A desnutrição causada pela deficiência de micronutrientes (vitaminas e sais minerais) é um problema de ordem mundial, comum nos países em desenvolvimento. Para atenuar este problema, uma das alternativas adotadas é a estratégia de enriquecimento nutricional dos alimentos. O trabalho teve como objetivo fazer uma pesquisa sobre as técnicas de enriquecimento nutricional em alimentos e quais são as principais matérias-primas utilizadas para este fim. Foram realizadas pesquisas na Internet, em diferentes bases de dados, utilizando os termos: Biofortificação de alimentos, Golden Rice, batata-doce biofortificada, culturas biofortificadas. O enriquecimento nutricional de alimentos pode ser feito pelo melhoramento genético das culturas, de forma convencional (cruzamento entre mesma espécie, sem a inserção de genes de outro organismo), ou por transgenia (supera o melhoramento convencional, melhorando os níveis de micronutrientes nos vegetais, além de redirecioná-los para um tecido alvo desejado); ou pelo manejo agronômico (ferramenta mais barata e acessível, porém esta estratégia só pode ser usada com elementos minerais e não com nutrientes orgânicos, os quais devem ser sintetizados pela própria planta). Conforme estudos pesquisados, o enriquecimento nutricional de espécies vegetais pode suprir a carência de micronutrientes em populações com fome oculta, sem modificar os hábitos alimentares. Bamboo is a widely used forest resource and has a high fiber content in its shoots, which makes it considered as a nutritious and healthy food. Due to the water retention capacity of the fibers, it has the potential for flour production, and can be used as a thickener in products that have little firmness such as Petit Suisse. This study aimed to prepare a Petit Suisse type cheese using bamboo shoot flour as an alternative source of natural thickener and, therefore, to evaluate the impact on the physicochemical composition and texture profile of the product. The results showed that the addition of different amounts of bamboo fiber to the product had no effect on pH, moisture, fat and protein, but on texture parameters and on the effect of syneresis, product with the highest percentage of bamboo fiber (0.75%) was firmer and gummy, less elastic and with less syneresis effect during storage.
A deficiência de nutrientes essenciais na dieta, como ferro, zinco, iodo e vitamina A, desencadeia um grave problema nutricional de âmbito mundial denominado fome oculta. A biofortificação de vegetais tem sido utilizada como alternativa para combater a desnutrição, melhorando as culturas regionais, de modo a possibilitar o acesso de todos aos nutrientes necessários. Nesse cenário, a batata-doce biofortificada vem sendo utilizada como alternativa no combate à fome oculta por possuir alto teor de carotenoides com atividade pró-vitamina A. Para facilitar sua incorporação em diversos tipos de alimentos, a batata-doce pode ser transformada em farinha. Este trabalho teve por objetivo a obtenção e caracterização físico-química de farinha de batata-doce ‘Beauregard’ desidratada em estufa com circulação de ar e por atomização. Para as farinhas foi realizada a análise da composição centesimal, capacidade de hidratação e de solubilidade em água, e teor de carotenoides totais, sendo esse último também determinado na matéria-prima in natura, pelo fato de serem compostos sensíveis que podem ser afetados pelo processamento. Os resultados demonstraram que os diferentes processos de secagem afetaram o teor de umidade e de carotenoides totais do produto final, mas não os demais componentes. Houve redução de 24,37 % e 49,43 % de carotenoides totais para as farinhas obtidas por estufa e por atomização, respectivamente, quando comparadas à batata-doce in natura. Porém, mesmo havendo redução do teor de carotenoides totais, ambas as farinhas podem ser consideradas como contendo alto conteúdo de vitamina A, suprindo a ingestão diária recomendada (IDR) para adultos, contribuindo para o aumento do teor dessa vitamina na dieta.
