-The objective of this work was to assess and characterize two clones, 169 and 685, of Cabernet Sauvignon grapes and to evaluate the wine produced from these grapes. The experiment was carried out in São Joaquim, SC, Brazil, during the 2009 harvest season. During grape ripening, the evolution of physical-chemical properties, phenolic compounds, organic acids, and anthocyanins was evaluated. During grape harvest, yield components were determined for each clone. Individual and total phenolics, individual and total anthocyanins, and antioxidant activity were evaluated for wine. The clones were also assessed regarding the duration of their phenological cycle. During ripening, the evolution of phenolic compounds and of physical-chemical parameters was similar for both clones; however, during harvest, significant differences were observed regarding yield, number of bunches per plant and berries per bunch, leaf area, and organic acid, polyphenol, and anthocyanin content. The wines produced from these clones showed significant differences regarding chemical composition. The clones showed similar phenological cycle and responses to bioclimatic parameters. Principal component analysis shows that clone 685 is strongly correlated with color characteristics, mainly monomeric anthocyanins, while clone 169 is correlated with individual phenolic compounds.Index terms: Vitis vinifera, phenolic compounds, phenology, ripeness. Caracterização e classificação multivariada de uva e vinho de dois clones de Cabernet SauvignonResumo -O objetivo deste trabalho foi avaliar e caracterizar dois clones, 169 e 685, de uvas Cabernet Sauvignon, e avaliar os vinhos produzidos com estas uvas. O experimento foi realizado em São Joaquim, SC, durante a safra de 2009. No período de maturação, foi avaliada a evolução da composição físico-química, dos compostos fenólicos, dos ácidos orgânicos e das antocianinas. Na colheita das uvas, foram determinados os componentes de produtividade para cada clone. Os vinhos foram analisados quanto aos fenólicos individuais e totais, às antocianinas individuais e totais, e à atividade antioxidante. Os clones também foram avaliados quanto a seus ciclos fenológicos. Durante o período de maturação, a evolução dos compostos fenólicos e dos parâmetros físico-químicos foi similar para os dois clones; no entanto, no período da colheita, foram observadas diferenças significativas em relação à produtividade, ao número de cachos por planta e de bagas por cacho, à área foliar e ao conteúdo de ácidos orgânicos, de polifenóis e de antocianinas. Os vinhos produzidos com estes clones mostraram diferença significativa quanto à composição química. Os clones apresentaram duração do ciclo fenológico e parâmetros bioclimáticos similares. The aim of this study was to monitor the phenological parameters of grapevine () of Syrah variety recently introduced in the region of Marari, Água Doce, Campos Novos and São Joaquim, Santa Catarina State (SC), Brazil, and to characterize the phenolic composition and antioxidant activity of wines produced from this variety of the vintages 2010 and 2011. The adaptation of the grapevine to climate conditions of these grape growing regions of Southern Brazil for this variety has also been assessed. The climate variations occurring between the phenological cycles of grapevine of Syrah for each growing region influenced the phenological extension and heat accumulation of the grapevine. The wines showed significant levels of phenolic compounds and high antioxidant activity, while catechin, a potent antioxidant, was the main phenolic compound quantified in wines. Positive correlations between the phenolic compounds and antioxidant activity were observed. The principal component analysis confirmed the influence of the growing region and vintages on the phenolic composition of wines, indicating the importance of climate conditions. This study identified possible phenolic markers indicative of climatic influence.

The polyphenolic and oenological properties were evaluated in red wines from Italian varieties Ancellotta, Rebo, Nebbiolo, Barbera and Teroldego cultivated in a selected subtropical region. Ancellotta wines showed the highest concentrations of phenolics, particularly flavanols, flavonols and anthocyanins 3-O-glycosides. Grape variety rather than vintage had stronger influence on polyphenols. Wines from vintage 2012 showed the highest antioxidant activity and highest concentrations of polyphenols, mainly Ancellotta and Teroldego wines. The wines showed similar phenolic profile regarding the presence of phenolics, whereas their concentrations varied greatly among varieties and vintages. The results demonstrated good adaptability of these varieties and their potential to produce quality wines.

RESUMO -A fenologia da videira, a produtividade das plantas e a qualidade da uva apresentam forte relação com os fatores ambientais. O objetivo deste trabalho foi comparar as regiões vitícolas de altitude elevada de Santa Catarina com a região de San Michele All'Adige localizada na Itália. Para os estudos, utilizou-se dos dados da Estação Experimental de São Joaquim -EPAGRI (28°16'30,08"S, 49°56'09,34"O, altitude 1.400 m), localizada em São Joaquim e do Istituto Agrario di San Michele All' 46"N, 11°08'04,41"L, altitude 223 m), localizado na Província de Trento. A variedade avaliada foi a Rebo, para a qual foram determinados os principais estádios fenológicos e calculada a exigência térmica através dos graus-dia, temperaturas média, máxima, mínima, amplitude, precipitação, umidade relativa do ar, insolação e radiação solar global. No momento da colheita, foi avaliado o desempenho agronômico da variedade Rebo. Em São Joaquim, o ciclo da variedade Rebo é mais longo, o acúmulo térmico é menor, a precipitação pluviométrica e a radiação solar global acumulada são maiores do que em San Michele All'Adige. As temperaturas mais baixas e a menor insolação durante a floração-mudança de cor das bagas são os principais fatores climáticos relacionados com as menores produtividades das plantas. Em São Joaquim, as baixas temperaturas e as elevadas taxas de radiação solar global na maturação contribuem de maneira positiva na formação dos compostos fenólicos, mas dificultam a degradação dos ácidos da variedade Rebo. The objective of this study was to compare the wine producing regions of the State of Santa Catarina in Brazil and the region of San Michele All'Adige located in Italy. The data used in this study came from São Joaquim Experimental Station -EPAGRI (28°16'30,08"S, 49°56'09,34"W, altitude 1,400 m), located in São Joaquim and from Istituto Agrario di San Michele All'Adige -Fondazione Edmund Mach (46°11'41,46 "N, 11°08'04,41"E, altitude 223m), located in the Province of Trento. The evaluated variety was Rebo, the main phenological stages were recorded and thermal requirement was calculated through the growing degree-days. The climatic parameters evaluated were, maximum, mean and minimum temperature, amplitude, precipitation, relative humidity, sunlight and solar radiation. At harvest was evaluated the agronomic performance. In São Joaquim the cycle of Rebo is longer, the heat summation is lower, the precipitation and accumulated solar radiation are higher than in San Michele All'Adige. Lower temperatures and lower sunlight during flowering-veraison are the main climatic factors related to lower yields.
