Considering the importance of mathematical models in the development and analysis of grain drying systems, and understanding the need to develop interfaces that will improve the accessibility of these models, this work aimed to: a) implement the Thompson model to simulate grain drying at high temperatures; b) develop an appropriate language to generate drying models; and c) develop a graphical interface with the goal of facilitating user understanding. Thus the computational program LINSEC that was created using the programming language Visual Basic 6.0. LINSEC was highly effective for the modeling and simulation of drying systems and in providing simulated values close to reality. LINSEC is highly flexible and user-friendly during the modeling of several types of dryers.
Sendo um produto versátil, o amido é muito utilizado no setor industrial para diversos fins, sobretudo, na indústria de alimentos. O amido pode ser extraído de cereais, raízes e tubérculos como o inhame. Objetivou-se, com o presente trabalho, avaliar a higroscopicidade do amido nativo obtido a partir de tubérculos de inhame (Dioscorea alata L.). O amido foi extraído por meio de trituração de tubérculos de inhame com solução de NaOH 0,03N e seco pelo processo de liofilização. Foram determinadas pelo método dinâmico as isotermas de equilíbrio higroscópico do amido a 25, 30, 35, 40 e 45°C. Aos dados experimentais foram ajustados alguns modelos matemáticos, dentre os quais o que melhor prediz as isotermas de equilíbrio higroscópico do amido de inhame é o modelo de Chung-Pfost. Concluiu-se ainda que, para a faixa de temperatura de 25 a 45°C, o amido de inhame deve ser manipulado e/ou armazenado em ambientes com umidades relativas maiores que 40%, para que sejam evitadas deteriorações químicas, enzimáticas e microbiológicas do produto.
