Peanuts and peanut butter are commonly consumed as a snack, meal component and ingredient in various commercial products. Their consumption is associated with reduced CVD risk and they pose little threat to positive energy balance. However, questions have arisen as to whether product form (e.g. whole nut v. butter) and processing properties (e.g. roasting and adding flavours) may compromise their positive health effects. The present study investigated the effects of peanut form and processing on two CVD risk factors: fasting plasma lipids and body weight. One hundred and eighteen adults (forty-seven males and seventy-one females; age 29·2 (SD 8·4) years; BMI 30·0 (SD 4·5) kg/m 2 ) from Brazil, Ghana and the United States were randomised to consume 56 g of raw unsalted (n 23), roasted unsalted (n 24), roasted salted (n 23) or honey roasted (n 24) peanuts, or peanut butter (n 24) daily for 4 weeks. Peanut form and processing did not differentially affect body weight or fasting plasma lipid responses in the total sample. However, HDL-cholesterol increased significantly at the group level, and total cholesterol, LDL-cholesterol and TAG concentrations decreased significantly in individuals classified as having elevated fasting plasma lipids compared with those with normal fasting plasma lipids. These observations suggest that the processing attributes assessed in this trial do not compromise the lipid-lowering effects of peanuts, and do not negatively impact body weight. Further studies are warranted to determine the effects of form and processing on other health risk factors.
These data indicate that ingestion of peanut oil elicits a weaker compensatory dietary response among overweight compared with lean individuals. Body weight increased, albeit less than theoretically predicted. The weaker effect of whole nuts on body weight reported in previous studies suggests components other than oil may be responsible.
Purpose: Evaluate the effect of flaxseed, olive and fish oil on the lipid profile, preservation of villosities and lymphocyte migration in the intestinal mucosa of Wistar rats. Methods: Thirty Wistar male rats were divided into four groups, which received the AIN-93M diet, with changes only to their lipid source: flaxseed, olive, fish, and soy oil (control group). The serum was separated for the biochemical parameter analysis. A histological evaluation was performed in the ileal portion. Results: The group which was fed fish oil presented lower values when compared to the other treatments for Total Cholesterol, High-density Lipoprotein Cholesterol and Triacylglycerol (p<0.05). The animals treated with fish and olive oils presented better intestinal villosities preservation. Less deposition of lymphocytes was observed in the flaxseed group (p<0.001). Conclusions: This study demonstrated that flaxseed, olive and fish oils present different responses than soy oil for the intestinal mucosa preservation and lymphocyte proliferation in Wistar rats. RESUMO Objetivo:Avaliar o efeito dos óleos de linhaça, oliva e peixe no perfil lipídico, preservação das vilosidades e migração de linfócitos na mucosa intestinal de ratos Wistar. Métodos: Trinta ratos Wistar foram divididos em quarto grupos e receberam dieta AIN-93M, modificando para cada grupo apenas a fonte lipídica: óleo de linhaça, oliva, peixe e soja ( grupo controle). O soro foi separado para análise dos parâmetros bioquímicos. A análise histológica foi realizada na porção ileal. Resultados: O grupo que recebeu óleo de peixe apresentou menores valores de colesterol total, lipoproteína de alta densidade e triacilglicerol (p<0.05). Os animais tratados com óleo de peixe e oliva apresentaram melhor preservação das vilosidades intestinais. Menor deposição de linfócitos foi observado no grupo tratado com óleo de linhaça (p<0.001). Conclusão: Este estudo demonstrou que os óleos de linhaça, oliva e peixe apresentam diferentes respostas em relação ao óleo de soja na preservação da mucosa intestinal e proliferação de linfócitos em ratos Wistar. ObjetivosEste trabalho procurou desenvolver um instrumento para obtenção de dados relativos ao consumo alimentar, de caráter qualitativo e quantitativo, para avaliar a ingestão dietética em estudos populacionais. MétodosInicialmente foram coletados dados sobre a ingestão alimentar de uma amostra representativa de moradores da cidade de Viçosa (n=119). Para conhecer os alimentos mais consumidos e seus porcionamentos, foram utilizados os métodos recordatório de 24h e pesagem direta. A entrevista ocorreu no horário do almoço ou jantar, com pesagem de todos os alimentos constantes na refeição e de porções referidas como consumidas nas últimas 24h, usou-se também álbum fotográfico como auxiliar na estimativa do peso da porção. ResultadosA partir dos 60 alimentos mais consumidos e dos porcionamentos identificados, foi desenvolvido um inquérito baseado no método Freqüência de Consumo Alimentar semi-quantitativo, com 65 itens e um álbum fotográfico de alimentos. Realizou-se um estudo piloto para avaliação desta metodologia em uma sub-amostra (n=34). O avanço dos conhecimentos sobre a relação entre alimentação e saúde, bem como os elevados custos da saúde pública e a busca permanente da indústria por inovações têm gerado novos produtos, cujas funções pretendem ir além do conhecido papel nutricional dos alimentos. Pesquisas têm sido realizadas visando à identificação de novos compostos bioativos e o estabelecimento de bases científicas para a comprovação das alegações de propriedades funcionais dos alimentos.O mercado para esse tipo de alimento movimenta cerca de US$ 60 bilhões no mundo, responsável por mais da metade dos investimentos publicitários na área alimentícia e com expectativas de crescimento da ordem de 5% ao ano (HARDY, 2000;SWADLING, 