Heavy metals, which significantly contaminate territory of the Republic of North Ossetia -Alania, Russian Federation, inhibit the effect of many enzymes, their physiological function and metabolism. The research was aimed to study the effectiveness of using preparations enterosorbents Chelaton and Aerosil in lactating cows' diets to enhance ecological and nutritional properties of milk and cheese. Lactating cows in the control group were fed the basic diet (BD). Cows in the 1 st test group were fed BD supplemented with the adsorbent Chelaton at a dose of 2% by weight of the diet dry matter; in the 2 nd test groupadsorbent Aerosil at a dose of 40 mg/kg body weight. All experimental parameters were processed by mathematical analysis using software "Microsoft Excel". The analysis of the diets composition showed that the zinc content exceeded the maximum permissible concentration (MPC) by a factor of 2.5-3.6, lead -3.0-4.5 and cadmium -1.9-2.5. Aerosil additives contributed to the increase in cows' milk of the 2 nd test group the fat content by 0.22%, proteinby 0.23%, dry matterby 0.52%, as well as vitamin value of milk, because vitamin C content increased by 33.5% and vitamin A -90%. The positive effect of this preparation was on the milk density as well. It should be noted that the fact of reducing in animals' milk of the 2 nd test group compared to the control zinc concentration by 58.1%; cadmiumby 5.06%, and leadby 54.2%. Suitability of milk of all cow groups for cheese making conformed to the 2 nd type. Milk of animals in the control group was curded for 27.6 min and the least time of curdling was in the 2 nd test group -22.5 min. Samples of cheese from the cows' milk of the 2 nd test group relative to the control were valued 4.7 points higher.
The inheritance of allelic variants of the kappa-casein gene from bulls with different genotypes and their influence on the milk production of daughters were studied. For research, PCR diagnostics of daughters in the herds of black-and-white cattle at the farms “Azeleevo” and “Vakhitovo” (OJSC “Red East Agro”) was carried out, the fathers were two bulls LADDIE 135797213 with a genotypes CSN3 AB and LOMAX 10785322 with a genotype CSN3 BB. Based on the results of genotyping, the frequency of occurrence of genotypes AA, AB, BB kappa-casein and allelic variants A and B in daughters was calculated. The bull with the CSN3 AB genotype produced the largest number of offspring with the CSN3 AA genotype 50.0-51.8 %, and the bull with the homozygous BB genotype produced 24–25 % of daughters carrying the BB variant and 75 -76 % of the AB genotype. The frequency of occurrence of the Kappa-casein allele in the daughters of bulls with the genotype CSN3 BB was 0.63, which is almost 2 times more than the allele A. When comparing heifers with the same genotype (CSN3 AB), it was found that at the Azeleevo farm, the daughters of the bulls having the genotype BB of kappa-casein are superior to cows born from bulls with the genotype AB by the milk yield (+36 kg), mass fraction of fat and protein (+0.01 %), the amount of milk fat (+2 kg) and protein (+2 kg). In the group of first-calf heifers with the BB genotype, daughters of the producer with the BB genotype are superior by the milk yield (+ 175 kg), the mass fraction of fat in milk (+0.1 %), the amount of milk fat (+12 kg), the mass fraction of protein in milk (+0.09 %), the amount of milk protein (+11 kg). At the Vakhitovo farm, similar results in the group of CSN3 AB heifers born from the bulls with the BB genotype was observed
The prohibition of antibiotic drugs in animal husbandry to stimulate animal productivity has provoked an active study of alternative substances, including plant extracts. No less interesting for a detailed study of the extracts of plants Eucalyptus viminalis and Scutellaria baicalensis, as information about their effect on ruminant microbiome is extremely scarce. According to the results of phytochemical analysis, 14 small molecules were found in the extract of Scutellaria baicalensis. and 13 in the composition of the extract of the leaves of Eucalyptus viminalis. Analysis of metagenomic sequencing when plant extracts are included in the feed indicates a significant change in the rumen microbiome. The absence of Proteobacteria and Fibrobacteres phyla in the experimental groups, a decrease in the content of Bacteroidetes by 12.0–17.0% and an increase in Firmicutes (p<0.05) and Saccharibacteria (p<0.05) were noted. An increase in the class Clostridia (p<0.05), due to the family Ruminococcaceae (p<0.05) and the genus Ruminococaceace, was found. In the Bacteroidia class in all groups, the family Prevotellaceae, the genus Prevotella, prevailed in most of the groups. Additional inclusion in the diet of plant extracts of Eucalyptus viminalis and Scutellaria baicalensis have a significant impact on the rumen microbiome of the cattle, the taxonomic identification of microorganisms indicates the prevalence of phyloma Firmicutes, Clostridia class and the Ruminococcaceae family, which are responsible for the separation of imperfect migration. Further evaluation of plant matter is needed in the direction of the overall effect on fermentation of feed in the rumen.
