The influence of nitrogen compounds in grape musts on the content of sulphur compounds of wines was studied. Different vinifications were performed with the addition of methionine (20 mg l −1) and/or cysteine (40 mg l −1) to grape musts before alcoholic fermentation. Six grape musts, with different nitrogen composition, from cultivars of the 'Vinhos Verdes' Region, in Portugal, were used. Addition of methionine to grape musts enhanced the content of wines in 3-(methylthio)-1-propanol, acetic acid-3-(methylthio)propyl ester, 3-(methylthio)propionic acid and some unidentified sulphur compounds. Increase of cysteine concentration in musts led to the production of wines with high levels of hydrogen sulphide and cis-2-methyltetrahydrothiophene-3-OL and also unidentified sulphur compounds; however, the content of 3-(methylthio)propionic acid in the wines decreased considerately with the addition of cysteine to grape musts. This work showed that cultivars from the Vinho Verde Region show different sulphur compound contents. Avesso wines, elaborated from grape musts with low amino acids level, presented the highest total sulphur compounds content. Wines from Azal branco and Alvarinho were characterised by high contents of 4-(methylthio)-1-butanol and 3-(methylthio)propionic acid, respectively. A high content of N-(3-(methylthio) propyl)-acetamide and dimethylsulphone characterise the Loureiro wines. In contrast, Trajadura wines, produced from a must rich in amino acids, presented a low total sulphur compounds content; however, these wines were also characterised by high concentrations of 4-(methylthio)-1-butanol, acetic acid-3-(methylthio)propyl ester and hydrogen sulphide.
Se bem planejada, a disposição de águas residuárias no sistema solo-planta poderá trazer benefícios, tais como fonte de nutrientes e água para as plantas, redução do uso de fertilizantes e de seu potencial poluidor. O solo apresenta grande capacidade de decompor ou inativar materiais potencialmente prejudiciais ao ambiente, através de reações químicas e por processos microbiológicos. Com o objetivo de avaliar os efeitos da aplicação da água residuária de bovinocultura (ARB) sobre as propriedades físicas e químicas de um Argissolo Vermelho Eutrófico, realizou-se um experimento utilizando-se quatro taxas de aplicação da ARB (25, 50, 75 e 100 kg ha-1 de K), em condições de lisímetros de drenagem e em ambiente protegido. Avaliaram-se: condutividade elétrica da solução do solo; argila dispersa em água; índice de saturação por sódio; pH; CTC; saturação por bases e os teores de P, K, Ca, Mg e Na. Os valores de pH, CTC, saturação por bases e concentrações de P, K, Ca e Mg, aumentaram com acréscimos nas taxas de aplicação da ARB, nas camadas superficiais do solo. Não ocorreu salinização do perfil do solo embora a porcentagem de argila dispersa em água tenha aumentado, indicando que a aplicação permanente da ARB pode propiciar riscos de redução da permeabilidade do solo.
The fermentation profile, chemical composition, and microbial populations of alfalfa silages treated with microbial inoculants (MI) at different fermentation periods (T) were evaluated in tropical conditions. A 4×6 factorial arrangement was used in a randomized design with 3 replicates. Fresh alfalfa was treated with (1) no treatment (CTRL), (2) commercial inoculant (CIN), (3) Pediococcus acidilactici (strain 10.6, S1), and (4) Pediococcus pentosaceus (strain 6.16, S2). An inoculant application rate of 10(6) cfu/g of fresh forage was used. The fermentation periods were 1, 3, 7, 14, 28, and 56 d. Alfalfa was harvested 82 d after sowing at the early flowering stage, chopped into 1.5-cm particle size, and ensiled in 25 × 35 cm vacuum-sealed plastic bags. The numbers of lactic acid bacteria, enterobacteria, mold, and yeast in alfalfa before ensiling were 5.42, 5.58, 4.82, and 4.8 log cfu/g, respectively. Silage chemical composition was evaluated only at 56 d. All parameters were affected by the interaction MI × T, except the concentrations of lactic and propionic acids. Alfalfa silage treated with S1 or S2 had lower pH values than CTRL from the first day until 28 d. However, the inoculants resulted in similar pH after 56 d, and these values were lower than the CTRL. The highest concentration of lactic acid was observed in the silage treated with S1 and S2 at 7 and 14 d of ensiling. The concentration of acetic acid was lower in the silages treated with S1 and S2 than the CTRL and CIN at 3 and 28 d of fermentation. There was no effect of MI or MI × T interaction on the microbial populations. However, the number of enterobacteria decreased over the fermentation period until 14 d and increased slightly after this time point. The chemical composition of alfalfa silage was not affected by MI at 56 d of ensiling. The strain P. pentosaceus 6.16 was the most efficient in dominating the fermentation process by decreasing the pH more quickly and increasing the concentration of lactic acid, suggesting its potential use as a silage inoculant.