2001). Trata-se, portanto, de um segmento de grande interesse para as indústrias alimentícias e farmacêuticas, que têm buscado explorar a relação entre o consumo de determinados ingredientes com a redução de fatores de risco para doenças específicas, principalmente as crônicas não transmissí-veis, ou a melhora do desempenho físico ou mental (GRIZARD; DALLE; BARTHOMEUF, 2001;IZZO;NINESS, 2001).As fibras insolúveis produzem redução no tempo de trânsito intestinal e aumento do volume fecal levando à diminuição da constipação intestinal, e as fibras solúveis provocam retardo no esvaziamento gástrico, na absorção da glicose e do colesterol, permitindo melhor controle dos níveis plasmáticos, promovendo redução do risco de doenças cardiovasculares e diabetes, além de contribuir com a saciedade (COZZOLINO, 2005;CUMMINGS;EDMOND;MAGEE, 2004).Dentre os alimentos ricos em fibras, destaca-se a granola, que é um produto alimentar constituído por uma mistura de frutas secas, grãos de cereais e sementes oleaginosas, tais como amendoim e castanha-do-pará (GRANADA et al., 2003). Tal AbstractFour samples of ice cream were prepared with four different concentrations of granola and fructooligosaccharide (FOS). The concentration of fiber was evaluated using the AOAC method. The acceptance evaluation was conducted by 78 consumers between 15 and 25 years of age. The consumers evaluated the global acceptance of the formulations through the structured 9-point hedonic scale, in a single section, in a monadic form. The experiment was structured by a Randomized Complete Block Design. The results were submitted to the analysis of variance, Tukey test, and to the preference mapping technique for principal component analysis. The control samples and the others with FOS had the better acceptance. The sample containing solely FOS was the closest to the traditional product with little difference from the latter in terms of global acceptance. The granola was statistically different from the traditional product. The fiber concentration analyzed was higher than the one provided by the granola supplier. The fiber concentrations in the ice creams varied from 0,9 to 5,45 g.100 g -1 . The highest concentration was the one from the FOS. Objective: Peanut consumption may improve lipid profiles without promoting weight gain. Both properties have been attributed to their high-unsaturated fat content. Mono and polyunsaturated fatty acids reportedly hold stronger satiety value than saturated fats and may help appetite control. This study investigated the effects of chronic peanut oil consumption on appetite and food choice. Research methods and procedures: A total of 129 healthy adults from three countries (Brazil, Ghana and US) were randomly assigned to one of four treatment arms: consumption of peanut oil, olive oil or safflower oil as 30% of individual resting energy expenditure (REE) for 8 weeks or no dietary intervention. Participants received no other dietary guidance. They completed appetite questionnaires eliciting information about hunger, fullness, desire to eat, and prospective consumption during all waking hours for 1 day at weeks 2 and 6 and for 1 or 3 days at weeks 0, 4 and 8. Diet records were completed at weeks 0, 4 and 8. Results: No differences in appetitive ratings were observed over the 8-week trial. There were no significant treatment by time interactions. Total caloric intake was significantly higher at week 8 relative to baseline (F ¼ 10.08, Po0.05). The increases for each treatment were: peanut oil ¼ 1977114; olive oil ¼ 2377121; safflower oil ¼ 274790; control ¼ 75771. Free-feeding intake, an index of dietary compensation, was reduced significantly at weeks 4 and 8 compared to baseline (F ¼ 9.08, Po0.00). The declines (compensation scores) were (kcals): peanut oil ¼ À2087105 (46%); olive oil ¼ À2357105 (50%); safflower oil ¼ À1867102 (44%). There were no significant differences across countries in appetite ratings. Discussion: A prior intervention with whole peanuts reported a dietary compensation score of 66% over 8 weeks, this compares to a 46% compensation score observed with peanut oil. Our data suggests that the lipid fraction in peanuts elicits a weak effect on satiety.
OBJETIVOS: O presente trabalho visou avaliar os efeitos do consumo dos óleos de amendoim, açafrão e oliva no perfil lipídico, composição corporal, metabolismo energético e ingestão alimentar em indivíduos eutróficos normolipidêmicos. MÉTODOS: Foram selecionados 32 indivíduos, divididos aleatoriamente em quatro grupos, tendo quatro mulheres e quatro homens em cada grupo, com idade entre 18 e 50 anos. Foi oferecido um milk shake aos voluntários no desjejum, veiculando uma quantidade equivalente a 30% da sua energia basal na forma de óleo (amendoim, açafrão ou oliva), por um período de oito semanas, exceto para o grupo-controle, que não recebeu o shake. Foram realizadas avaliações dos valores de colesterol total e frações, triacilgliceróis, composição corporal, taxa de metabolismo basal, termogênese induzida pela dieta e ingestão alimentar dos indivíduos nas semanas basal, 4ª e 8ª. RESULTADOS: Não foi observada diferença significante no perfil lipídico e na saciedade, no entanto, o grupo que recebeu óleo de açafrão apresentou valores de lipídios plasmáticos mais reduzidos. A ingestão dos óleos levou ao aumento do ganho de peso, sendo que o óleo de oliva proporcionou maior circunferência do quadril. CONCLUSÃO: A adição dos óleos na dieta levou ao aumento da deposição de gordura corporal sem provocar alterações no perfil lipídico e ingestão dietética, ao contrário do relatado na literatura. O uso dos óleos em substituição a outros nutrientes energéticos da dieta, o maior número de voluntários e um período maior de intervenção devem ser investigados em estudos futuros.
