Currently there are many known enzyme preparations, which to varying level of efficiency split non-starchy polysaccharides in mixed feeds. The research aims to study the consumer qualities of broiler meat and its dishes when included enzyme preparations Celloviridin G20x and Amilosubtilin G3x into diets based on wheat grain (40% by feed weight), barley (20%) and soybean meal (15%). The results obtained in the course of research were processed by mathematical analysis software package "Microsoft Excel". The best effect on the poultry slaughter qualities had joint supplements of multienzyme compositions Amilosubtilin G3x at a dose of 300 g/t feed and Celloviridin G20х at a dose of 150 g/t feed, which resulted in the superiority of chickens from the third test group over the control counterparts in weight of semi-eviscerated carcass by 14.5%, evisceratedby 15.1%, slaughter yield-0.66%. Chickens, which were fed the mixture of preparations, surpassed their control counterparts in indicators characterizing the ratio of edible parts to inedible by 32.03%. Use of enzyme preparations intensified protein metabolism in the poultry body, which contributed to improve the chemical composition and increase the biological value of meat protein. Due to this, in the femoral muscles the synthesis of dry matter and protein was more active, which in this muscle of broilers from the third test group resulted compared to the control in an increase of dry matter concentration by 2.674%, proteinby 2.587%. When studying the effect of heat treating chicken carcasses in the compared groups on the organoleptic characteristics, four samples of grilled chicken were cooked. The dish sample, the formulation of which included broiler carcasses of the third test group got top point total and surpassed the control counterparts in organoleptic qualities by 0.37 points. This superiority is provided, first of all, due to such parameters as flavor and tenderness.
Metallurgical enterprises are the main source of environmental pollution with heavy metals. Toxicants pose a serious threat to the consumer's health, so scientific research on diminishing their adverse effect on sanitaryhygienic properties of poultry meat is of high importance when organizing effective environmental management and ensuring food security. The purpose of the study is to devise a method for reducing a negative impact of heavy metals on productivity and sanitary-hygienic properties of meat by admixing adsorbents to a formulation of animal feeds. To analyse the concentration of heavy metals, the atomic adsorption method was applied. Experimental data were statistically processed using SNEDECOR application package. In the industrial territory of RNO-Alania, the prudent use of the adsorbents such as citrus pectin in the amount of 200 g/ton and Toxiban Max in the amount of 1000 g/ton admixed to barley-corn-soybean based feeds of local production allows achieving the maximum effect. Due to the synergistic effect of the tested drugs, there was an increase in the number of red blood cells, haemoglobin and bactericidal and lysozyme activities in the blood of the experimental birds; at the same time, the concentration of zinc lowered 1.98 times, lead-2.71 times and cadmium-2.03 times. The broiler chickens of the 4-experimental group were different from the 1-control analogues in weight parameters, slaughter yield and protein qualitative index which increased by 12.9%, 0.74% and 17.8% respectively. Zinc concentration in the examined muscle samples was 3.48 times lower than in the 1-control group, lead concentration-3.11 times and cadmium concentration-3.54 times.

Currently, the requirements for the quality of food products, including beef and its processed products, are increasing. It is especially important to reduce various types of toxicants in regions with technogenic tension. The territory of North Ossetia -Alania is one of the most polluted regions of Russia with heavy metals due to the high concentration of industrial enterprises of non -ferrous metallurgy in the city of Vladikavkaz. The aim of the research was to study the effectiveness of the use of Chelaton and Toxi-nil Dry in the diets of fattened bulls to increase economic and biological indicators in the detoxification of heavy metals. Forty bulls of Simmental breed were selected at the age of 6 months, of which 4 groups were formed according to the analogue principle, 10 heads each. In the course of the studies for the detoxification of heavy metals in the composition of the diets of fattening bulls, Toxi-nil Dry and Chelaton adsorbents were used. It was found that the greatest productive and biological effect was ensured by joint addition of these preparations with sorption properties. Thus, when feeding a mixture of Toxi-nil Dry and Chelaton preparations, in animals of the 3rd experimental group, we could observe a significant increase in the average daily gain in live weight and a decrease in the consumption of energy and digestible protein per unit of the production. When the test preparations were co-fed, in bulls of the 3rd experimental group, the processes of rumen metabolism were optimized with the activation of proteinases, cellulases and amylases in the contents of the prestomach, which was accompanied by an increase in the digestibility ratios of crude protein, fiber and NFE. In the rumen fluid of animals of this group there was an increase in the number of ciliates, the amount of volatile fatty acids (VFA) and propionic acid. When feeding Toxi-nil Dry and Chelaton preparations, in animals of the 3rd experimental group against control analogues, blood was enriched with red blood cells, hemoglobin, total protein, glucose, calcium and phosphorus. At the same time, the joint use of the tested preparations allowed the concentration of zinc, cadmium and lead in the blood of bulls of the 3rd experimental group to be significantly reduced (P<0.05) against the control.
The research aims to study broilers meat productivity and enzymatic activity of enzymes in the gastrointestinal tract when preparations mold inhibitor Myсo Сurb at a dose of 1 kg/t feed + adsorbent ALNI-SORB at a dose of 2 kg /t feed are introduced into diets with a tolerant level of aflatoxin B 1 . The object of research was broilers of cross «Smena-8», which at day old by the analogue scale were divided into 4 groups of 100 birds each. The period of growing chickens lasted 42 days. As established in the course of the experiment, due to the combined feeding of preparations of a mold inhibitor and an adsorbent in broilers of the Test 3 group relative to poultry of the control group, a statistically significant increase in the activity of enzymes of proteinases, cellulases and amylases in the muscular stomach and duodenum was observed. These data indicate an improvement in digestion processes under the influence of these drugs due to better detoxification of aflatoxins. The best influence on the slaughter performance and consumer properties of poultry meat from Test group 3 was provided by joint additives of tested preparations, which manifested itself against the control in a significant (P> 0.95). ) an increase in the carcass weight of a half-carcass by 14.7% and gutted -by 13.7%, a slaughter yield by 1.6%, as well as an increase in the mass fraction of dry matter, proteins and an indicator of the biological value of meat in the samples of the pectoral and femoral muscles.
