O presente estudo teve como objetivo avaliar a qualidade de jaca dura minimamente processada submetida a diferentes recobrimentos comestíveis, a base de amido de batata doce branca, de batata doce roxa, de fruta-pão e quitosana. Foram desenvolvidos oito tratamentos, T1: sem recobrimento; T2: Quitosana 1% + Glicerol 2%; T3: Batata doce branca 1% + Glicerol 2%; T4: Batata doce roxa 1 % + Glicerol 2%; T5: Quitosana 1% + Batata doce branca 1% + Glicerol 2%; T6: Quitosana 1% + Batata doce roxa 1% + Glicerol 2%; T7: Fruta-pão 1% + Glicerol 2%; T8: Quitosana 1% + Fruta-pão 1% + Glicerol 2%, sendo estes aplicados as bagas das jacas que em seguida foram armazenadas durante 12 dias a 3°C acondicionadas em bandejas de poliestireno expandido e recobertas com filme de cloreto de polivinila (PVC). As bagas sem recobrimento e as submetidas aos demais tratamentos, apresentaram teores elevados de Polifenóis Extraíveis Totais no 12º dia de armazenamento. As bagas tratadas com Quitosana 1% + Glicerol 2% (T2) obtiveram a melhor manutenção da aparência, com características de frescor, superfície brilhosa e ausência de manchas. O uso do recobrimento comestível com base de Quitosana 2% + Amido de Fruta Pão 1% + Glicerol 2% (T8) proporcionou melhor qualidade físico-química, com a menor perda de massa, melhor correlação entre perda de massa e aparência, e melhor constância dos sólidos solúveis, acidez, pH e SS/AT, mantendo-as de forma satisfatória para a comercialização, sem prejuízos as características físico-químicas de qualidade por um período de 10 dias.
O uso de recobrimentos comestíveis contribui na conservação de vegetais devido a sua capacidade de mudar a atmosfera, reduzindo os processos fisiológicos como respiração, degradação da parede celular, transpiração e, também, por restringir a ação microbiana, preservando assim a qualidade dos produtos vegetais, sendo também a embalagem um fator essencial na conservação de vegetais minimamente processados. O presente trabalho buscou estudar diferentes alternativas de conservação que possibilitem aumentar a vida útil de melões ‘Pele de Sapo’ minimamente processados. Os frutos foram minimamente processados em cubos, submetidos aos recobrimentos comestíveis por imersão em cloreto de cálcio, fécula de mandioca, quitosana, amido de inhame e amido de batata doce branca, armazenados em bandejas de poliestireno expandido recobertas com filme de cloreto de polivinila, foram também utilizados filme plásticos de polipropileno biorientado, e embalagens de tereftalato de polietileno, totalizando 7 tratamentos e armazenados a 3º C e analisados a cada 2 dias, durante 10 dias. O experimento foi conduzido em delineamento inteiramente casualizado em esquema fatorial 7 × 6, com três repetições, totalizando 126 unidades experimentais. Os recobrimentos e embalagens associados à refrigeração conservaram a qualidade e integridade dos frutos durante o armazenamento, garantindo estabilidade dos compostos bioativos tais como: clorofilas, carotenoides e polifenóis extraíveis. Os tratamentos de Quitosana 2% (Trat.2) e a embalagem Tereftalato de Polietileno (Trat.6) auxiliaram de forma significativa na manutenção e conservação dos melões minimamente processados quanto a perda de massa e aparência dos frutos.
Os resíduos decorrentes das atividades agroindustriais são provenientes, principalmente, do processamento de frutas para produção de polpas. O aproveitamento desses resíduos se mostra frente ao desperdício de alimentos como uma grande oportunidade de desenvolvimento de subprodutos. Dentre os diferentes resíduos agroindustriais o resíduo de goiaba se destaca por apresentar em sua composição de vitaminas, minerais, fibras e compostos antioxidantes importantes para as funções fisiológicas. O objetivo deste trabalho foi estudar o processo de enriquecimento proteico do resíduo da goiaba com a utilização da levedura Saccharomyces cerevisiae, por meio de fermentação semissólida. O resíduo da goiaba foi triturado e em seguida colocado em um biorreator retangular com 12% m/m da levedura e acondicionado em uma estufa com circulação de ar forçada a 35 °C de temperatura, durante 21 horas. Foram feitas pesagens dessas amostras nos intervalos de 0, 3, 6, 9, 12, 15, 18 e 21 horas de fermentação e monitorados em cada intervalo as análises do teor de água, proteínas e sólidos solúveis totais. De modo geral é possível concluir que a fermentação semissólida empregada no resíduo da goiaba, com a utilização da levedura Saccharomyces cerevisiae, possibilitou o aumento no teor de proteína do resíduo com o tempo de fermentação, tendo as maiores concentrações às 3 e 6 horas. Assim é possível afirmar que a técnica empregada foi satisfatória no enriquecimento proteico do resíduo da goiaba, podendo ser utilizada como forma de aproveitamento de resíduos.
O estilo de vida corrido da população faz com que os consumidores procurem por alternativas que otimizem o tempo na hora das refeições. Dentro deste contexto, se encontram as frutas minimamente processadas, onde o melão se destaca por produção ser destinada ao consumo in natura. O uso dos polímeros naturais vem sendo utilizado como uma das alternativas no aumento da vida útil das frutas e hortaliças minimamente processadas. Dessa forma, o objetivo desta pesquisa é encontrar a formulação de recobrimento que proporcione um maior período de conservação pós-corte. Os frutos foram minimamente processados em cubos e submetidos aos polímeros naturais por imersão, sendo quantificados cinco tratamentos e avaliados a cada 2 dias, durante 10 dias de armazenamento (0, 2, 4, 6, 8 e 10 dias) quanto as características físicas, físico-químicas e de compostos bioativos. Os polímeros naturais desenvolvidos, associados a refrigeração, formaram filme sobre a superfície dos melões minimamente processados, proporcionando menor perda de massa aos frutos, garantindo estabilidade quanto aos teores de pH e acidez titulável. Apresentaram também teores satisfatórios para ácido ascórbico e flavonoides, que constituem fontes potenciais de compostos bioativos naturais para a dieta humana, com destaque parao recobrimento com amido de inhame (Trat.4) sendo o mais eficaz na manutenção dos teores de ácido ascórbico, carotenoides e qualidade dos frutos.
The present work aimed to evaluate the quality of minimally processed 'Cantaloupe' melons submitted to edible coatings, based on chitosan and yam starch during refrigerated storage. The melons were submitted to six treatments: Treatment 1 (without coating), Treatment 2 (Calcium Chloride 1%, without coating), Treatment 3 (Chitosan 1% + Glycerol 2%), Treatment 4 (Calcium Chloride 1% + Chitosan 1% + Glycerol 2%), Treatment 5 (Yam starch 2% + Glycerol 2%) and Treatment 6 (Calcium Chloride 1% + Yam starch 2% + Glycerol 2%). The treated melons were stored at 3 ± 2ºC and 75 ± 4% RH and the physicochemical and bioactive compounds evaluations were carried out over 12 days (0, 2, 4, 6, 8, 10, and 12 days). The high loss of mass in melons from the control treatments (T1) and calcium chloride 1% + chitosan 1% (T4) limited the shelf life of the fruits. Melons treated with 2% yam starch (T5) and 1% calcium chloride + 2% yam starch (T6) associated with refrigeration preserved the quality and integrity of the fruits until the 8th day of storage, with higher levels of bioactive compounds such as carotenoids, extractable polyphenols, and ascorbic acid.
