The per capita consumption of flowers in Brazil has presented successive growth rates, although the consumption in consumer class called elderly, that is 60 years old or more, is still incipient when compared to other countries such as the United States, Japan and the most part of European countries where the consumption of these people is more than the double of consumption in Brazil. In this context, it is presented the results of the profile and consumer behavior evaluation of elderly flowers consumer, aiming to subsidize the establishment of marketing actions for the retail segment of the flower production chain. The study was accomplished using 169 interviews with elderly people of both genres at the time that they were buying flowers in 22 flower shops in Paraná Coast. The female gender was identified as the majority consumer (p=78.7%). It was observed a tendency in the increase of consumption based on advanced schooling. It was registered an average of acquisition of 5,81 times per year, with preferential consumption of roses, violets and orchids. The accessibility to stores, the service quality followed by the high prices of flowers, were the main consumption limiting factors in the class evaluated. RESUMO Perfil e comportamento do consumidor de flores na terceira idade no litoral do ParanáO consumo per capita de flores no Brasil tem apresentado sucessivas taxas de crescimento, porém, o consumo na classe de consumidores denominado de terceira idade, que possui 60 anos ou mais, ainda é incipiente quando comparado com outros países como os Estados Unidos, Japão e a maioria da dos países da Europa onde o consumo desta classe é mais que o dobro que no Brasil. Neste contexto, apresenta-se o resultado da avaliação perfil e do comportamento do consumidor de flores na terceira idade, visando subsidiar o estabelecimento de ações de marketing para o segmento comercial varejista da cadeia produtiva de floricultura. A acessibilidade das lojas, a qualidade do atendimento seguido pelo elevado preço das flores, foram os maiores limitadores ao consumo na classe avaliada. RESUMO:Avaliou-se o comportamento físico-químico e bioquímico do caqui 'Rama Forte' armazenado sob refrigeração em condição de atmosfera modificada passiva. Utilizou-se frutos colhidos com coloração da epiderme amarelo alaranjado, sendo, após seleção, acondicionados em bandejas de poliestireno expandido, revestidas por filme plástico de polietileno de baixa densidade (10 µm de espessura) e armazenados à 7 ± 1ºC e 85 ± 5% de UR, avaliados a cada cinco dias durante 20 dias. As análises realizadas foram perda de massa, atividade respiratória, coloração da polpa e do pericarpo, potencial hidrogeniônico (pH), acidez titulável (AT), sólidos solúveis (SS), atividade das enzimas polifenoloxidase (PPO), peroxidase (POD), compostos fenólicos totais, atividade antioxidante total (AAT), antocianinas e carotenóides totais. Ocorreu baixa porcentagem perda de massa nos frutos, que não alterou a qualidade dos mesmos que apresentam pico respiratório no quinto dia de armazenamento. Os valores de pH, SS e AT, assim como a atividade das enzimas PPO e POD, não alteraram significativamente durante o período experimental. Os compostos fenólicos totais, antocianinas e carotenóides totais decresceram após o quinto dia de armazenamento e os valores de AAT aumentaram durante o armazenamento. O armazenamento refrigerado associado à atmosfera modificada passiva foram efetivos na manutenção de parte dos parâmetros de qualidade avaliados, no entanto, pode ter influenciado na redução dos valores de antocianinas e carotenóides, compostos estes que são de interesse nutricional. Beetroot is rich in bioactive compounds that may provide health benefits. However, vegetable tissues are physically and chemically damaged by cooking, causing major changes to compounds in cell membranes. The current study aimed to evaluate the influence of several cooking methods on bioactive compounds in beetroot. Four heat treatments were carried out: steam cooking, pressure cooking, baking in an oven, and boiling in water. Beets were matched in uniformity of size, color, and absence of defects. They were washed thoroughly in running water to remove dirt. Next, one of the four cooking methods was applied. After cooking, beets were peeled by hand. Analysis was carried out on both uncooked and cooked beets to evaluate antioxidant activity, content of phenolic compounds, pigments, flavonoids, and betalains. The experiment was completely randomized design (CRD) and carried out in triplicate. Data were subjected to analysis of variance (F test, p < 0.05) and mean values compared by Tukey test at 5% probability. There was no change in antioxidant activity or total phenolic and anthocyanin content by any of the cooking methods compared to that in raw beetroots. However, pressure-cooking resulted in lower carotenoid levels compared to that in raw beet. Furthermore, flavonoid and betalain content decreased by all the cooking methods. Key words: Antioxidants. Porém o cozimento dos tecidos vegetais altera física e quimicamente as propriedades da parede celular, afetando o teor desses compostos. O objetivo do trabalho foi avaliar os compostos bioativos em beterrabas in natura e submetidas a diversas formas de cozimento. Foram realizados quatro tratamentos térmicos, sendo eles cocção a vapor, cocção na panela de pressão, no forno e na água em imersão. As beterrabas foram selecionadas visando a homogeneização do lote quanto ao tamanho, cor e ausência de injúrias e defeitos. Foram lavadas em água corrente para tirar as sujidades. Em seguida, levadas às quatro formas de cocção. Após os tratamentos térmicos, foram descascadas manualmente. As análises realizadas nas beterrabas in natura e cozidas foram a atividade antioxidante, teor de compostos fenólicos totais,
controle 1 (sem embalagem e sem irradiação); controle 2 (embalagem de poliestireno (PS) + polietileno de baixa densidade (PEBD) e sem irradiação); tratamento 1 (PS+PEBD e 0,2kGy); tratamento 2 (PS+PEBD e 0,6kGy), e tratamento 3 (PS+PEBD e 1,0kGy). As análises realizadas foram: firmeza, sólidos solúveis (SS), acidez titulável (AT) e índice de maturação. Foi utilizado o delineamento inteiramente casualizado, com esquema fatorial 5 x 5 (tratamento x tempo). Concluiu-se que as altas doses de irradiação promoveram efeito negativo nas características físico-químicas da goiaba 'Pedro Sato', e que apenas a menor dose utilizada (0,2kGy) associada à atmosfera modificada conservou frutos com maior qualidade e aceitabilidade, indicado por maiores índice de maturação e teor de sólidos solúveis obtidos. GAMMA RADIATION AND PASSIVE MODIFIED ATMOSPHERE ON THE QUALITY OF GUAVAS 'PEDRO SATO'ABSTRACT -The aim of this study was to evaluate the effect of gamma irradiation associated with modified atmosphere, on postharvest quality of guavas 'Pedro Sato', checking their physicochemical characteristics.Guavas from the region of Vista Alegre do Alto/SP/Brazil, were used. After harvest, the fruits were immediately transported to the Fruit and Vegetables Laboratory of the Agroindustrial Management and Technology Department, Agronomic Sciences College -UNESP -Botucatu / SP, where they were kept at 10 ° C and 90-95% RH in cold storage, for 28 days. The treatments were: control 1 (without package or irradiation), control 2 (polystyrene package-PS) + low density polyethylene package-LDPE and without irradiation) treatment 1 (PS + LDPE and 0.2 kGy), treatment 2 (PS + LDPE and 0.6 kGy) and treatment 3 (PS + LDPE and 1.0 kGy). The analyses were: firmness, soluble solids (SS), titratable acidity (TA) and maturity index. It was used the randomized design with a factorial design 5 x 5 (treatment x time). In the end of this work it was concluded that high doses of irradiation promoted a negative effect on physicochemical characteristics of guava 'Pedro Sato', verifying that only the lowest dose associated with modified atmosphere provided fruits with higher quality and acceptability, due to the higher maturity index and soluble solids obtained.