-The objective of this experiment was to evaluate the effects of adding cassava scrapings on gas and effluent losses, dry matter recovery, pH, contents of N-NH 3 , organic acids and volatile fatty acids and the bromatological composition of elephant grass silages. It was used a randomized complete design, with four levels of cassava scrapings (0, 7, 15 or 30% natural matter) each one with four replications per level. The grass was cut at 50 days of regrowth and ensiled in 15-L silos, equipped with a Bunsen valve to allow gas outflow. The gas losses decreased quadratically with the addition of cassava scrapings, whereas effluent losses decreased linearly. Dry matter recovery increased quadratically with the addition of cassava scrapings. Dry matter (DM) concentration increased but crude protein (CP), neutral detergent fiber (NDF), acid detergent fiber (ADF) and hemicellulose (HEM) decreased linearly with the addition of cassava scrapings.The pH value and lactic acid concentration increased quadratically with the addition of cassava scrapings. Contents of N-NH 3 and butyric acid decreased quadratically with the addition of cassava scrapings, whereas acetic acid content decreased linearly. Addition of cassava scrapings reduced gas and effluent losses and improved the fermentation profile of elephant grass silages and the level of 7% already ensures this improvement.Key Words: crude protein, dry matter, effluent, fermentation, gas Avaliação da silagem de capim-elefante com adição de raspa de mandioca RESUMO -Objetivou-se com este experimento avaliar os efeitos da adição de raspa de mandioca na ensilagem sobre as perdas por gases e efluentes, a recuperação da matéria seca, o pH, os teores de N-NH 3 , ácidos orgânicos e ácidos graxos voláteis e a composição bromatológica de silagens de capim-elefante. Utilizou-se um delineamento inteiramente casualizado, com quatro níveis de raspa de mandioca (0, 7, 15 ou 30% da matéria natural), cada um com quatro repetições. O capim foi cortado aos 50 dias de rebrota e ensilado em silos de 15 litros de capacidade, com válvula de bunsen para escape dos gases.A adição de raspa de mandioca ocasionou redução quadrática nas perdas por gases e redução linear nas perdas por efluente.A recuperação de matéria seca aumentou de forma quadrática com a adição de raspa de mandioca. O teor de matéria seca aumentou, enquanto os de proteína bruta, fibra em detergente neutro, fibra em detergente ácido (FDA) e hemicelulose diminuíram linearmente com a adição de raspa de mandioca. O valor de pH e o teor de ácido lático aumentaram de forma quadrática com a adição de raspa de mandioca. Os teores de N-NH 3 e de ácido butírico diminuíram de forma quadrática com a adição de raspa de mandioca, enquanto o teor de ácido acético diminuiu linearmente. RESUMO -As características morfológicas, estruturais e a produção de matéria seca (PMS) do capim-braquiária (Brachiaria decumbens, cv. Basilisk) e do amendoim forrageiro (Arachis pintoi, cv. Amarillo) foram avaliadas em resposta a três níveis de sombreamento artificial (0, 50 e 70%). Utilizou-se o delineamento em blocos casualizados, com três repetições. Foram realizados três e dois cortes, respectivamente, para avaliação do capim-braquiária e do amendoim forrageiro. O amendoim forrageiro apresentou redução significativa na produção de matéria seca com o sombreamento apenas no segundo corte. A produção de matéria seca no capim-braquiária diminuiu linearmente nos dois primeiros cortes.O sombreamento crescente estimulou o aumento da altura média do dossel e do comprimento de pecíolos, colmos e lâminas foliares em todos os cortes das espécies avaliadas. O sombreamento promoveu diminuição linear da densidade populacional de perfilhos no dossel de braquiária em todos os cortes. O peso médio dos perfilhos, no entanto, só foi afetado no terceiro corte, quando aumentou de forma linear de acordo com os níveis de sombreamento. A relação folha:caule da gramínea e da leguminosa não foi afetada pelo sombreamento. A área foliar específica, a área foliar por folíolo e a área foliar por perfilho aumentaram significativamente com o aumento dos níveis de sombreamento. O índice de área foliar (IAF) reduziu de forma linear no segundo corte com o sombreamento do amendoim forrageiro e do capim-braquiária. O amendoim forrageiro e o capim-braquiária são forrageiras com bom potencial para avaliação e uso em sistemas silvipastoris com transmissão luminosa em torno de 50% da radiação fotossinteticamente ativa.Palavras-chave: Arachis pintoi, área foliar, Brachiaria decumbens, perfilhos, relação folha:caule Morphological and structural characteristics and productivity of Brachiaria grass and forage peanut submitted to shading ABSTRACT -The morphological and structural characteristics and dry matter production of signalgrass (Brachiaria decumbens, cv. Basilisk) and