As proteínas do soro do leite, também conhecidas como whey protein, são extraídas durante o processo de fabricação do queijo. Possuem alto valor nutricional, contendo alto teor de aminoácidos essenciais, especialmente os de cadeia ramificada. Também apresentam alto teor de cálcio e de peptídeos bioativos do soro. Pesquisas recentes demonstram sua grande aplicabilidade no esporte, com possíveis efeitos sobre a síntese protéica muscular esquelética, redução da gordura corporal, assim como na modulação da adiposidade, e melhora do desempenho físico. Estudos envolvendo a análise de seus compostos bioativos evidenciam benefícios para a saúde humana. Entre esses possíveis benefícios destacam-se seus efeitos hipotensivo, antioxidante e hipocolesterolêmico. Esta revisão buscou trabalhos que trazem avaliação das propriedades funcionais das proteínas do soro, tanto em humanos como em animais. Apesar das evidências apresentadas, novos estudos, assim como o desenvolvimento de novos alimentos enriquecidos com as proteínas do soro, com o intuito de facilitar seu consumo por grandes grupos populacionais, são necessários para verificar sua real eficácia.
Sprouted and fermented foods have shown hypoglycemic effects on humans and animals, by reducing concentrations of soluble carbohydrates, and increasing dietary fiber and resistant starch content. In this study, diets with high levels of simple carbohydrates supplemented with toasted quinoa flour, sprouted and toasted quinoa flour, fermented and toasted quinoa flour or sprouted/fermented and toasted quinoa flour were given to Wistar rats. During the experiment, the glycemic index (GI) of the diets were measure and, at the end of 47 days of feeding, the effects of the diets on physical and biochemical parameters of the animals were evaluated. Results indicated that the processes of sprouting and/or fermentation potentiate the ability of quinoa to reduce GI of diets with high levels of simple carbohydrates. Moreover, food intake, blood glucose and lipid levels, and accumulation of epididymal adipose tissue were reduced in rats fed diets supplemented with quinoa. These effects may be due to the nutritional composition of the supplemented diets, besides the chemical changes promoted by processing quinoa. These results are particularly relevant once sprouted and fermented quinoa could be an alimentary source of interest, especially for disease risk prevention such as diabetes, obesity and dyslipidemias.
The antioxidant potential of five tuberous root leaves was evaluated. High performance liquid chromatography (HPLC/DAD) showed the presence of phenolic compounds in leaves, and the predominant ones were chlorogenic acids in carrot (458.79 mg.L −1 ± 0.03): rosmarinic acid in sweet potato (222.05 mg.L −1 ± 0.01) and quercetin in sweet potato (292.42 mg.L −1 ± 0.01). Radish leaves showed a higher total in vitro antioxidant activity for all methods used in this study. The results indicated that these leaves were natural sources of antioxidants and, therefore, could be included in the health beneficial diet.
RESUMOConduziu-se o presente estudo, com o objetivo de avaliar o efeito de diferentes tipos de fibras sobre as fraçoes lipídicas do sangue e fígado de ratos. Para determinar o efeito da pectina citrica, goma guar e celulose sobre o perfil lipidico dos ratos utilizaramse 36 ratos machos da linhagem wistar. Os ratos foram distribuidos aleatoreamente em seis grupos. Cada gruopo foi submetido a uma dieta por 58 dias. As dietas utilizadas foram: A-10% de pectina, B -15% de pectina, C -10% de goma guar, D-15% de goma guar, E -5% de Celulose sem colesterol e F -5% celulose com 1% de colesterol. A pectina e a goma guar evitaram o aumento do colesterol total e LDL-c sérico observado na dieta F (p<0,05). Não houve diferença significativa entre os tipos de fibras e a quantidades utilizadas. Os níveis séricos HDL-c, VLDL-c e TAG permaneceram inalterados em todos os tratamentos. Os resultados mostram o potencial efeito benéfico da ingestão das fibras solúveis pectina e goma guar no controle da colesterolemia.Termos para indexação: Fibra alimentar, pectina, goma guar, hipercolesterolemia, sangue, fígado, rato. ABSTRACTThe present study was designed to evaluate the effect of different types of fibers on lipid portions of mice blood and liver. To determine the effect of citric pectin, guar gum and cellulose on the rat lipid profile, 36 male mice of the Wistar strain were utilized. The mice were allocated randomly into six groups. Each group was submitted to an experimental diet for 58 days. The utilized diets were: A-10% pectin, B -15% pectin, C -10% guar gum, D-15% guar gum, E -5% cellulose with no cholesterol and F -5% cellulose with 1% cholesterol. Pectin and guar gum prevented the increase of total cholesterol and serum LDL-c found in diet F (p<0.05). There was no significant difference among the types of soluble fibers and the amounts utilized. The serum levels HDL-c, VLDL-c, and TAG did not alter in all the treatments. The results show the potential beneficial effect of the ingestion of the soluble fibers pectin and guar gum in cholesterolemia control.
