RESUMOObjetivou-se nesta pesquisa avaliar a capacidade antioxidante e qualidade do abacate 'Hass'. Os frutos foram mantidos sob temperatura ambiente (24 ± 1 ºC e 70±5% UR) e sob refrigeração em 10 ± 1 ºC e 90±5% UR e avaliados durante 21 dias. Determinou-se a perda de massa e taxa respiratória. As características físico químicas avaliadas foram acidez total titulável (ATT), sólidos solúveis totais (SS), ratio, pH, firmeza, atividade da enzima polifenoloxidase (PPO), coloração (L a* b*), fenólicos totais e atividade antioxidante por DPPH·. Nas duas condições de armazenamento o pico respiratório ocorreu no 12º dia Os frutos mantidos sob temperatura refrigerada apresentaram menor perda de massa e firmeza em relação àqueles em temperatura ambiente. Os valores de ATT diminuiram durante o armazenamento e os valores de pH permaneceram estáveis entre 6,8 e 7,1. A luminosidade manteve-se elevada (77,8 a 88,8%), observando-se diminuição dos componentes de cor verde e amarelo na polpa com o armazenamento. A atividade da PPO diminuiu durante o período de armazenamento para os frutos mantidos sob refrigeração, com tendência oposta àqueles mantidos em temperatura ambiente. Os valores de atividade antioxidante e conteúdo de fenólicos totais diminuíram do início ao fim do armazenamento. A atividade antioxidante por DPPH variou de 32,5 a 20,0%. Fruits were maintained under room temperature (24 ± 1 ºC and 70±5% relative humidity), and under refrigeration (10 ± 1 ºC and 90±5% relative humidity) for a period of 21 days. Weight losses and respiratory rates were also evaluated. Both physical and chemical characteristics were determined: titratable acidity (ATT), total soluble solids (SS), ratio, pH, firmness, polyphenoloxidase (PPO) activity, coloration (L a* b*), total phenolic and antioxidant activity for DPPH·. In both storage conditions, the breathing pick happened on the 12th storage day. Fruits maintained under refrigerated temperature presented smaller mass loss and firmness than those stored under room temperature. The ATT content decreased during storage, whereas the pH values remained stable: between 6,8 and 7,1. Brightness remained high (77.8 to 88.8%), whereas a decrease in the pulp green and yellow color components, during storage, was observed. The PPO activity decreased during storage period in fruits maintained under refrigeration, with an opposed tendency for those maintained under room temperature. Antioxidant activity and the total phenolic content decreased from beginning to end of storage. The antioxidant activity for DPPH varied from 32.5 to 20.0%.
RESUMO: O objetivo desse trabalho foi verificar o método de cozimento mais adequado para o preparo de hortaliças, visando minimizar as perdas de minerais. Partes convencionais e não convencionais de abóbora, brócolis, cenoura e couve-flor foram submetidas a quatro tipos de tratamentos térmicos (imersão, vapor, e micro-ondas). Avaliou-se os teores de minerais (Fe, Zn, Mg, K, P e Ca). As análises foram realizadas na hortaliça fresca e após cozimento pelos diferentes métodos em estudo. O conteúdo de minerais foi superior ou idêntica à parte convencional das hortaliças avaliadas. Houveram perdas de minerais nas partes convencionais e não convencionais em relação ao vegetal fresco após serem submetidas aos métodos de cozimento. O método de cozimento à vapor e em micro-ondas resultaram nas menores perdas de minerais.
