RESUMENEl asoleado de Cauquenes y Concepción representa un caso de singular interés entre los vinos típicos de América Latina. En el siglo XIX era el mejor vino de Chile según las preferencias de los mercados. En la centuria posterior fue reconocido por el Estado en 1953 como el primer vino con Denominación de Origen del país, junto al pajarete y el vino licoroso del Elqui. Con estos antecedentes, el asoleado presentaba grandes perspectivas de desarrollo en los mercados nacionales e internacionales. Sin embargo, estas expectativas se vieron frustradas y el producto, en la actualidad, es irrelevante en la industria vitivinícola de Chile. El artículo examina el ciclo de auge del producto por medio de la prensa de la época (1850-1880), y aporta algunas explicaciones de su posterior declinación.Palabras clave: asoleado, denominaciones de origen, vinos típicos, viticultura de Chile, industria vitivinícola. ABSTRACT The "asoleado" (sunny) of Cauquenes and Concepcion represents a case of particular interest among the typical wines of Latinamerica. In the nineteenth century it was the best wine in Chile according to market preferences. In the following century, was recognized by the State in 1953 as the first wine with Appellation of Origin in the country, next to pajarete and sweet wine Elqui.With this background, sunny had high development prospects in domestic and international markets. However, these expectations were frustrated and product, at present, has no relevance in the Chilean wine industry. This article examines the boom cycle of the product through the press of the time , and provides some reasons for his subsequent decline.
RESUMENEste artículo examina el surgimiento, consolidación y decadencia del chacolí, vino típico chileno elaborado en el siglo XIX y parte del XX. Heredero de la tradición española colonial, el chacolí chileno se elaboraba a partir de Uva País, Moscatel de Alejandría y variedades criollas, sobre todo Torontel. En el último tercio del siglo XIX llegó a representar el 28% de la producción chilena de vinos. Con posterioridad comenzó a decaer, muy criticado por los tecnócratas europeos y sus seguidores chilenos, que negaron todo valor enológico a las variedades utilizadas y los métodos artesanales. De todos modos, el chacolí se ha mantenido latente en pequeños segmentos de consumidores, sobre todo de segmentos populares y campesinos; además, desde 1975 se reivindica en la Fiesta del Chacolí, celebrada anualmente en Doñihue, en el corazón profundo de la huasa provincia de Colchagua.Palabras clave: Chacolí chileno, vinos típicos, vitivinicultura chilena. El artículo examina la historia del pajarete, vino escogido de los desiertos del norte de Chile, desde los primeros registros (1790) hasta su reconocimiento como Denominación de Origen y su proyección posterior. El trabajo se fundamenta en documentos como libros de Aduana, la prensa gráfica, los relatos campesinos y los registros de marcas del Instituto Nacional de Propiedad Industrial (INAPI). Se demuestra que el pajarete ha existido durante 225 años en Chile; se ha mantenido como un vino escogido, elaborado, comercializado y consumido en pequeñas cantidades.Palabras clave: pajarete, vinos escogidos, productos típicos, denominaciones de origen, industria vitivinícola.
Resumen El estudio examina el desarrollo de la producción, transporte y distribución de cobres labrados y alambiques para elaborar aguardiente en Chile y el oeste de la actual Argentina, desde el primer alambique registrado (1586) hasta mediados del siglo XIX. Se detecta que el principal polo de manufactura de estos artefactos se encontraba en el Norte Chico de Chile, entre Huasco y La Serena. Desde allí, el uso de los alambiques se difundió por un amplio espacio. La ruta del alambique y el cobre labrado se extendió por 5.000 kilómetros, llegando a Guayaquil, Trujillo, Callao, Cinti, Jujuy y Salta por el norte; y a Valdivia y Chiloé por el sur, a ambos lados de la cordillera de los Andes. Floreció así un intenso proceso de integración socioeconómica regional, a la vez que se fortaleció el desarrollo agroindustrial con la posibilidad de destilar aguardientes. De esta manera se sentaron las bases para el surgimiento de varios productos típicos. Palabras clave: cobre labrado; alambique; aguardiente; rutas comerciales trasandinas; productos típicos.
