IntroduçãoO mercado, potencialmente promissor para carne ovina no Brasil, aliado ao novo perfil dos consumidores, mais perceptíveis à qualidade, tem induzido o aprimoramento técnico e organizacional na atual cadeia produtiva. O desenvolvimento de técnicas adequadas de manejo nutricional para cordeiros em terminação que conduzam a modificações desejáveis no conteúdo dos ácidos graxos da carne tem promovido, em alguns casos, a depreciação nos atributos sensoriais da carne, a exemplo do aroma e sabor (Vasta & Priolo, 2006). Neste contexto, a utilização de níveis adequados de volumoso na dieta de cordeiros em terminação, pode promover modificações desejáveis no perfil dos ácidos graxos da carne (Gallo et al., 2007) e alterações na qualidade sensorial da carne. Essas informações permitirão viabilizar a diferenciação dos produtos e desenvolver estratégias específicas para cada R. Bras.
-The objective of this study was to evaluate performance, carcass dressing and gross profit margin of lambs of different genotypes finished in feedlot with diets containing two levels of energy (2.40 Mcal/kg dry matter -DM or 2.90 Mcal/kg DM). Fifty-four non-castrated lambs of the following genotypes were used: Santa Inês, F1 Dorper × Santa Inês and F1 Santa Inês × undefined breed at approximately 150 d of age averaging 22.6 kg of live body weight. Lambs subjected to the diet containing 2.90 Mcal/kg DM stayed in feedlot for a shorter period of time. Moreover, they showed lower intake of dry matter and water in addition to greater daily weight gain and corporal score. There was interaction of feed conversion, carcass dressing yield and gross profit margin. The Dorper × Santa Inês lambs showed similar feed conversion in the two diets.However, Santa Inês lambs and Santa Inês × undefined breed lambs showed better feed conversion with the diet containing 2.90 Mcal/kg DM. The carcass dressings of the Santa Inês × undefined breed lambs were similar for both diets. Furthermore, the carcass dressing values were higher for the Santa Inês and Dorper × Santa Inês which received the diet with higher energy density. The gross profit margin is higher for Dorper × Santa Inês lambs in relation to genotype Santa Inês × undefined breed lambs when subjected to the diet with 2.40 Mcal/kg DM.
Com este trabalho se objetivou avaliar o efeito de diferentes níveis de volumoso (v) e concentrado (c) na dieta de caprinos Saanen sobre a qualidade da carcaça. Utilizaram-se 32 animais, 15 machos inteiros e 17 fêmeas, com peso médio inicial de 16 kg. Os tratamentos consistiram de três relações volumoso:concentrado: 20:80, 35:65 e 50:50 e, sempre que algum cabrito de determinado tratamento atingia 23 kg de peso vivo, todos os machos do respectivo tratamento eram abatidos. Embora o ganho de peso diário dos animais não tenha sido influenciado pelos tratamentos, foi notória a tendência de maiores ganhos no tratamento com maior nível de concentrado, o que proporcionou um período menor de recria e, conseqüentemente, menor idade para o abate. Os rendimentos de carcaça fria foram, em média, inferiores a 44%. A elevação nos níveis de concentrado proporcionou a obtenção de carcaças com maior rendimento e carnes mais macias. Considerando-se a redução nos custos com alimentação, dietas com 50% de volumoso e 50% de concentrado podem ser recomendadas para a produção de caprinos Saanen com peso vivo estabelecido para o abate de aproximadamente 22 kg.Palavras-chave: alimentação, consumo, cor da carne, rendimento de carcaça Quality of the Saanen goat carcass fed with different levels of roughage and concentrate
-The objective of this study was to evaluate the chemical composition and fatty acid profile of meat from Santa Inês, Dorper × Santa Inês, and undefined-breed lambs finished in a feedlot system according to two forage:concentrate ratios (50:50 and 20:80) in the diet. Overall, 54 non-castrated animals were used (with an average initial weight of 23±1.5 kg at 150 days old) and were slaughtered when they reached 36 kg of live weight or 63 days of confinement. Diets with high concentrate levels favored meat production with higher protein content. Among the saturated fatty acids, only heptadecanoic (C17:0) and arachidic acids (C20:0) differed among the treatments. The amount of oleic acid detected in the meat ranged from 49.2 to 51.9 g/100 g, making this one the most representative fatty acids. Regardless of the diet and genotype, the unsaturated fatty acid and desirable fatty acid levels in the lamb meat characterize it as of satisfactory quality for the consumer market.
Feno de flor de seda (Calotropis procera SW) em dietas de cordeiros Santa Inês: Biometria e rendimento dos componentes não-constituintes da carcaça 1 R E S U M ODeterminaram-se medidas biométricas e o rendimento dos componentes não-constituintes da carcaça de cordeiros Santa Inês, submetidos a inclusão de feno de Flor de Seda (Calotropis procera SW) (FFS) na dieta, em substituição ao feno de Sorgo Forrageiro (Sorghum bicolor L) (FSF) utilizando-se 24 cordeiros distribuídos em quatro tratamentos, constituídos de diferentes relações FSF:FFS (100:0, 66:33, 33:66, 0:100). Os animais, inicialmente com peso de 15,7 ± 1,9 kg, foram abatidos com 30,0 ± 0,4 kg ou 70 dias de experimento. Houve redução no perímetro torácico, largura do peito e condição corporal nas medidas biométricas e no perímetro torácico, profundidade do tórax, perímetro da perna nas medidas da carcaça, com o aumento do nível de FFS. A inclusão do FFS na dieta diminuiu as proporções dos rins, fígado, gordura omental e total e aumentou a proporção cabeça/língua, em relação ao peso de corpo vazio. Conclui-se que o FFS pode ser utilizado na dieta de cordeiros Santa Inês em até 33% da fração volumosa, sem prejuízo ao desenvolvimento corporal dos animais. Six replications of the four FFS-level treatments (100 FSF and 0% FFS, 66 and 33%, 33 and 66% and 0 and 100%) were randomly assigned to 24 male lambs. Slaughtering occurred when the animals reached 30.0 ± 0.4 kg of body weight. The increase in FFS levels decreased the thoracic perimeter, chest width and corporal condition in the living lambs, while in the carcass it affected negatively the thoracic perimeter, thorax depth, and leg perimeters. Flour of 'Seda' hay affected kidneys, liver and head/tongue proportions in relation to weight of empty body. Also, it decreased the proportion of omental and total fat. Flour of 'Seda' hay showed no negative effect on corporal when it participates up to 35% of the roughage fodder.
