Resumo: O alginato é um copolímero linear constituído de unidades de ácidos a-L-gulurônicos e b-D-manurônicos e é extensamente utilizado devido as suas propriedades espessantes, estabilizantes e gelificantes. Estas características fazem com que este biopolímero encontre aplicações na indústria de alimentos, na indústria têxtil e de papel, em cosméticos e na área farmacêutica e médica. Atualmente para este conjunto de aplicações sua principal fonte são algas marrons, entretanto, o alginato pode ser obtido a partir de biossíntese, utilizando-se microrganismos do gênero Pseudomonas e Azotobacter. A produção bacteriana de alginato apresenta-se como uma alternativa interessante e sua produção por microrganismos, além de possibilitar a produção de biopolímeros de alta qualidade com características específicas e pré-determinadas, irá diminuir o impacto ambiental nas regiões em que as algas marinhas das quais é extraído são coletadas. Nos últimos anos, vários estudos relacionados à produção de alginato por microrganismos foram realizados com o objetivo de avaliar sua produção e rota metabólica de biossíntese, para caracterizar o material produzido e para determinar as potencialidades de aplicação deste novo material. O rápido desenvolvimento de aplicações do alginato na área médica e farmacêutica, bem como a descoberta de propriedades imunológicas únicas deste material tem aumentado o interesse no desenvolvimento de processos para produzi-lo. Neste artigo são abordados aspectos relacionados à produção e as características do alginato bacteriano e também reportadas às potencialidades e aplicações inovadoras nas quais este material vem sendo utilizado. Alginate Production by MicroorganismsAbstract: Alginate is a linear copolymer consisting of units of a-L-guluronic and b-D-mannuronic acid which is widely used due to its thickening, stabilizing and gelling properties. These characteristics mean that it has many applications in the food, textile, paper, cosmetics and pharmaceutical industries, as well as in the medical area. ResumoA manteiga é um derivado lácteo que possui em sua composição 80% de gordura e que, quando consumido sem exagero, faz parte de uma alimentação equilibrada e saudável. Muitos estudos demonstram que uma porcentagem significativa da população mundial sofre com transtornos gastrointestinais quando consome leite e seus derivados, devido à intolerância à lactose. Além disso, há uma tendência crescente na área de alimentos para o desenvolvimento de produtos com reduzido teor de sódio, devido a inúmeras doenças provocadas pelo seu excesso no organismo. Nesse contexto, o objetivo deste trabalho foi desenvolver três formulações de manteiga extra, sem lactose e com diferentes concentrações de sódio, mantendo seus teores reduzidos. Foram realizados ensaios laboratoriais para a caracterização dos produtos, a fim de garantir os parâmetros físico-químicos e microbiológicos para manteiga, propostos pela legislação vigente (BRASIL, 1996). Além disso, foi realizada análise sensorial por meio de teste de aceitabilidade e intenção de compra. O teste de aceitabilidade demonstrou que a maioria dos julgadores atribuíram nota 8, equivalente a "gostei muito" na escala hedônica, às amostras A e B em relação a todos os atributos e, para a amostra C, nota 8 à textura e aceitabilidade global. A avaliação da intenção de compra atribuiu às amostras A, B e C, notas 4 e 5, correspondentes a "possivelmente compraria" e "certamente compraria" na escala (considerando que A = manteiga extra sem sal; B = manteiga extra salgada 0,75%; C = manteiga extra salgada 1,0%). O estudo demonstrou que é possível desenvolver produtos à base de leite, sem lactose e com reduzido teor de sódio, mantendo suas características nutricionais e sensoriais e com boa aceitabilidade de mercado.Palavras-Chave: Manteiga extra. Durante o processo de filetagem de tilápia, uma grande quantidade de subproduto de baixo valor comercial é gerada. Devido ao valor nutritivo do pescado, rico em proteínas de alto valor biológico e outros nutrientes essenciais, torna-se interessante o desenvolvimento de novos produtos para consumo humano a partir desses subprodutos do processo. O presente trabalho teve como objetivo o desenvolvimento de presunto defumado, a partir de subprodutos do processo de filetagem da Tilápia do nilo (Oreochromis niloticus Linnaeus). O presunto defumado de tilápia foi obtido a partir dos cortes de pescado, os quais seriam descartados no processo de padronização do filé. Após processamento, foram submetidos ao tratamento para redução de sódio, e então, submetido ao processo térmico. O teor de sódio do produto foi reduzido em 45,26 % em relação ao limite máximo pré-estabelecido pela ANVISA. A vida útil foi determinada em 180 dias, através de análises sensoriais, microbiológicas e físico-químicas, de acordo com a legislação vigente. O produto desenvolvido teve uma boa aceitação sensorial pelos provadores, sendo que a maioria dos julgadores “gostou moderadamente”. No teste de identificação de origem do produto, somente 25 % dos julgadores identificaram a origem da matéria prima, ou seja, não possui sabor e odor acentuado de pescado. Sendo uma alternativa interessante para a indústria pesqueira para agregar valor e disponibilizar novos produtos para este mercado.
O requeijão cremoso é um produto de grande aceitação e um dos produtos lácteos mais consumidos no Brasil. Com o aumento das demandas de mercado por produtos mais saudáveis com atribuição de alimentos funcionais, abre-se espaço para o desenvolvimento de novos produtos com tais propriedades. Este estudo objetivou o desenvolvimento de um requeijão cremoso sem lactose com adição de fibras. Para tanto, o leite foi previamente hidrolisado para obtenção da massa básica por acidificação direta e as fibras foram adicionadas ao final do processo de fusão. A caracterização físico-química do produto confirmou que o requeijão obtido é isento de lactose, e que houve redução de 67,3% de gordura em relação ao tradicional, podendo ser considerado um produto light. O percentual de fibras no produto final foi de 3,33 %, o que o caracteriza como um alimento fonte de fibras. O requeijão desenvolvido mostrou-se estável após 75 dias de armazenamento, e foi aceito sensorialmente com 66 % das avaliações entre os índices “gostei muito” e “gostei moderadamente”, o que indica boa aceitabilidade global.
