The use of food preservation techniques, such as the removal of heat, can favor the stages of transport and storage of the Tahiti lemon, which is one of the citrus fruits with greater commercialization in international markets, as it promotes the reduction of biochemical and microbiological changes. that can occur during these stages. Within this context, this work aimed to evaluate the freezing kinetics of Tahiti lemon (Citrus aurantifolia var. Tahiti), when submitted to different process temperatures. The samples were then kept at temperatures of-18 ° C and-60 ° C until the thermal balance between the whole fruit and the freezing medium was reached. Based on the data collected, the behavior shown by the freezing curves of the Tahiti lemon was of a slow-type freezing process at both temperatures studied, despite the higher temperature gradient in the process conducted at-60 ° C and, consequently, shorter freezing time than-18 ° C.
scite is a Brooklyn-based organization that helps researchers better discover and understand research articles through Smart Citations–citations that display the context of the citation and describe whether the article provides supporting or contrasting evidence. scite is used by students and researchers from around the world and is funded in part by the National Science Foundation and the National Institute on Drug Abuse of the National Institutes of Health.
