O objetivo deste trabalho foi avaliar a qualidade de morangos 'Camarosa' submetidos a diferentes sistemas de colheita, luz UV-C, atmosfera modificada e armazenamento por diferentes períodos, visando ao aumento da vida útil e à redução de perdas após a colheita. A colheita foi realizada em dois sistemas: no sistema um, o produtor realizou a colheita sem luvas, em caixas de madeira e sem utilizar o pré-resfriamento das frutas; no sistema dois, a colheita foi realizada por pessoal treinado, com utilização de luvas desinfetadas, em caixas plásticas lavadas e desinfetadas, foi empregado o pré-resfriamento a -3ºC durante 1 hora, até a temperatura da polpa das frutas atingir 4ºC. Os tratamentos foram: T1- controle (frutas sem luz UV-C e sem filme de polietileno); T2- frutas submetidas à luz UV-C durante 6 minutos; T3- frutas acondicionadas em filme de polietileno; T4- frutas submetidas à luz UV-C e acondicionadas em filme de polietileno. O armazenamento foi realizado à temperatura de 0±0,5ºC e UR de 90-95% por períodos de 3; 6 e 9 dias, seguidos de simulação da comercialização por 3 dias, à temperatura de 8±0,5ºC e UR de 75-80%. Na colheita e após o armazenamento, avaliaram-se: perda de massa; cor; firmeza de polpa; sólidos solúveis (SS); acidez total titulável (ATT); relação SS/ATT; ácido ascórbico, e incidência de podridões. A utilização de pré-resfriamento reduziu a perda de massa e a porcentagem de podridões. A perda de massa diminuiu nas frutas tratadas com filme. A luz UV-C reduziu a porcentagem de podridões. Morangos 'Camarosa' colhidos cuidadosamente, submetidos a pré-resfriamento, com utilização de luz UV-C e filme de polietileno, mantêm a qualidade durante nove dias de armazenamento a 0ºC e 3 dias de comercialização a 8ºC.
The use of carotenoids in foods is limited due to their poor solubility in water-rich matrices, and the nanoencapsulation emerges as an alternative to allowing the solubilization and to protect the carotenoids against degradation. The aims of this study were to produce, by the interfacial deposition of the preformed polymer, to characterize, and evaluate the stability of nanocapsules obtained from a blend of β-carotene, α-carotene, and lutein (BALNs) and nanocapsules of synthetic β-carotene (BNs). The encapsulation efficiency, transmission electron microscopy, and the logarithm of the distribution of the coefficient of the BALNs and BNs, with 26 μg/mL of carotenoids, were performed after preparation. During 100 days of storage (4°C) for the BALNs and BNs, the carotenoids retention, hydrogen potential, color, particle diameter, and the zeta potential were analyzed. The z-average and zeta potential after 100 days of storage for the BALNs and BNs were, respectively, 166.53 ± 4.71 nm/−18.37 ± 2.06 mV and 190.90 ± 7.87 nm/−9.08 ± 1.23 mV. At the end of storage, the β-carotene content was 67.62 ± 7.77 % (BALNs) and 11.69 ± 1.65 % (BNs). The βcarotene retention in the BALNs was higher than in the BNs probably due to the synergism that occurs among the compounds. Regardless of the decrease in the pH values and the b* coordinate, the formulations of the BALNs and BNs were considered physically stable during the storage. Nevertheless, beyond the physical stability, the BALNs presented a satisfactory carotenoid retention at end of storage.
Nowadays, despite of being a typically temperate fruit crop, peach is found in subtropical and even tropical altitude zones, due to breeding efforts. Genetic knowledge and phenotypic and environmental parameters directly or indirectly influence the characters of economic importance in peach, and they are of great importance for breeding programs orientation. The aim of this study was to estimate heritability of a color shade character of peach flesh, measured by the Hue angle, chroma and lightness to evaluate its distribution in the populations, testing the possible existence of maternal effect. Results showed that parameters related to color shade of peach flesh have a medium heritability. Parents selection based on phenotype allows a medium genetic improvement for the mentioned character. This heritability is predominantly additive, without maternal effect. The Hue angle is the correct parameter to be used to classify and study yellow-flesh peaches and nectarines in relation to their color shade. However, the multivariate analysis of principal components, using the three parameters Hue angle, chroma and lightness, is an alternative of high accuracy.
