Es wird eine Methode beschrieben, die es gestattet, den absoluten Proteingehalt in unzerstorten Mikroorganismen serienmaBig zu bestimmen. Als Material zur Erarbeitung und Diskussion der Methodik dienten Hefen; es lassen sich jedoch ohne Abanderung des Verfahrens Bakterien, Zellorganellen, Pilzsporen 11. a. untersochen.Proben mit einer Trockenmasse von 25 pg bis 200 pg werden auf Filterpapierquadrate anfgebracht, extrahierend fixiert nnd mit Bromphenolblau angefkrbt. Die Extinktion des eluierten Farbstoffs wird spektrophotometrisch bei 598 nm geniessen.Die Farbausbeute der Anfarbung ist nahezu linear abhangig von der Masse des Proteins und nnabhangig yon dessen Struktnr nnd Aminosanrezusammensetzung.Vergleichende Untersuchnngen mit Hilfe klassischer Proteinbestimmungsverfahren (Gesamtstickstoff, Proteinstickstoff, Aminosauren nach Totalhydrolyse) bestatigten die iiber die Farbemethode gewonnenen Proteinwerte.Zur Trockengewichtsbestimmung kleinster Probemengen (Abnahme einer Impfose yon distinkten Kolonien) dient eine Xtreulichtmessung im Suspensionsmittel Methanol/Wasser. I n proteinreichen Hefen ist der Anteil freier Aminosauren signifikant niedriger als in protcinarmen Spczies. Dagegen ist der Anteil des nichtproteinischen Stickstoffes in allen untersuchten Stammen annahernd gleich.
Von den Landern, die sich mit Paprikaerzeugung befassen, hebt sich Ungarn in erster Linie durch die Herstellung von Wiirzpaprika (Paprikapulver) guter Qualitat hervor. Die Veredlung des Paprikas und die Kultivierung neuer Sorten wird aber andauernd fortgesetzt, und es werden nebst dem Wurzpaprika ganz besondere Sorten von DelikateBpaprika hervorgebracht. So verbreitete sich in Ungarn auBer dem Wurzpaprika, dem weiBen und griinen DelikateBpaprika, der roh und auch eingesauert verzehrt wird, zuzuglich eine Paprikasorte, die die Form einer Tomate besitzt und frisch oder in Form von Konserven zum Verbrauch gelangt. Diese veredelte Paprikasorte wird ,,Tomatenpaprika" (Capsicum annuum L. var. lycopersiciforme) genannt. I n der ersten Phase der Reifung ist diese Frucht dunkelgrun, spater wird sie tief dunkelrot. I n diesem Stadium ist sie zum Verbrauch geeignet. Der Tomatenpaprika ist nicht scharf, er ist eher suBlich und hat ein mildes Paprikaaroma. Seine Farbungsfahigkeit ist besonders stark. Sein hoher Gehalt ari Vitamin C und Carotin ist fur den Konsumenten von bedeutendem biologischem Wert. AuBerdem wird auch von vielen Verfassern, in erster Linie von SZENTGY~RCYI, die biologische Bedeutung des Gehaltes an Vitamin P -Citrinim Tomatenpaprika hervorgehoben.
