RESUMO -O objetivo deste trabalho foi analisar a pele de três espécies de peixes (piavuçu Leporinus macrocephalus, pacu prata Mylossoma sp e piraputanga Brycon hilarii) através de análise histologica e morfometrica e testes de resistência após o curtimento. Amostras de peles da região dorsal foram coletadas, fixadas em Bouin por 24 horas, incluídas em parafina, cortadas em 5 µm de espessura e coradas por Hematoxilina-eosina. Os cortes foram analisados pela microscopia de luz. Foi utilizado o dinamômetro EMIC para a análise físico-mecânica do couro em 10 amostras no sentido longitudinal a partir da região dorsal do peixe de cada espécie. A derme desses peixes possui um padrão estrutural comum aos teleósteos, porém a disposição e distribuição das fibras colágenas apresentaram-se diferentes entre as espécies analisadas. Através da análise morfométrica constatou-se que a espessura da derme da pele diferiu entre as três espécies. Não houve diferença no teste de resistência à tração no couro da piraputanga (16,88 N/mm 2 ) e piavuçu (18,50 N/mm 2 ). Os resultados para os couros destas duas espécies de peixes foram superiores ao pacu (11,83 N/mm 2 ). O valor de alongamento até a ruptura foi superior para piavuçu (52,83%) e piraputanga (60,45%), não diferindo entre eles, porém foi inferior para o pacu (33,83%). O rasgamento progressivo foi maior no couro de pacu (36,51 N/mm). As peles das três espécies analisadas podem ser transformadas em couro para sua aplicação em diversos artefatos.Palavras-chave: derme, resistência, fibras colágenas, histologia, morfometria, testes físico-mecânicos Analysis of the Skin of Three Fish Species: Histology, Morphometry and Resistance TestsABSTRACT -This study was carried out to analyse the skin of three species of fish (piavuçu Leporinus macrocephalus, pacu prata Mylossoma sp e piraputanga Brycon hilarii) through histological and morphometrical analysis and resistance tests after hardening. Skin samples from the dorsal region were taken and fixed in Bouin solution for 24 hours. They were embedded in paraffin, cut 5 µm thick and stained by Hematoxylin-eosin technique. The cuts were analyzed by light microscopy. A EMIC dynamometer was used for the physical mechanical analysis of the skin in 10 samples, longitudinally oriented from the dorsal region of each specie of fish. The dermis of those fishes has a structural pattern common to teleosts, but the setting and distribution of collagen fibers was different among the analyzed species. The skin dermis thickness differed among the three species by the morphometrical analysis. No difference was observed for the resistance test to traction in piraputanga leather (16.88 N/mm 2 ) as well as in piavuçu leather (18.50 N/mm 2 ). The results for the skin of both fish species were higher than those for pacu (11.83 N/mm 2 ). The value of stretching as to the point of rupture was higher for piavuçu (52.83%) and piraputanga (60.45%), showing no difference among them, but it was lower for pacu (33.83%). Este trabalho teve como objetivo analisar a resistência do couro da pele de ovinos ½ Poll Dorset ½ Santa Inês. Foram utilizadas 20 peles distribuídas em delineamento inteiramente casualizado, em fatorial 2x2x2, constituído de duas técnicas de curtimento (Trat1=com sais de cromo. Trat2= sem sais de cromo), duas regiões de couro (R1=dorsal; R2=ventral) e dois sentidos de couro (S1= longitudinal; S2= transversal). Nos couros curtidos sem cromo a resistência à tração (9,48 KgF) foi menor (p<0,05) quando comparado aos couros curtidos com cromo (13,38 KgF). A região ventral (6,13 KgF) apresentou maior resistência ao rasgamento progressivo (p<0,05) em relação à dorsal (4,75 KgF) quando curtido com sais de cromo. Para a mesma variável, os couros curtidos ao cromo apresentaram médias superiores (p<0,05) em ambas as regiões (R1=4,75 KgF, R2= 6,13 KgF) quando comparados aos sem cromo (R1= 3,46 KgF; R2= 3,64 KgF). Os couros, independente da técnica, apresentaram maior alongamento no sentido transversal. Com sais de cromo proporciona maior resistência ao rasgamento na região ventral comparada à dorsal. Todavia, o uso de taninos vegetais possibilitou a obtenção de couros com resistência dentro do padrão exigido para vestuário. Sendo uma alternativa a mais de curtimento proporcionando menor impacto ambiental.