RESUMO:O objetivo desta pesquisa foi avaliar a qualidade do tomate, quanto aos perigos químicos e microbiológicos, consumidos em alguns restaurantes. As amostras de tomate foram obtidas de 10 restaurantes da cidade de Botucatu-SP, selecionados aleatoriamente, e sob autorização prévia. Os tomates foram avaliados quanto aos perigos químicos, sendo realizadas análise dos principais pesticidas utilizados na cultura. Quanto aos riscos microbiológicos nos tomates foi realizada a determinação do Número Mais Provável (NMP) de coliformes totais (CTo) e termotolerantes (CTe). Os tomates coletados não estavam em conformidade com os padrões da legislação vigente para coliformes totais. Os tomates coletados apresentaram concentrações superiores aos limites permitidos para os pesticidas imidacloprido e clorpirifós em diversos estabelecimentos. As Boas Práticas Agrícolas devem ser associadas às Boas Práticas de Fabricação para o fornecimento de tomates seguros ao consumo humano.Palavras-chave: agroquímicos, resíduos, risco microbiológico. Microbiological analysis and pesticides in tomatos consumed in Botucatu-SP, BrazilABSTRACT: The objective of this study was to evaluate the tomato quality, as for the chemical and microbiological dangers, consumed at some restaurants of Botucatu-SP city. The samples tomato were obtained of 10 restaurants, selected randomly, and under previous authorization. The tomatoes were appraised as for the chemical dangers, being accomplished analysis of the main pesticides used in the culture. As for the microbiological risks in the tomatoes the determination of the Most probable Number was accomplished (NMP) of total coliformes (CTo) and termotolerantes (CTe). The collected tomatoes were not in accordance with the patterns of the effective legislation for total coliformes. The collected tomatoes presented superior concentrations to the limits allowed for the pesticides imidacloprid and chlorpyrifos in several establishments. The Good Agricultural Practices should be associated to the Good Practices of Production for the supply of safe tomatoes to the human consumption.
Recebido em março/2015; Aceito em agosto/2015. RESUMO:Objetivou-se nesta pesquisa verificar a preferência sensorial entre compota e doce em calda de figo calda em função do modo de preparo. Foram realizados três tratamentos: compota de figo -tratamento térmico por 20 minutos, sem cozimento do fruto na calda (T1), doce de figo em calda -tratamento térmico dos frutos por 10 minutos e cozimento dos frutos na calda por 10 minutos (T2) e doce de figo em calda -sem tratamento térmico e cozimento do fruto na calda por 20 minutos (T3). A calda utilizada nos três tratamentos foi de 25 o Brix. Os doces foram homogeneizados, fruta e calda, e avaliados quanto aos teores de sólidos solúveis ( o Brix), potencial hidrogeniônico (pH) e acidez titulável (g de ácido cítrico.100g polpa -1 ). Amostras dos três tratamentos foram submetidas à avaliação sensorial por um grupo de 50 consumidores, não treinados, sem restrições quanto à idade, ao sexo e à frequência de consumo. Os valores de todos os atributos físico-químicos avaliados nesta pesquisa estão de acordo com a literatura e legislação para este tipo de produto. Para análise sensorial, o tratamento 2 obteve notas superiores aos outros tratamentos, demonstrando que o cozimento do figo em calda durante 10 minutos apresentou maior aceitabilidade dos provadores. Não foi constatada diferença em relação ao sexo na preferência pelo produto. Palavra-chave: Ficus carica L., processamento, aceitabilidade. ABSTRACT:The aim of this work was to verify the sensorial preference of the fig compote and sweet in syrup in function of preparation method. Three treatments were accomplished: fig compote -thermal treatment for 20 minutes and without cooking in the syrup (T1), sweet of fig -thermal treatment for 10 minutes and cooking in the syrup for 10 minutes (T2) and sweet of fig: without thermal treatment and cooking in the syrup for 20 minutes (T3). The sweets were homogenized, fruit and syrup, and evaluated for the soluble solids content ( o Brix), hidrogenionic potential (pH) and titratable acidity (citric acid g .100g pulp -1 . Samples of the three treatments were submitted to the sensorial evaluation by 50 consumers group of fruits that appreciate fig, compotes and sweet of fruits, without restrictions as for the age, to the sex and the consumption frequency. The values of all of the appraised physiochemical attributes in this research are in agreement with the literature and legislation for this product type. For sensorial analysis, the treatment two obtained superior notes to the other treatments, demonstrating that the fig cooking in syrup for 10 minutes showed higher acceptability of assessors. Difference was not verified in relation to the sex in the preference for the product.