RESUMO -Objetivou-se com este trabalho avaliar o efeito do nível de concentrado na dieta sobre a qualidade da carne de caprinos machos Saanen não-castrados. Foram utilizados 15 cabritos com peso vivo inicial de 16 ± 0,3 kg e 4 meses de idade alimentados com dietas formuladas com 80, 65 ou 50% de concentrado até que atingissem 22 kg de peso vivo médio final. As rações foram formuladas para promover ganho de peso de 150 g/animal/dia. Nas 15 paletas caprinas, foram avaliados a composição centesimal, a cor, a textura, o pH, o perfil lipídico e o perfil de componentes voláteis.Os níveis de concentrado e volumoso utilizados na alimentação dos caprinos Saanen não influenciaram os parâmetros químicos e físico-químicos de umidade, cinzas, proteínas, colesterol, fosfolipídios, pH, Aw, a*, b*, L* da carne. No entanto, a concentração de gordura, os percentuais de ácidos graxos insaturados (mono e poli) e a textura da carne diferiram significativamente entre os níveis de concentrado usados. Tanto na análise qualitativa quanto na quantitativa de componentes voláteis, o extrato da carne de caprinos alimentados com 50% de concentrado apresentou melhor qualidade aromática. A relação 50:50 volumoso:concentrado foi a mais viável para a alimentação de caprinos machos Saanen para abate aos 22 kg de peso vivo, considerando os aspectos de redução de custo e qualidade química e aromática da carne caprina produzida.Palavras-chave: composição centesimal, componentes lipídicos, alimentação, carne caprina, voláteis Aroma profile and chemical quality of goat Saanen meat fed with different levels of concentrate ABSTRACT -The objective of this work was to evaluate the effect of the levels concentrate of the diet on meat quality of no castrated male kid Saanen goats. Fifteen male goat with initial 16 ± 0.3 kg BW and four months old were fed diets formulated with 80, 65 e 50 of concentrate up to the animals reached a final a 22 kg BW. The rations were formulated to promote a weight gain of 150g/anim.day. Centesimal composition, colour, texture, lipid and volatile components profile were evaluated in fifteen goat shoulders. The concentrate and forage levels used in the feeding of male kid Saanen goats did not influenced the chemical and physical-chemical parameters of humidity, ashes, proteins, cholesterol, phospholipids, pH, Aw, a*, b*, L* of goat meat. However, the concentration of fat, the percentages of unsaturated fatty acid (mono and poly) and the texture of meat were affected by the used concentrate levels. In both qualitative and quantitative of volatile components analysis, the extract of the goat meat fed with 50% of concentrate showed better aromatic quality. RESUMO -Foram avaliados as características de carcaça e os rendimentos dos cortes comerciais e realizada avaliação tecidual de 20 cordeiros Morada Nova alimentados com dietas contendo fruto-refugo de melão em substituição a 0, 30, 60 ou 100% do milho moído. Os animais, com peso médio inicial de 15 kg e 6 meses de idade, foram mantidos confinados em baias individuais e abatidos com peso médio de 26 kg. Utilizou-se um delineamento experimental inteiramente casualizado, com quatro tratamentos (níveis de substituição do milho por fruto-refugo de melão) e cinco repetições. Não foram observadas diferenças significativas no peso de corpo vazio, no peso de carcaça quente e fria, nos rendimentos de carcaça quente e fria nem no rendimento biológico. Também não foi verificado efeito significativo da inclusão de frutorefugo de melão nas dietas sobre os rendimentos dos cortes comerciais (pescoço, costela, paleta, lombo e a perna) e as concentrações de músculo, osso e gordura. A substituição do milho moído por fruto-refugo do melão nas dietas não prejudica as características quantitativas de carcaça de cordeiros Morada Nova e consiste numa boa alternativa na alimentação de ovinos de corte em terminação.Palavras-chave: abate, carne, composição tecidual, gordura, músculo Carcass traits of Morada Nova lambs fed different levels of melon fruitrefuse in substitution of ground corn in the dietABSTRACT -This experiment evaluated carcass traits and yields of comercial cuts and tissue evaluation of 20 Morada Nova lambs fed diets with fruit-refuse of melon replacing 0, 30, 60 or 100% of ground corn. The animals with 15 kg of initial body weight and at 6 six months of age were kept confined in individual pens and slaughtered with 26 kg of weight.It was used a completely randomized experimental design, with four treatments (levels of ground corn replaced by melon fruit-refuse) and five replicates. It was not observed any significant differences for empty body weight, hot and cold carcass weight, yields of hot and cold carcass, and biological yield. Neither it was noted significant effect of inclusion of melon fruit-refuse in the diets on yields of commercial cuts (neck, rib, palette, loin and leg) and concentrations of muscle, bone and fat. Substitution of ground corn by melon fruit-refuse in diets does not harm quantitative traits of carcass of Morada Nova lambs and it is a good alternative for finishing meat sheep feeding.