O objetivo deste estudo foi desenvolver e caracterizar farinhas a partir de carcaças de tilápia, pacu e carpa para inclusão em produtos alimentícios, visando o enriquecimento nutricional. Carcaças das três espécies foram defumadas a quente e posteriormente submetidas a moagem, resultando nas farinhas. Foram realizadas análises dos rendimentos do processo, composição centesimal, cálcio, ferro, fósforo, ácidos graxos e análises microbiológicas. Os rendimentos das carcaças in natura, defumadas e do processo de defumação foram superiores para a tilápia. As carcaças in natura de tilápia e carpa apresentaram valores superiores de umidade e proteína bruta em relação à carcaça de pacu. A farinha elaborada a partir das carcaças de carpa apresentou maior teor de proteína bruta (36,15%). A farinha de pacu apresentou teor de lipídios significativamente maior (26,33%) em relação às de tilápia e carpa. Foram identificados 23 ácidos graxos nas farinhas elaboradas. Os que tiveram maior representatividade foram o 18:1n-9 (oléico), 16:0 (palmítico), 18:2n-6 (linoléico), 18:0 (esteárico) e 16:1n-7 (palmitoleico). As farinhas apresentaram-se como produtos de elevado teor de proteína bruta, minerais (cálcio, ferro e fósforo) e lipídios totais, além de possuírem em suas composições, ácidos graxos essenciais à dieta humana. A análise microbiológica das farinhas demonstrou resultados dentro dos limites estabelecidos pela legislação brasileira. Portanto, as farinhas de peixe obtidas no presente estudo podem ser utilizadas no enriquecimento de diversos produtos para o consumo humano.
O objetivo do estudo foi avaliar os couros de corvina e pescada amarela e de tilápia. As peles foram submetidas ao processo de curtimento com tanino vegetal e foram avaliadas pelos testes de resistência à tração e alongamento, rasgamento progressivo nos corpos de prova dos couros, além da análise morfológica e físico-química, visando averiguar a eficiência do processo e observar o comportamento da estrutura das fibras colágenas após o tratamento. Dentre as amostras, o couro de tilápia apresentou menor resistência mecânica, isto em função da arquitetura histológica, pois apresenta maior percentual de fibras finas em relação às espessas. O couro de pescada amarela apresentou mais resistência à tração (21,64 N/mm² na transversal), maior elasticidade no sentido transversal (105,60%) e maior resistência ao rasgamento no sentido transversal (98,1 N/mm) e, o couro de corvina necessitou de menor força no sentido transversal (59,83 N) comparado ao longitudinal (86,50 N) mesmo apresentando menor espessura. Constatou-se, para as amostras de couros das espécies estudadas uma baixa quantidade de óleo no engraxe observado pela análise de substâncias extraíveis em diclorometano, apesar de não ter interferido na resistência desses materiais analisados. Os resultados mostraram-se satisfatórios para os couros das três espécies de peixe, podendo ser aplicados para confecção de vestuário.
Analisou-se rendimento, composição química, benzo(a)pireno, microbiologia e sensorial e bandas de pacu (Piaractus mesopotamicus) defumado a quente com e sem pele. Foram utilizados 20 exemplares de pacu com peso médio de 2.754 kg e médio de cada banda 796,2 gramas. As bandas foram: lavadas, imersas em salmoura, drenadas e depois submetidas à defumação a quente. Não houve diferença significativa no peso defumado e nas perdas no processamento, mostrando que as amostras eram homogêneas. As bandas com pele (48,39%) apresentaram um maior rendimento de defumação, comparada as sem peles (44,91%), enquanto as perdas foram de 13,79% e 21,78%, respectivamente para as bandas com e sem pele. Houve redução do teor de umidade e consequentemente ocorreu a concentração dos demais nutrientes. A Proteína foi de 18,69% para 26,34% e 26,98% e cinzas de 1,01% para 1,67% e 1,62%, respectivamente para bandas de pacu com e sem pele, mostrando que só houve efeito da defumação. Enquanto, para lipídeos (15,52% para 25,61% e 24,83%) e umidade (65,15% para 44,36% e 40,95%), além do efeito da defumação, a presença ou não da pele interferiu significativamente nesses nutrientes. Houve diferença significativa apenas para sabor, sendo as bandas sem pele consideradas mais saborosas. As bandas apresentaram baixos teores de benzo(a)pireno e houve redução dos coliformes a 35℃ de 2,3x101 NMP/g para <3 NMP/g, sendo recomendadas as bandas de pacu sem pele, apesar do menor rendimento no processo de defumação.
