Boldo leaves are used as medicinal plants by the Brazilian population. Among several factors that contribute to the proper storage of this product, we highlight the drying process, which is fundamental to reduce its moisture content, aiming to maintain phytotherapic characteristics. Different works involving the drying of leaves were carried out in the last years. However, there is not much information related to the drying process related to boldo leaves. This work evaluates drying kinetics at temperatures of 20, 40 and 60 °C, as well as determines thermodynamic properties: enthalpy, entropy and Gibbs free energy. Forced air circulation ovens were used for thin layer drying of leaves. The leaves, uniformly cut rectangular, were weighed periodically until hygroscopic equilibrium. Several mathematical models were fitted to the experimental data to characterize the drying processes, using the following statistical criteria: coefficient of determination (R²), mean standard error (SE), chi-square (χ²), and residue distribution. According to the criteria used, Modified Henderson and Pabis was the model that best represented the drying kinetics of boldo leaves. The activation energy for the drying of boldo leaves was 17.969 kJ mol-1. Both enthalpy and entropy decreased with increasing drying air temperature, while Gibbs free energy increased.
Bitter melon (Momordica charantia L.) is a versatile plant that can be consumed as a food and has therapeutic applications. Studying its drying process is important to maintain their leaf quality during storage. The objective of this study was to evaluate the drying kinetics of bitter melon leaves and determine their thermodynamic properties. The leaves were placed in polyethylene trays and subjected to drying in an oven at temperatures of 20, 30, 40, and 50 °C until reaching hygroscopic equilibrium. The experimental data were fitted to several non-linear regression models to characterize the drying process. The Arrhenius model was used to obtain the coefficients of diffusion and the activation energy, which were used to calculate the enthalpy, entropy, and the Gibbs free energy. Midilli and Page were the best models to represent the drying kinetics of bitter melon leaves at temperatures of 20, 30, 40, and 50 °C. Increases in the drying air temperature increased the Gibbs free energy and water diffusivity in the interior of the leaves. Enthalpy and entropy decreased as the temperature was increased.
Pigeon pea is a common plant cultivated in family farming. It is often used as a source of protein for animal breeding. The knowledge of the drying kinetics and the thermodynamic properties of pigeon pea beans (Cajanus cajan) is relevant for simulation of drying, which aims to maintain the quality of beans. The objective of this study is to estimate the drying curves of pigeon pea beans using mathematical models. This study also aims to determine their thermodynamic properties. Forced-drying greenhouses were used for the drying process. The initial water content of pigeon pea beans was 1.00 dry basis (db). Beans were weighed periodically until reaching a near equilibrium water content. Ten mathematical models were fitted to experimental data to characterize drying processes using the following statistical criteria: coefficient of determination (R²), mean relative error (P), mean standard error (SE), chi-square (χ²), and residue distribution. From the selected model and the Arrhenius equation, the effective diffusion coefficient and the activation energy used for the calculation of the enthalpy, entropy and Gibbs free energy were obtained. The Midilli was the best model to represent the kinetics of drying of pigeon pea beans. The increase in drying air temperature increases Gibs free energy and diffusivity, decreases enthalpy, and maintains the entropy negative.
ResumoO aumento pela busca por alimentos saudáveis, sem glúten e ricos em fibras abre oportunidade para a incorporação de olerícolas, como a abóbora. A secagem e o armazenamento são etapas essenciais para a obtenção de produtos de qualidade, contribuindo para minimização de perdas e, consequentemente, aumentando a vida útil dos produtos. Objetivou-se, com esta pesquisa, avaliar a cinética de secagem das raspas de abóbora em diferentes condições de secagem, bem como determinar suas propriedades termodinâmicas. Realizou-se a secagem das raspas de abóbora em sombra, estufa e secador experimental. Diversos modelos de regressão não linear foram ajustados aos dados experimentais para caracterizar o processo de secagem. A partir do modelo de Arrhenius foram obtidos os coeficientes da difusão e a energia de ativação para o cálculo da entalpia, entropia e energia livre de Gibbs. Conclui-se que Page foi o melhor modelo para representação da cinética de secagem das raspas de abóbora. A elevação da temperatura do ar de secagem proporciona o aumento da energia livre de Gibbs e da difusividade de água nas raspas de abóbora, reduz a entalpia e mantém a entropia negativa.
