g−1 and total mesophilic counts were reduced to non-detectable levels. These results demonstrated that ozonation is an effective alternative for reducing aflatoxin and microbial contamination in products like canjiquinha, thereby improving food safety.
A Jabuticabeira (Myrciaria jaboticaba) ocupa lugar de destaque entre as plantas frutíferas tropicais, em face da crescente comercialização de seus produtos principais: frutos, sucos e derivados como licores e análogos de vinho RESUMOO efeito das variáveis de extrusão de misturas de farinha de arroz polido (FAP) e de bagaço de jabuticaba (FBJ) foi estudado em função das características de adsorção de água e da estabilidade dos produtos extrusados (FME). A metodologia de superfície de resposta (MSR) do tipo 2 3 foi usada para a obtenção de um modelo matemático preditivo para a estabilidade das farinhas. O desenho experimental foi elaborado para verificar o efeito de dois níveis de substituição de FBJ como fonte de fibra (15 e 25%), dois níveis de velocidade de rotação do parafuso (100 e 200 rpm) e duas condições de aquecimento na 3ª zona do extrusor (120 e 180ºC), originando oito tratamentos. As características de adsorção de água das FAP, FBJ e de suas misturas foram comparadas e estudadas por meio de isotermas de adsorção expressas como atividades de água (A W ), que variaram de 0,113 a 0,973, a temperatura de 25ºC. Os dados experimentais das isotermas foram ajustados a modelos matemáticos de GAB, o que originou o coeficiente X m (umidade de equilíbrio na monocamada) aplicada à MSR como variável resposta para avaliar a estabilidade das farinhas extrusadas. Os resultados obtidos permitiram verificar a importância das três variáveis durante o processo de extrusão. As curvas das isotermas apresentaram características de superfícies hidrofílicas de forma sigmoidal do tipo II. A região de umidade intermediária das isotermas revelou que a FAP adsorve maior quantidade de água por unidade de A W , seguida pelas misturas extrusadas. A FBJ mostrou ser menos higroscópica neste caso. Quanto à estabilidade das misturas extrusadas, as três variáveis de extrusão foram significativas, verificando-se um aumento com o aumento da FBJ e com o aumento da temperatura, enquanto que houve um decr��scimo com a velocidade de rotação, por��m, de menor efeito. A combinação de valores elevados de temperatura e porcentagem de FBJ aumentou a estabilidade das farinhas extrusadas.
