O uso de recobrimentos comestíveis contribui na conservação de vegetais devido a sua capacidade de mudar a atmosfera, reduzindo os processos fisiológicos como respiração, degradação da parede celular, transpiração e, também, por restringir a ação microbiana, preservando assim a qualidade dos produtos vegetais, sendo também a embalagem um fator essencial na conservação de vegetais minimamente processados. O presente trabalho buscou estudar diferentes alternativas de conservação que possibilitem aumentar a vida útil de melões ‘Pele de Sapo’ minimamente processados. Os frutos foram minimamente processados em cubos, submetidos aos recobrimentos comestíveis por imersão em cloreto de cálcio, fécula de mandioca, quitosana, amido de inhame e amido de batata doce branca, armazenados em bandejas de poliestireno expandido recobertas com filme de cloreto de polivinila, foram também utilizados filme plásticos de polipropileno biorientado, e embalagens de tereftalato de polietileno, totalizando 7 tratamentos e armazenados a 3º C e analisados a cada 2 dias, durante 10 dias. O experimento foi conduzido em delineamento inteiramente casualizado em esquema fatorial 7 × 6, com três repetições, totalizando 126 unidades experimentais. Os recobrimentos e embalagens associados à refrigeração conservaram a qualidade e integridade dos frutos durante o armazenamento, garantindo estabilidade dos compostos bioativos tais como: clorofilas, carotenoides e polifenóis extraíveis. Os tratamentos de Quitosana 2% (Trat.2) e a embalagem Tereftalato de Polietileno (Trat.6) auxiliaram de forma significativa na manutenção e conservação dos melões minimamente processados quanto a perda de massa e aparência dos frutos.
The present work aimed to evaluate the quality of minimally processed 'Cantaloupe' melons submitted to edible coatings, based on chitosan and yam starch during refrigerated storage. The melons were submitted to six treatments: Treatment 1 (without coating), Treatment 2 (Calcium Chloride 1%, without coating), Treatment 3 (Chitosan 1% + Glycerol 2%), Treatment 4 (Calcium Chloride 1% + Chitosan 1% + Glycerol 2%), Treatment 5 (Yam starch 2% + Glycerol 2%) and Treatment 6 (Calcium Chloride 1% + Yam starch 2% + Glycerol 2%). The treated melons were stored at 3 ± 2ºC and 75 ± 4% RH and the physicochemical and bioactive compounds evaluations were carried out over 12 days (0, 2, 4, 6, 8, 10, and 12 days). The high loss of mass in melons from the control treatments (T1) and calcium chloride 1% + chitosan 1% (T4) limited the shelf life of the fruits. Melons treated with 2% yam starch (T5) and 1% calcium chloride + 2% yam starch (T6) associated with refrigeration preserved the quality and integrity of the fruits until the 8th day of storage, with higher levels of bioactive compounds such as carotenoids, extractable polyphenols, and ascorbic acid.
As frutas e hortaliças, a exemplo o melão, têm sido usadas em novos processos tecnológicos, sendo algumas dessas novas tendências em âmbito mundial, como, por exemplo, o crescente consumo de vegetais minimamente processados. O objetivo deste trabalho foi avaliar a qualidade do melão amarelo minimamente processado submetido a diferentes recobrimentos a base de quitosana, amido e cálcio. Os seguintes tratamentos foram aplicados: T1: 0% (sem recobrimento), T2: cloreto de Cálcio 1%, T3: amido de Inhame 2% + Glicerol 2%, T4: fécula de mandioca 2% + Glicerol 2%, T5: quitosana 2% + Glicerol 2% e em seguida armazenados a 3ºC em BOD e avaliados nos períodos de 0, 2, 4, 6, 8 e 10 dias. Foram realizadas avaliações de compostos bioativos e avaliações não destrutivas. O experimento foi conduzido em delineamento inteiramente casualizado em fatorial experimental 5 x 6, com três repetições. Verificou-se que o uso dos recobrimentos comestíveis foi eficiente em manter a textura dos melões por 6 dias, além de auxiliar na redução da perda de massa. O tratamento com quitosana a 2% + glicerol a 2% em sua formulação apresentou os melhores resultados na conservação das características de compostos bioativos dos produtos, durante o período de armazenamento. A aparência geral dos melões obteve vida útil comercial de 8 a 10 dias em todos os tratamentos, mostrando-se eficiente no período pós-colheita.