Áreas do Cerrado goiano podem se tornar inaptas ao cultivo de café devido ao aumento da temperatura. Estudos precisam ser realizados para identificar cultivares aptas às condições climáticas futuras, sendo a avaliação fisiológica imprescindível nessa busca. Ao todo se têm 133 cultivares registradas no Brasil pelo Ministério da Agricultura Pecuária e Abastecimento (MAPA), implicando dessa forma dúvidas ao produtor sobre o melhor material para sua região. Sabendo disso, objetivou-se avaliar as trocas gasosas de três genótipos de cafeeiros em sua terceira safra, durante as épocas do ano em que se tem maior temperatura do ar nas condições edafoclimáticas de Ceres-GO. O experimento foi em esquema fatorial 4x3, sendo quatro estádios fenológicos (Indução Floral, Floração, Expansão I e Expansão II), e três genótipos (Obatã Vermelho IAC 1669-20, Paraíso MG 419-1 e IBC-Palma II), os quais foram selecionados levando em consideração a produtividade na safra anterior, sendo o de maior, média e menor respectivamente. As variáveis consistiram na taxa fotossintética líquida (µmol.m-2.s-1), transpiração (µmol.m-2.s-1) e condutância estomática (µmol.m-2.s-1). Foi monitorado a radiação fotossintéticamente ativa (µmol.m-2.s-1), temperatura foliar (°C) e temperatura do ar (°C). Os dados foram submetidos à ANOVA e comparadas pelo teste de Tukey a 5% de probabilidade. Altas temperaturas aliadas ao déficit hídrico resultam em inibição fotossintética. Temperaturas foliares e do ar elevadas acarretam em redução fotossintética e na abertura estomática. As cultivares Paraíso MG 419-1 e Obatã Vermelho IAC 1669-20 expressam maiores taxas fotossintéticas nas fases de Expansão, enquanto o IBC Palma II obteve maior atividade na Floração.

As isotermas de adsorção podem ser definidas como a relação entre a atividade de água e umidade do grão em temperatura específica e servem como parâmetros para estabelecer condições adequadas de temperatura e umidade relativa de armazenagem. O objetivo deste trabalho foi determinar e modelar as isotermas de adsorção dos grãos de milho nas temperaturas do ar de 40, 50 e 60 ºC e atividade de água entre 0,11 e 0,81, bem como determinar o calor latente de vaporização da água. Para isso, os experimentos de sorção foram realizados pelo método estático gravimétrico em câmara tipo BOD, com o uso de soluções salinas saturadas. Diversos modelos matemáticos foram ajustados aos dados experimentais e a seleção do melhor modelo foi realizada por critérios estatísticos. O modelo Henderson Modificado é o que melhor representa as isotermas de adsorção dos grãos de milho nas condições estudadas. Os valores do calor latente de vaporização dos grãos de milho, com teores de água de 0,026 a 0,172 (b.s.), variaram de 3030,22 a 2567,92 kJ kg-1. O aumento da umidade nos grãos acarreta menores valores de calor latente de vaporização. Palavras-chave adicionais: água; energia; equilíbrio higroscópico; Zea mays.
ResumoO feijão-comum (Phaseolus vulgaris L.) é um dos mais tradicionais pratos da culinária brasileira, merecendo assim atenção de estudiosos das diversas áreas do conhecimento. A secagem consiste na remoção de grande parte de água inicialmente contida no produto com o intuito de promover longos períodos de armazenamento. O ajuste de modelos matemáticos para representação da cinética de secagem de produtos agrícolas contribui para a melhoria da eficiência do processo e, ainda, permite estimar o tempo de secagem. Objetivou-se, neste trabalho, estimar as curvas de secagem dos grãos de feijão da Cultivar BRS Estilo, bem como obter o coeficiente de difusão efetivo e as propriedades termodinâmicas nas temperaturas de secagem de 60, 70 e 80 °C. Aos dados experimentais foram ajustados diversos modelos matemáticos utilizados para representação da secagem de produtos agrícolas. Dentre os modelos que apresentaram melhor ajuste aos dados experimentais, o de Henderson e Pabis Modificado foi o que melhor se ajustou aos dados nas diferentes condições de secagem. O aumento da temperatura do ar de secagem proporciona o aumento da energia livre de Gibbs e da difusividade de água nos grãos, reduz a entalpia e mantém a entropia negativa.Palavras-chave adicionais: difusividade; energia livre de Gibbs; Phaseolus vulgaris L.