RESUMO:O objetivo deste trabalho foi elaborar e avaliar sensorialmente a geleia light de maná cubiu formulada com diferentes concentrações de sucralose. Foram utilizados frutos de maná cubiu, adquiridos em uma produção comercial, no interior de São Paulo, na Região do Vale do Ribeira. Os frutos foram lavados, higienizados com hipoclorito de sódio, seguido de enxague, descasque e retirada da semente. Realizou-se o branqueamento a 90°C por 5 minutos e triturou-se em liquidificador industrial. A polpa foi acondicionada em sacos de polietileno e armazenada em freezer, para posterior elaboração da geleia. As geleias foram preparadas com uma concentração de 60:40 (polpa:açúcar cristal) para a convencional e 60:40 (polpa:açúcar cristal + sucralose) para as geleias light. Para que ocorresse a geleificação das mesmas, foi utilizada pectina cítrica. A geleia foi envasada à quente em embalagens de vidro com capacidade para 320g, previamente esterilizadas fechadas e invertidas. Após o envase as geleias foram resfriadas naturalmente e estocados à temperatura ambiente. Nas geleias foi feita análise microbiológica e sensorial, durante o período de armazenamento de 120 dias. Foi realizada a análise de variância no delineamento inteiramente casualizado, esquema fatorial com dois fatores, seguida do teste de Tukey (1% de probabilidade) para comparações múltiplas. Os resultados das geleias não apresentaram nenhum tipo de contaminação microbiológica até os 120 dias de armazenamento, apresentando-se, em condições sanitárias satisfatórias. A Geleia Light 2 (60% polpa + 28% sacarose + 12% sucralose) foi a mais aceita para os atributos sensoriais avaliados e para intenção de compra. PREPARATION AND ACCEPTABILITY OF THE CONVENTIONAL AND LIGHT MANÁ CUBIU JELLYABSTRACT: The objective of this study was to develop and evaluate the sensory light jelly of maná cubiu formulated with different concentrations of sucralose. Fruit maná cubiu were used, purchased from a commercial production, in São Paulo, the region of Vale do Ribeira. The fruits were washed, sanitized with sodium hypochlorite followed by rinse, peel and seed the withdrawal. Bleaching was carried out at 90 ° C for 5 minutes and triturated in industrial blender. The pulp was packed in polyethylene bags and stored in freezer for later development of jelly. The jams were prepared with a concentration of 60:40 (pulp crystallized sugar) for conventional and 60:40 (pulp: Crystal sugar + Sucralose) for light jellies. For gelation thereof occur, citrus pectin was used. The jelly was the bottled hot in glass containers with a capacity of 320g, pre-sterilized closed and inverted. The aim of this work was to evaluate effects of different gas concentrations (O2 and CO2) on conservation of minimally processed eggplants. The eggplants were sanitized, processed and packed in nylon + transparent polyethylene. The vegetables were submitted to modified atmospheres (T1= atmospheric air; T2= vacuum; T3= 4% O2 and 5% CO2; T4= 4% O2 and 6% CO2; T5= 4% O2 and 7% CO2; T6= 4% O2 and 8% CO2). The minimally processed eggplants were kept at 5±1°C and 90±1% RH, for 10 days. After 0, 2, 4, 6, 8 and 10 days of storage, fresh weight loss, respiratory rate, color, soluble solids (SS), titratable acidity (TA), pH, SS/TA ratio, visual analysis and purchase intent were determined. We used completely randomized experimental design, in a factorial scheme 6x6 (atmosphere x days of conservation). The atmosphere with higher CO2 concentration (8%) reduced the respiratory rate more intensely. The minimally processed eggplant maintained at 4% O2 + 6% CO2 obtained better grades on the visual analysis and purchase intention, with 10-day storage period. The vacuum was not recommended to keep minimally processed eggplant refrigerated under the studied conditions.
