Bacterial cultures, enzymes and yeast derived feed additives are often included in commercial dairy rations due to their effects on ruminal fermentation. However, the effects of these additives when fed together are not well understood. The objective of this study was to evaluate the changes in ruminal fermentation when a dairy ration is supplemented with combinations of bacterial probiotics, enzymes and yeast. Our hypotheses were that ruminal fermentation would be altered, indicated through changes in volatile fatty acid profile and nutrient digestibility, with inclusion of: (1) an additive, (2) yeast and (3) increasing additive doses. Treatments were randomly assigned to 8 fermenters in a replicated 4 × 4 Latin square with four 10 d experimental periods, consisting of 7 d for diet adaptation and 3 d for sample collection. Basal diets contained 52:48 forage:concentrate and fermenters were fed 106 g of dry matter per day divided equally between 2 feeding times. Treatments were: control (CTRL, without additives); bacterial culture/enzyme blend (EB, 1.7 mg per day); bacterial culture/enzyme blend with a blend of live yeast and yeast culture (EBY, 49.76 mg per day); and double dose of the EBY treatment (2X, 99.53 mg per day). The bacterial culture/enzyme blend contained five strains of probiotics (Lactobacillus animalis, Propionibacterium freudenreichii, Bacillus lichenformis, Bacillus subtillis, and Enterococcus faecium) and three enzymes (amylase, hemicellulase, and xylanase). On d 8-10, samples were collected for pH, redox, volatile fatty acids, lactate, ammonia N and digestibility measurements. Statistical analysis was performed using the GLIMMIX procedure of SAS. Repeated measures were used for pH, redox, VFA, NH3-N and lactate kinetics data. Orthogonal contrasts were used to test the effect of: (1) additives, ADD (CTRL vs EB, EBY and 2X); (2) yeast, YEAST (EB vs EBY and 2X); and (3) dose, DOSE (EBY vs 2X). No effects (p > 0.05) were observed for pH, redox, NH3-N, acetate, isobutyrate, valerate, total VFA, acetate:propionate, nutrient digestibility or N utilization. Within the 24h pool, the molar proportion of butyrate increased (p = 0.03) with the inclusion of additives when compared to the control while the molar proportion of propionate tended to decrease (p = 0.07). In conclusion, inclusion of bacterial cultures, enzymes and yeast to the diet increased butyrate concentration; but did not result in major changes in ruminal fermentation.

The experiment was designed to determine the effects of different doses of sodium monensin (MON) on feeding behaviour, dry matter intake (DMI) variation and selective consumption of feedlot Nellore cattle. The experiment was a randomised complete block design, replicated 12 times, in which 60 20-month-old yearling Nellore bulls (402.52 ± 33.0 kg) were fed the following different doses of MON (expressed in mg per kg, on a DM basis) in individual pens for 84 days: 0, 9, 18, 27 and 36. The adaptation program consisted of ad libitum feeding of two adaptation diets over a period of 14 days with concentrate level increasing from 68% to 84% of diet DM. Orthogonal contrasts were used to assess linear, quadratic, cubic and quartic relationships between doses of MON and the dependent variable. As the dose of MON increased, the time spent ruminating (P < 0.01), feeding efficiency of DM (P < 0.05) and feeding efficiency of neutral detergent fibre (NDF; P < 0.05) were affected linearly during the period of adaptation. For the finishing period, as the dose of MON increased, time spent eating and ruminating, and feeding efficiency of DM were affected quadratically (P < 0.05), in which animals fed 9 ppm of MON presented better feeding efficiency of DM. Thus, as animals fed 9 ppm of MON presented better feeding efficiency of DM and NDF during the adaptation and finishing periods, it should be the dose of choice for feedlot Nellore cattle.

The inclusion of agro-industry by-products originated from corn ethanol production has increased in animal nutrition in Brazil, reducing formulation costs. In the literature, there is no consensus on how the high inclusion of de-oiled wet distillers grains can affect beef quality and the expression of lipogenic genes in Longissimus muscle. The aim of this study was to evaluate the effects of WDG in the diet of F1 Angus-Nellore cattle on meat quality characteristics, chemical composition and expression of genes involved in lipid metabolism. A hundred F1 Angus-Nellore bulls, with average initial body weight (BW) of 369.5 ± 49 kg were used. The experiment was carried out in a randomized block design, and the animals were divided into two blocks (light and heavy) according to the initial body weight. The animals were fed diets containing levels of 0 (control), 15, 30 and 45% of WDG replacing dry corn and soybean meal. After 129 days of feedlot, the animals were slaughtered and samples of the longissimus thoracis (LT) muscle were collected for quality analyzes such as shear force (3, 10 and 17 aging days), color (luminosity, red, Chroma and Hue), cooking losses, pH and chemical composition (moisture, protein, lipids and ash contents). In addition, the expression of the PPARα, PPARγ, SREBP-1c, SCD1, LPL, FABP4, FASN, ACOX, CPT2, GPX1 and ACACA genes was investigated in the LT muscle by real-time reverse transcription polymerase chain reaction (RT-PCR). Data were analyzed using polynomial contrasts (linear, quadratic and control vs. WDG). There was no interaction (P > 0.05) between aging times and the inclusion of WDG in the diets on the meat quality (pH, cooking losses, coloration and tenderness). However, diets with increasing levels of WDG caused a linear reduction (P = 0.01) in the intramuscular fat of LT. The lipogenic genes SCD1, PPARγ, FASN and CPT2 were less expressed (P < 0.05) in response to the inclusion of WDG. These results suggest that the inclusion of WDG reduced the expression of lipogenic genes and consequently the marbling of LT muscle without affecting tenderness (shear force) and meat color traits.
