The starch market is constantly evolving and studies that provide information about the physical and rheological properties of native starches to meet the diverse demands of the sector are increasingly necessary. In this study starches obtained from five cultivars of banana were analyzed for size and shape of granules, crystallinity, chemical composition, resistant starch, swelling power, solubility, thermal and paste properties. The granules of starch were large (36.58-47.24μm), oval, showed crystallinity pattern type B and the index of crystallinity ranged from 31.94 to 34.06%. The phosphorus content ranged from 0.003 to 0.011%, the amylose ranged from 25.13 to 29.01% and the resistant starch ranged from 65.70 to 80.28%. The starches showed high peak viscosity and breakdown, especially those obtained from 'Nanicão' and 'Grand Naine'. Peak temperature of gelatinization was around 71°C, the enthalpy change (ΔH) ranged from 9.45 to 14.73Jg(-1). The starch from 'Grand Naine' showed higher swelling power (15.19gg(-1)) and the starch from 'Prata-Anã' higher solubility (11.61%). The starches studied are highlighted by their physical and chemical characteristics and may be used in several applications.
O objetivo do trabalho foi avaliar o crescimento e a produção de genótipos de 3 grupos genômicos de bananeira: 'Nanicão-IAC-2001', 'Grande Naine', 'Caipira' e 'Nam' (AAA); 'maçã', 'Thap maeo', 'Prata-Anã' e 'Prata-Zulu' (AAB); 'FHIA 01', 'FHIA 18', 'Prata-Graúda' e 'maçã Tropical' (AAAB), em Botucatu-SP. Foram avaliadas as seguintes características de crescimento: altura de plantas, circunferência do pseudocaule, número de folhas, número de dias entre o plantio e o florescimento, entre o florescimento e a colheita e do plantio à colheita. As características de produção avaliadas foram: peso do cacho, número de pencas, número de frutos, peso médio dos frutos, produtividade; peso, número, comprimento e diâmetro de frutos da 2ª penca. os resultados mostraram que, no grupo AAA, 'Nanicão' apresentou boas características de crescimento e produção, no entanto 'Grande Naine' apresentou maiores valores produtivos. 'Nam' apresentou menor porte e ciclo, porém baixos valores produtivos. No grupo AAB, 'Prata-Zulu' apresentou maior circunferência do pseudocaule, boas características produtivas, porém ciclo longo e porte maior. 'Thap maeo' destacou-se por apresentar boas características de produção. 'Prata-Anã' apresentou porte reduzido, menor ciclo, porém não apresentou bom desempenho produtivo. 'FHIA 01', no grupo AAAB, apresentou maiores valores na maioria das características avaliadas. Pode concluir-se que 'Grande Naine' se destacou no grupo AAA, 'Thap maeo' no grupo AAB e 'FHIA 01' no grupo AAAB.
A B S T R A C TThe objective of this work was to evaluate the yield components and physicochemical characteristics of bunches and berries of new grape varieties for juice elaboration, which were 'Isabel Precoce' (Vitis labrusca L.) and the hybrids 'BRS Carmem', 'BRS Cora' and IAC 138-22 'Máximo' grown onto 'IAC 572' and 'IAC 766' rootstocks under tropical conditions. The yield components (number of bunches and yield per vine, as well as productivity) and the physicochemical characteristics of the bunches and berries of the eight scion-rootstock combinations were evaluated in three seasons. All data were subjected to analysis of variance and principal components analysis. The varieties 'Isabel Precoce', 'BRS Cora' and IAC 138 22 'Máximo' produced high fruit yield, with the number of bunches and yield per vine similar to one another and superior to those of 'BRS Carmem'. Significant differences occurred among varieties in the physicochemical grape characteristics. 'Isabel Precoce' and 'BRS Carmem' grapes had balanced levels of sugar and acid content, and 'BRS Cora' presented large bunches and berries, reaching high soluble solids content despite the high acidity. IAC 138-22 'Máximo' grape also had large bunches but small berries and limited potential in the accumulation of sugars. The 'IAC 766' rootstock resulted in the best performance across all four varieties evaluated, showing maximum results in terms of fruit yield and physicochemical quality attributes of grapes.
