The reddish colour to shrimp, which has been associated with its high quality, is one of the major factors for its acceptability by consumers. The aim of this work was to analyse consumer preference regarding colour in raw and cooked shrimps. Farmed shrimps Litopenaeus vannamei (13.8 + 1.16 g) were fed with control or supplemented food (60 ppm of carotenoids). The shrimp samples were analysed in naked eye, confirmed by colorimetry and sorted in the following categories: dark grey (L* 27.99; h 168.16), grey (L* 32.58; h 124.60), and light grey (L* 36.2; h 119.35) for raw shrimps; and intense orange (L* 61.49; h 54.69), orange (L* 65.97; h 57.79) and light orange (L* 72.65; h 70.17) for cooked shrimps. A preference ranking test was performed with 35 judges invited to rank the samples in descending order of preference. Consumers prefer lighter raw shrimp (light grey and grey) and brightly orange cooked shrimps (orange and intense orange), which indicates that supplementing shrimp food for pigmentation should be followed by improving its acceptance by consumer. These results indicate a challenge for the shrimp industry, as the lightest raw shrimps are also not so brightly orange coloured after cooking.

a b s t r a c tThree bean genotypes were selected in order to be evaluated, being IAPAR-81 (IAP), Uirapuru (UI) and BAF 55 (BAF). The samples were: raw (R), cooked without soaking (CWS), cooked with soaking water (CWSW) and cooked without soaking water (COSW). For the antioxidant activity, total phenolics, tannin and phytate analysis, the broths were separated from the grains and the soaking water separated from the COSW sample was analyzed. The CWSW and COSW grain samples showed higher antioxidant potential in the three genotypes (IAP: 0.037 and 0.039; UI: 0.035 and 0.040; BAF: 0.040 and 0.047, respectively). There were losses of total phenolics, tannin and phytate in all samples of the cooked beans demonstrating the importance of consumption and use of the cooked broths. The CWS was the preparation that preserved the majority of the nutrients in the grains, except for the antioxidant activity. In the broth, BAF 55 showed higher levels of tannin and phenolic compounds in all preparations. The analysis of the raw bean is important to know the nutritional value of the food, but the common bean is consumed cooked which modifies its characteristics as well as the availability of the nutrients to be absorbed.

Esta revisão procura reunir diversos estudos que avaliam os fatores que influenciam a biodisponibilidade do licopeno, bem como os alimentos fontes e a recomendação de ingestão desse carotenóide. Para tanto, foi realizado um levantamento bibliográfico, mediante consulta às bases de dados Medline (National Library of Medicine, USA) e Lilacs (Bireme, Brasil) nas quais foram selecionadas publicações científicas em português e inglês, nos últimos quinze anos, que utilizaram os temas: licopeno, carotenóides e/ou biosponibilidade. O licopeno é um carotenóide sem atividade de pró-vitamina A, mas um potente antioxidante, sendo essa função possivelmente associada à redução do risco da ocorrência do câncer e certas doenças crônicas. Esse nutriente é encontrado em um número limitado de alimentos, e, além disso, o organismo não é capaz de sintetizá-lo; dessa forma, o licopeno é obtido exclusivamente por meio da dieta alimentar. A quantidade sugerida de ingestão de licopeno varia de 4 a 35mg/dia. Estudos mostram que existem vários fatores que podem interferir na biodisponibilidade do licopeno, tais como absorção intestinal, quantidade de licopeno no alimento fonte, formas de apresentação (isômeros e sintéticos), presença da matriz alimentar, presença de outros nutrientes na refeição (como gordura, fibra, outros carotenóides, entre outros), ingestão de drogas, processamento do alimento, além da individualidade biológica e do estado nutricional do indivíduo. Estudos da biodisponibilidade do licopeno têm sido desenvolvidos a partir do tomate e seus produtos, por esse ser a fonte mais comumente consumida.
