En este artículo nos proponemos examinar algunas variables que la potencian y contribuir a su mejor comprensión en una línea ya iniciada por otras estudiosas como Amorós y Segato. Examinamos cómo reaccionan ciertos varones ante la desilusión que ocasiona la pérdida de sus privilegios entendidos como naturales y la ficción de que sus goces y prebendas se ven menguados ante las mujeres que poco a poco abandonan el polo tradicional de la pasividad. La idea de "cuerpos ejemplificadores", es decir de cuerpos disciplinados violentamente, guía nuestro análisis en el sentido de que se trata del guión de un mensaje claro, público y a la vez cifrado, inscripto en el cuerpo de las mujeres y potenciado por la crisis actual de la globalización.Palabras clave: Globalización. Ricotta cheese has low fat and salt contents and a high quantity of proteins. The diversity of the nutrients and the high water content are factors that favor the development of microorganisms in this product. In this context, the aim of this study was to evaluate the microbiological quality of ricotta commercialized in the western region of Santa Catarina State, Brazil. Thirty samples, comprising 10 different brands of ricotta, were collected and sent to the Food Microbiology Laboratory at the Instituto Federal Catarinense (IFC), Campus Concórdia for microbiological analysis to determine the presence of Salmonella sp., Listeria sp., coagulase-positive Staphylococcus and thermotolerant coliforms. Of the 30 samples, the results for 33.3% were not within the parameters established by current legislation, that is, they were not fit for human consumption. This high percentage was due to contamination by thermotolerant coliforms, with 10 samples containing this group of microorganisms. One sample was contaminated with Listeria grayi, and for the other microorganisms investigated, (Salmonella sp. and coagulase-positive Staphylococcus) the results were satisfactory. This study characterizes the hygiene-sanitary conditions of ricotta commercialized in the western region of Santa Catarina State, highlighting the need for greater care during the production of this product.Keywords: Salmonella sp.; Listeria sp.; coagulase-positive Staphylococcus; thermotolerant coliforms; Listeria grayi. Practical Application:The consumption of cheese is increased significantly in Brazil. A cheese that stands out is the ricotta by a high percentage of nutrients and high water activity, however, this excellent composition favors the development of microorganisms. Thus, microbiological analysis have a great importance to evaluate the product. The results allow to characterize the hygiene-sanitary conditions ricotta cheese suggesting expansion of quality controls in the industry.
Qualidade microbiológica de produtos de origem animal. Rossi & Bampi.O objetivo deste trabalho foi avaliar a qualidade microbiológica de produtos de origem animal (leite, carne e ovos) produzidos e comercializados na microrregião oeste e meio oeste de Santa Catarina durante o ano de 2013. Essa avaliação foi realizada através de laudos de análise microbiológica de produtos de origem animal com inspeção municipal, estadual ou federal disponibilizados por um laboratório situado no meio oeste Catarinense. As análises microbiológicas avaliadas foram: Salmonella sp., Staphylococcus coagulase positiva, coliformes termotolerantes e Clostridium sulfito redutores. Das 856 amostras de carne, leite e ovos 16,2% estavam fora dos parâmetros estabelecidos pela legislação vigente, ou seja, impróprias para consumo humano. Em relação aos ovos, 100% das amostras atenderam a legislação, 31,8% dos leites e derivados analisados não apresentavam qualidade microbiológica satisfatória, seguidos por derivados de carne com 20,4% e carne in natura com 6,2% de amostras impróprias. Por fim, este trabalho possibilitou avaliar e caracterizar as condições higiênico sanitárias dos produtos de origem animal, produzidos e comercializados na região Oeste de Santa Catarina. Palavras-chave: Doenças transmitidas por alimentos, Saúde pública, Microbiologia de alimentos.The aim of this study was evaluating the microbiological quality of animal products (milk, meat and eggs) produced and marketed in the west and midwest microregion from Santa Catarina during the year of 2013. This evaluation was performed by microbiological analyzes reports of animal products with municipal, state or federal inspection provided by a laboratory situated in the west of Santa Catarina. The microbiological analyzes evaluated were: Salmonella sp., Coagulase positive Staphylococcus, thermotolerant coliforms and sulfite-reducing Clostridium. From 856 samples of milk, meat and eggs, 16.2% were out of the parameters established by the current law, in other words, inappropriate for human consumption. For eggs, 100% of the samples met the legislation, 31.8% of milk and diary products analyzed did not show adequate microbiological quality, followed by meat products (20.4%) and raw meat (6.2%) of unfit samples. Finally, this study allowed us to evaluate and characterize animal products hygienic-sanitary conditions produced and marketed in West of Santa Catarina.