forage peanut (Arachis pintoi, cv. Amarillo) were evaluated in response to different shading levels (0, 50 and 70%). A randomized complete block design was used with four replications. Three and two harvests for signalgrass and forage peanut were made, respectively. Forage peanut showed significant reduction in dry matter production with shading, only in the second harvest. Dry matter production of signalgrass decreased linearly in the first and second harvest. In all the harvests evaluated, average sward height, petiole length, and stem and leaf blade length increased significantly with shading. Increasing shade levels promoted linear reduction in the tiller population density of signalgrass, in the three harvests evaluated. On the other hand, mean tiller weight was only affected in the third harvest, showing a linear increment with increasing shade levels. RESUMO -Foram avaliados os efeitos da adição de 10, 20, 30 e 40% de casca de café ao capim-elefante, com base na matéria natural, sobre a composição bromatológica, a digestibilidade in vitro da matéria seca (DIVMS) e a produção e composição do efluente resultante do processo de ensilagem. Utilizaram-se 20 silos cilíndricos de PVC com 0,25 m de diâmetro por 0,75 m de altura, distribuídos em delineamento inteiramente casualizado, com quatro repetições. A casca de café foi eficiente na redução da umidade da silagem, estimandose acréscimo de 0,69% no teor de matéria seca para cada unidade percentual de casca adicionada. Houve redução linear do pH com o aumento dos níveis do aditivo. Verificou-se efeito quadrático da adição de casca de café nos teores de proteína bruta, estimando-se teor máximo de 10,0% com a adição de 26,3% de casca. A adição de casca promoveu reduções nos teores de nitrogênio amoniacal, fibra em detergente neutro e na DIVMS e aumentos lineares dos teores de nitrogênio insolúvel em detergente ácido e lignina. Os teores de fibra em detergente ácido e de celulose não foram influenciados pela adição de casca de café. Observou-se produção de efluente apenas nas silagens com 0 e 10% de casca de café. As concentrações de sólidos totais, P, Na e K do efluente não foram influenciadas pelos dias de coleta. Todavia, registrou-se redução linear da concentração de Mg e aumento da concentração de nitrogênio total. Os valores de demanda biológica de oxigênio e demanda química de oxigênio não foram influenciados pelos dias de coleta. Conclui-se que a adição de 20% de casca garantiu boa preservação da silagem e eliminou a produção de efluente.Palavras-chave: aditivo, demanda biológica de oxigênio, ensilagem, pH Production and Characteristics of Effluent and Bromatological Composition of Elephantgrass with Different Levels of Coffee Hulls AdditionABSTRACT -The experiment was carried out to evaluate the effects of levels (10, 20, 30 and 40%, based on fresh matter) of coffee hulls added to elephantgrass at ensilage on the bromatological composition, in vitro dry matter digestibility (IVDMD) of the resulting silage and the production and composition of the silo effluent. Twenty cylindrical plastic silos measuring 0.25 m diameter x 0.75 m height were used. A complete randomized design was used with four replications. The results demonstrated coffee hulls efficiency on decreasing silage moisture, resulting in increase of DM content of 0.69% / unity of added additive. pH values decreased as levels of coffee hulls increased. The addition of coffee hulls favored the crude protein contents, which showed a quadratic effect, estimating maximum of 10.0% at 26.3% of coffee hulls addition. The addition of coffee hulls reduced ammoniacal nitrogen, insoluble neutral detergent fiber and IVDMD, and increased acid detergent insoluble nitrogen and lignin contents. This study evaluated two potassium sorbate (PS) and sodium benzoate (SB) application rates in improving the aerobic stability of maize silage. Treatments included no additive, the addition of PS at 1 and 2 g kg−1 fresh matter (FM) and the addition of SB at 1 and 2 g kg−1 FM. Four replicates of each treatment were ensiled in 15‐L plastic jars. The silages were analysed for their fermentative characteristics and were subjected to an aerobic stability test with pH and yeast and mould count measurements. Considering fermentation quality and aerobic stability, both additives were effective. The PS was more active against yeasts during aerobic exposure. When the additives were applied at 2 g kg−1, the silages were more stable (256 h, on average) than those with 1 g kg−1 (119 h, on average) and control (61 h). Aerobic deterioration was more pronounced in the controls than in the treated silages. Silages treated at 2 g kg−1 had consistent effects on pH values and yeast counts over 288 h of aerobiosis. Overall, PS and SB applied at 2 g kg−1 were more effective in improving aerobic stability.