Influência do sistema de produção e do armazenamento refrigerado nas características físico-químicas e no desenvolvimento de compostos voláteis em morangosInfluence of planting system and cold storage on the physical-chemistries characteristicsand volatile compounds development in strawberries
Lipid-core nanocapsules loaded with -carotene and ␣-carotene, and lutein (NCs) were produced with monomodal particle size distribution. Their mean diameter was 151.33 ± 5.03 nm (D 4,3) and 180.30 ± 0.70 nm (z-average), zeta potential was −22.63 ± 0.52 mV, and pH was 3.21 ± 0.04. The stability of NCs was studied under different simulated industrial treatments, such as thermal and ultraviolet (UV)-visible light treatment. Regardless of the temperature and incubation time of the samples, higher carotenoids retention (%) was observed in NCs than ethanol extract (EE) (under UV-vis light treatment) and higher carotenoids retention (%) was observed in NCs compared to EE and data already published on the stability of non-encapsulated carotenoids (under thermal treatment). In addition, NCs when exposed to UV-vis light treatment had higher activation energy and lower constant rate (k) than EE. In conclusion, nanoencapsulation offers greater stability to the -carotene, ␣-carotene, and lutein upon exposure to conditions similar to those used in the food processing (heat) and storage (UV-vis light).
Avaliaram-se os efeitos do fungicida benomil (0,06%) e da luz ultravioleta (254nm, UV-C) na conservação de pêssegos cultivar Jade, aos 4 e 8 dias de armazenamento em condição ambiente (26ºC e 75-85% de UR). Os tratamentos foram: T1-Testemunha;T2 - benomil (0,06%); T3 - 10 minutos de exposição à radiação UV-C (3,71 kj. m-2) e T4 - 30 minutos de exposição à radiação UV-C (11,15 kj. m-2). O delineamento experimental foi o inteiramente casualizado, seguindo-se um esquema fatorial 2 x 4 com 3 repetições de 10 frutos cada. Os parâmetros avaliados foram: sólidos solúveis totais (SST), acidez titulável total (ATT), pH, firmeza da polpa e incidência de podridão. Os pêssegos não apresentaram alteração do pH, em ambos os tempos de avaliação. Os SST, a ATT e a firmeza da polpa sofreram alterações aos 4 dias de armazenamento, sendo que, aos 8 dias nessa condição, a firmeza da polpa e a incidência de podridão apresentaram diferenças significativas em função dos tratamentos. Os pêssegos dos tratamentos T2 e T4 apresentaram menor incidência de podridões aos 8 dias de armazenamento, porém não diferiram estatisticamente entre si. Concluiu-se que as alterações nos parâmetros físico-químicos (SST, ATT, pH e firmeza da polpa) , aos 4 e 8 dias de armazenamento ambiente (26ºC e 75-80% de UR), não afetaram a qualidade dos pêssegos bem como a utilização de luz ultravioleta (254 nm, UV-C), durante 30 minutos, controla 100% as podridões dos pêssegos da cultivar Jade, armazenados, após 4 e 8 dias, em condição ambiente.
El objetivo de este trabajo fue determinar la influencia del sistema de producción y del período de almacenamiento de frutillas sobre la pérdida de masa, compuestos fenólicos totales, antocianinas totales, ácido ascórbico (vitamina C), actividad antioxidante y sus correlaciones. En este experimento fueron utilizadas frutillas 'Camarosa' y 'Camino Real' con madurez comercial, procedentes de cultivos en sistemas de producción orgánico y convencional, localizados en el municipio de Pelotas-RS. Los frutos fueron almacenados durante 0, 2, 5 y 8 días a 1ºC y 90-95% de HR. En general, el contenido de fenoles totales, de antocianinas totales y la actividad antioxidante aumentaron durante el almacenamiento refrigerado, mientras que los contenidos de ácido ascórbico y de masa fresca disminuyeron significativamente. Los contenidos de fenoles totales y de antocianinas totales presentaron correlación positiva con la actividad antioxidante, siendo la correlación con el contenido de ácido ascórbico negativa. Las frutillas producidas en sistema orgánico y conservadas durante cinco días, mostraron mayores valores de actividad antioxidante. Después de ocho días de almacenamiento a 1ºC, los frutos del sistema de producción orgánico presentaron menor degradación de antocianinas y de ácido ascórbico que los frutos del sistema de producción convencional.