Maroleiro (Annona crassiflora Mart), belonging to the family of Annonaceae is a typical specie of the Cerrado and has occurred in most states. For fruit characteristics "sui generis", with significant nutritional value. This study aimed to characterize the marolo (Anonna crasiflora Mart) during fruit development, through the evaluation of its proximal and mineral composition. The fruits 2012/2013 season, were picked to 12Km from the city of Itumirim, southern Minas Gerais, in intervals of 20 days from anthesis to maturity, and the first fruits were harvested 60 days after anthesis. The flowering marolo began in late September 2012, with fruiting initially observed at the end of Dctober, with peak production at the end of February and beginning of March 2013 The fruits were harvested in the morning and carried to the laboratory, where followed up the moisture, ether extract, protein, ash, fiber and high sugar fraction beyond mineral quantification of them. During development reductions in moisture content and protein increments of ether extract, crude fiber and high sugar fraction and an oscillation in the mineral along the developmental stages was observed.
Yacon (Smallanthus sonchifolius) is a tuberous root from the Andean region in the South America rich em water, fructooligosaccharides and phenolic compounds, some of which are natural antioxidants and may help prevent the deleterious action of free radicals in the body. The yacon has attracted much attention due to their potential health benefits to humans. In this study the levels of total phenolics, tannins, phenolic acids, and total antioxidant activity were measured in the peel and pulp of yacon tubers both in the fresh and flour forms. The flours of yacon presented higher concentrations of total phenolics and tannins, especially peel flour. The yacon pulp flour stood out as the main source of phenolic acids, mainly caffeic and chlorogenic acid. The total antioxidant activity assessed by DPPH (2,2-Diphenyl-1-picrylhydrazyl) and ABTS (2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)) assays was higher in the yacon peel flour. The total antioxidant activity was correlated with the total phenolic content and tannins by the DPPH and ABTS assays. These results suggest that yacon can be used as an alternative food source of phenolic compounds that help prevent degenerative processes caused by oxidative stress, especially in the flours form.Index terms: Smallanthus sonchifolius; total phenolics; tannins; phenolic acids. RESUMOYacon (Smallanthus sonchifolius) é uma raiz tuberosa da região andina na América do Sul, rica em água, frutooligossacarídeos e compostos fenólicos, alguns dos quais são antioxidantes naturais e podem auxiliar a prevenir a ação deletéria dos radicais livres no organismo. O yacon tem atraído muita atenção devido a seus potenciais benefícios de saúde para os seres humanos. Neste estudo, os níveis de fenólicos totais, taninos, ácidos fenólicos e atividade antioxidante total foram mensurados na casca e polpa de túberas de yacon ambas nas formas fresca e de farinha. As farinhas de yacon apresentaram altas concentrações de fenólicos totais e taninos, especialmente a farinha da casca. A farinha da polpa de yacon destacou-se como a principal fonte de ácidos fenólicos, principalmente caféico e ácido clorogênico. A atividade antioxidante total avaliada pelos métodos DPPH (2,2-Difenil-1-picril-hidrazil) and ABTS (2,2′-Azino-bis (3-etilbenzotiazolina-6-ácido sulfônico)) foi maior na farinha de casca de yacon. A atividade antioxidante total foi correlacionada com o conteúdo de fenólicos totais e taninos pelos métodos DPPH e ABTS. Estes resultados sugerem que yacon pode ser usado como uma fonte alimentar alternativa de compostos fenólicos que auxiliam a prevenir processos degenerativos causados pelo estresse oxidativo, especialmente na forma de farinhas.
ResumoEste trabalho teve por objetivo analisar, física e quimicamente, cinco variedades de oliveiras mantidas no banco de germoplasma pela EPAMIG, na Fazenda Experimental no município de Maria da Fé, MG. Foram avaliadas características físicas dos frutos e sementes (peso, diâmetro e comprimento) e algumas características químicas dos azeites extraídos de cinco variedades (índice de acidez, iodo, saponificação, peróxidos e perfil de ácidos graxos). A variedade Negroa apresentou percentual médio de lipideos (28,2%) significativamente maior que as demais (p<0,05). Dentre as variedades estudadas a Negroa e JB1 apresentaram maior produtividade e valores de acidez, índice de saponificação, iodo e peróxidos mais compatíveis com as normas da ANVISA (2005) e o Codex Alimentarius (2003). Todas as variedades cultivadas em Maria da Fé apresentaram conteúdos de ácido oléico dentro do recomendado pelo Codex alimentarius e significativamente maior que o teor de ácido oléico do azeite comercial extra virgem analisado (p<0,05). O perfil de ácidos graxos encontrado demonstrou que todas as variedades (JB1, Negroa, Ascolano 315, 0025 e 0004) estão com seus valores adequados para os principais grupos de ácidos graxos, quando comparados com a legislação. Os resultados indicam que das variedades analisadas a Negroa e JB1 apresentam melhor potencial para utilização na produção de azeite de oliva.