The objective of this work was to evaluate the influence of rootstocks and pruning times on yield and on nutrient content and extraction by pruned branches and harvested bunches of 'Niagara Rosada' grapevine in subtropical climate. The rootstocks 'IAC 766', 'IAC 572', 'IAC 313', 'IAC 571-6', and '106-8 Mgt' were evaluated. Treatments consisted of a combination between five rootstocks and three pruning times. At pruning, fresh and dry matter mass of branches were evaluated to estimate biomass accumulation. At harvest, yield was estimated by weighing of bunches per plant. Branches and bunches were sampled at pruning and at harvest, respectively, for nutrient content analysis. Nutrient content and dry matter mass of branches and bunches were used to estimate total nutrient extraction. 'Niagara Rosada' grapevine grafted onto the 'IAC 572' rootstock had the highest yield and dry matter mass of bunches, which were significantly different from the ones observed in 'Niagara Rosada'/'IAC 313'. 'Niagara Rosada' grafted onto the 'IAC 572' rootstock extracted the largest quantity of K, P, Mg, S, Cu, and Fe, differing from 'IAC 313' and 'IAC 766' in K and P extraction, and from '106-8 Mgt' in Mg and S extraction. Winter pruning results in higher yield, dry matter accumulation by branches, and total nutrient content and extraction.
RESUMO -A acerola é um fruto de grande potencial econômico e nutricional devido ao seu alto teor de vitamina C, destacando-se como alimento funcional. É comercializada principalmente na forma de polpa congelada e fruto in natura. O objetivo deste estudo foi avaliar a qualidade dos frutos da aceroleira cv. Olivier em dois estádios de maturação. Para tanto, foram colhidas amostras de frutos em um pomar comercial no município de Junqueirópolis-SP. Foram realizadas a determinação da cor externa dos frutos e análises das características químicas de teor de sólidos solúveis, pH, acidez titulável, açúcares redutores, 'ratio' e ácido ascórbico de frutos semi-maduros e maduros. Os resultados obtidos permitiram concluir que os frutos semimaduros apresentaram maior acidez total, menor teor de sólidos solúveis e menor concentração de açúcares; no entanto, estes frutos apresentaram maiores teores de vitamina C, expressa em ácido ascórbico. Portanto, quando se buscam altos índices de vitamina C, os frutos devem ser colhidos num estádio de maturação menos avançado, com coloração alaranjada. O estudo demonstrou também que a cv Olivier produz frutos com características adequadas tanto para o mercado in natura quanto para a indústria, apresentando boa coloração e características químicas dentro dos padrões para esta fruta. OLIVIER IN TWO STAGES OF MATURITYABSTRACT -Barbados cherry is a fruit of high economic and nutritional potential due to its high vitamin C content, standing out as a functional food. It is marketed mainly in the form of frozen pulp and fresh fruit. The aim of this study was to evaluate the fruit quality of barbados cherry trees cv. Olivier in two stages of maturity. Fruits samples were harvested in a commercial orchard in Junqueirópolis, SP, Brazil. The exterior color of the fruit was observed and analysis of the chemical characteristics of pulp, such as soluble solids, pH, acidity, reducing sugars, 'ratio' and ascorbic acid content were performed in semi-ripe and ripe fruits. The results showed that the semi-ripe fruits had higher acidity, lower soluble solids content and lower sugar content, however these fruits had higher levels of vitamin C, expressed as ascorbic acid. Therefore, when seeking high levels of vitamin C, the fruit must be harvested in a less advanced stage of maturity, showing orange color. The study also showed that the cv. Olivier produces fruits with characteristics suitable for both fresh market and processing, with good color and chemical characteristics within the standards. Com o intuito de avaliar os efeitos de diferentes doses de composto orgânico nas propriedades químicas do solo cultivado com bananeira 'Prata-anã' (Musa AAB), foi desenvolvido o presente trabalho na Faculdade de Ciências Agronômicas - UNESP, Botucatu-SP. O plantio foi realizado no mês de novembro de 2002, com mudas convencionais, adotando-se o espaçamento de 2,5 x 2,5 m. O composto orgânico foi produzido com serragem de madeira e esterco de bovino, sendo os tratamentos empregados constituídos das seguintes doses de composto: T1 = 0 g planta-1 de K2O (dose zero do composto - Testemunha); T2 = 98,5 g planta-1 de K2O (43 kg planta-1 de composto); T3 = 197,0 g planta-1 de K2O (86 kg planta-1 de composto); T4 = 290,5 g planta-1 de K2O (129 kg planta-1 de composto); T5 = 394,0 g planta-1 de K2O (172 kg planta-1 de composto), sendo essas doses calculadas de acordo com o teor de potássio presente no mesmo. O delineamento experimental adotado foi em blocos casualizados, com 5 tratamentos, 5 repetições e 2 plantas por parcela. Os dados foram submetidos à análise de variância e à análise de regressão. Aos quatro meses após a aplicação da última parcela da adubação com composto orgânico, realizou-se amostragem de solo da camada de 0 a 20 cm e foram avaliadas as propriedades químicas do solo. A adubação orgânica promoveu incrementos no pH, matéria orgânica, fósforo, cálcio, soma de bases, CTC e saturação por bases do solo.
