Entretanto, nos últimos anos vem crescendo o interesse em amidos naturais que possam ser utilizados pela indústria alimentícia. Assim, este trabalho teve por objetivo caracterizar, quanto à composição físico-química, açafrão, ahipa, araruta, batata-doce, biri, inhame e mandioquinha-salsa, tuberosas amiláceas potencialmente passíveis de introdução como matérias-primas de interesse comercial. Amostras das tuberosas foram analisadas quanto ao teor de umidade, cinzas, proteína, matéria graxa, açúcares redutores e totais, fibras e amido. Os resultados obtidos mostraram que das tuberosas analisadas as que apresentaram maior teor de amido foram a araruta (Maranta arundinacea), o inhame (Dioscorea sp) e o biri (Canna edulis), sendo que o inhame e o biri apresentaram também o maior rendimento potencial em toneladas de amido/hectare. Palavras-chave: rizomas; raízes; amido; composição. -INTRODUÇÃOO amido é a principal substância de reserva nas plantas superiores, fornecendo de 70 a 80% das calorias consumidas pelo homem. Os depósitos permanentes do amido nas plantas ocorrem nos orgãos de reserva como é o caso de grãos em cereais (milho, arroz) e de tubérculos e raízes (batata e mandioca).As indústrias alimentícias são as maiores consumidoras de amido, entretanto, este polímero é usado também em um grande número de processos industriais destacando-se seu uso pelas indústrias química e têx-til. Atualmente, devido às restrições a amidos modificados impostas principalmente pelas indústrias alimentí-cias, as empresas produtoras de amido no mundo vêm mostrando um interesse cada vez maior em amidos naturais com características que atendam o mercado consumidor [2,5,6,16]. Frente a este fato as pesquisas em torno de novas matérias-primas amiláceas têm se intensificado nos últimos anos. Neste ponto, os países em regiões tropicais, como o Brasil, apresentam grande vantagem em relação aos principais produtores de amido no mundo, que estão localizados em regiões temperadas, devido à variedade de culturas tropicais amilá-ceas.Dentre as amiláceas tropicais merecem destaque, além da mandioca cujo Brasil é o segundo país produtor, a araruta (Maranta arundinacea), a mandioquinhasalsa (Arracacia xanthorrhiza) e a batata-doce SUMMARYPHYSICOCHEMICAL CHARACTERIZATION OF SOME STARCHY TUBERS. RESUMOA farinha de mandioca (Manihot esculenta Crantz) é produzida em diferentes regiões do Brasil e faz parte do hábito alimentar do brasileiro. Caracteriza-se num alimento de alto valor energético, possui teor elevado de amido, contém fibras e alguns minerais como potássio, cálcio, fósforo, sódio e ferro. Entre os diferentes estados, os do Norte e Nordeste consomem quantidades de farinha de mandioca bem maiores que os demais. Frente à importância econômica e nutricional deste produto, com o presente trabalho, objetivou-se caracterizar farinhas de mandioca de diferentes estados do País, esperando com isso fornecer informações referentes à composição e às características físico-químicas do produto, tanto para as indústrias produtoras quanto aos consumidores. Os resultados obtidos mostraram que, quanto à composição centesimal, as farinhas analisadas diferem entre si e entre as regiões produtoras, inclusive para classificações de mesmo grupo e subgrupo. Para proteínas e acidez, as farinhas não estão de acordo com os limites da legislação. As farinhas apresentam teores baixos a moderados de fibras, contudo, devido ao seu amplo consumo, contribui como importante fornecedor de fibras na alimentação. A classificação de algumas farinhas quanto à cor não está de acordo com as análises de seus componentes de cromaticidade. ABSTRACTCassava flours (Manihot esculenta Crantz) are produced in all Brazilian states and it is part of Brazilian alimentary habit. Cassava flour is characterized as high-energy food, with high level of starch, and it contains fibers and some minerals as potassium, calcium, match, sodium and iron. In the North and Northeast regions the consumption of this flour is larger than the others. Due the economical and nutritional importance of the cassava flour the present work had as objective to characterize cassava flours from different Brazilian states aiming to supply industries and consumer with important nutritional and technological characteristics information. The results showed that cassava flours differ to each other and among the producing states to centesimal composition besides to belong to the same classification group. The analyzed flours are not in agreement with the legislation limits for proteins and acidity. For fibers, the cassava flours showed low to moderate levels, but due the high consumption could be considerate as important source of fiber. The flours color analysis showed that commercial classifications of some cassava flours differ of the analytical results obtained. The starch market is constantly evolving and studies that provide information about the physical and rheological properties of native starches to meet the diverse demands of the sector are increasingly necessary. In this study starches obtained from five cultivars of banana were analyzed for size and shape of granules, crystallinity, chemical composition, resistant starch, swelling power, solubility, thermal and paste properties. The granules of starch were large (36.58-47.24μm), oval, showed crystallinity pattern type B and the index of crystallinity ranged from 31.94 to 34.06%. The phosphorus content ranged from 0.003 to 0.011%, the amylose ranged from 25.13 to 29.01% and the resistant starch ranged from 65.70 to 80.28%. The starches showed high peak viscosity and breakdown, especially those obtained from 'Nanicão' and 'Grand Naine'. Peak temperature of gelatinization was around 71°C, the enthalpy change (ΔH) ranged from 9.45 to 14.73Jg(-1). The starch from 'Grand Naine' showed higher swelling power (15.19gg(-1)) and the starch from 'Prata-Anã' higher solubility (11.61%). The starches studied are highlighted by their physical and chemical characteristics and may be used in several applications.
The aim of the study involved evaluating the chemical composition of tubers of five potato cultivars that were grown under the same cultural practices in soils with low, medium, and high availability of phosphorus. The experimental designs corresponded to a randomized block with four replicates. Tuber samples were analyzed in terms of moisture, ash, protein, lipid, total sugar, fiber, starch, and phosphorus contents. The results suggested that increased availability of phosphorus in soil allowed the production of tubers with higher dry matter content, lower total sugar content, and a higher percentage of starch and protein. Hence, the aforementioned parameters constitute important factors corresponding to the nutritional and industrial quality of potatoes. Increased phosphorus availability in soil can promote significant changes in the composition of potato tubers, and thereby in potential uses of tubers.
*A quem a correspondência deve ser enviada ResumoNeste trabalho, objetivou-se avaliar a forma e tamanho de grânulos de amido de diferentes fontes botânicas, visando fornecer informações que contribuam para aplicabilidade destas como matérias-primas amiláceas. As féculas foram obtidas a partir do processamento das tuberosas em planta piloto de extração. Para a análise da forma dos grânulos utilizou-se o microscópio eletrônico de varredura, com as amostras diluídas em álcool etílico e metalizadas com ouro. A análise do tamanho dos grânulos foi realizada em microscópio ótico, sendo as amostras diluídas em solução de água e glicerina. Foram realizadas 500 determinações das medidas de tamanho (diâmetro menor, diâmetro maior e diferenças entre diâmetros) por fonte botânica. Os resultados obtidos mostraram diferentes formas para os grânulos de amidos e das tuberosas estudadas. Os grânulos de amido de menor tamanho foram os de taioba (Xanthosoma sp.) 12,87 m, e os de maior tamanho os de biri (Canna edulis) 59,61 m. Observou-se distribuição bastante regular para os grânulos de amido de ahipa (Pachyrhizus ahipa). Palavras-chave: amido; raízes; microscopia. AbstractAn analysis was made of the shape and size of starch grains from different botanical species, aiming to improve the potential applicability of these species as starch raw materials. The starches were obtained from the processing of tubers in a pilot extraction plant. The shape of the starch grains was analyzed by scanning electron microscopy (SEM), to which end the samples were mounted on SEM stubs and coated with gold. The size of the starch grains was determined by optical microscopy, for which the samples were diluted in a water and glycerin solution. The sizes of 500 grains of each botanical species were measured to determine the largest and smallest diameters and the difference between diameters. The results revealed different starch grain shapes and sizes, with Xanthosoma sp showing the smallest (12.87 m) and Canna edulis the largest grain size (56.61 m). The yam bean tuber Pachyrhizus ahipa showed the most uniform starch grain distribution. Keywords: starch; roots; microscopy. Starches from different potato cultivars were characterized as amylose and phosphorus content, crystallinity, thermal and paste properties. Statistical analysis of amylose content showed difference between starches samples and the cultivars Asterix and BRS Clara showed higher contents than others. Phosphorus content ranged from 633 to 966.7 mg kg −1. The X-ray diffraction analysis showed that the crystallization of potato starches can be classified as B-type X-ray pattern, presenting crystallinity index ranging from 20.02% to 21.59%. Regarding thermal properties, the onset temperature did not show statistical difference between starch samples, in gelatinization and retrogradation analysis. As expected there was a significant decrease in peak temperature and enthalpy after the retrogradation of starches. For the pasting properties results showed significant difference in all cultivars. Pearson correlation coefficients showed that amylose content was negatively correlated to the onset, peak and final temperature of gelatinization, final temperature of retrogradation and pasting temperature. Phosphorus content was positively correlated to crystallinity index, peak viscosity and breakdown. Starches extracted from potato varieties showed different characteristics which can be useful to food and related industries that make use of potato starch, allowing wide options of use in various sectors of industrial application in Brazil.
