The food product industry is increasingly looking for foods with nutritional properties that can provide health benefits. Additionally, a challenge for the food industry is the use of all raw materials. For these reasons, banana peel that is a raw material from Banana (Musa spp.) fruit emerges as potential for new food product development. Here, we developed powder blends using a lyophilization process for the preparation of flour to potential use in cookies, bread, and pasta products. Three formulations were designed; the main difference in the formulations was the use of banana peel concentration. Our results showed that blends produced with banana peel presented physical-chemical properties considered suitable for use in food industry. Moreover, the evaluated morphological parameters reveal the properties of the powders. The blends formulated with banana peel have more antioxidant properties, showing that the banana peel may be an attractive option to generate powders with high antioxidant properties.
RESUMO:Esta pesquisa objetivou estudar, experimentalmente, a cinética de secagem de folhas de juazeiro (Ziziphus joazeiro Mart.) sob camada delgada em estufa com circulação forçada de ar utilizando temperaturas de 40, 50 e 60 ºC e velocidade do ar de 0,5, 1,0 e 1,5 m.s -1 conforme planejamento fatorial (2 2 + 3) e posterior ajuste das equações matemáticas aos dados experimentais, verificando assim aquele que melhor representa o fenômeno de secagem. Foi determinado o teor de água inicial das folhas utilizando o método padrão da estufa, em triplicatas. Para cada tratamento de secagem foram utilizados em torno de 150 g de folhas.Para o ajuste utilizou-se análise de regressão não linear, pelo método Quasi-Newton, por meio do programa computacional Statistica 5.0 ® , em que os valores dos parâmetros das equações foram estimados em função da temperatura e da velocidade do ar de secagem. A equação que melhor representou o processo de secagem do juazeiro para a faixa de temperatura de 40 a 60 ºC foi a de Midilli. Os resultados mostraram que com o acréscimo da temperatura ocorre maior redução no tempo de secagem.Palavras-chave: Secagem, Ziziphus joazeiro Mart, modelagem. ABSTRACT: Prediction models in the kinetics of drying leaves of Ziziphus joazeiro Mart.This research aimed to study experimentally the kinetics of drying leaves of Ziziphus joazeiro Mart. in thin layer in an oven with forced air using the temperatures of 40, 50 and 60 °C and the air velocity of 0.5, 1.0 and 1.5 m s -1 according to the factorial design (2 2 + 3) and subsequent adjustment of the experimental data in different models, and we select the one that best represents the phenomenon of drying. We determined the initial water content of the leaves by the standard oven method, in triplicates. For each drying treatment, we used approximately 150g of leaves. For adjustment, we used the non-linear regression analysis, through the QuasiNewton method, using the software Statistica 5.0 ®, in which the parameter values of the equations were determined for the temperature and velocity of the drying air. The equation that best represented the drying process of the Ziziphus joazeiro Mart. for the temperature range of 40-60 °C was the Midilli equation. The results showed that there is a greater reduction in drying time with increasing temperature.
Dentre as oleaginosas o gergelim possui componentes funcionais que aumentam a resistência contra a deterioração oxidativa, fornecendo valores neutracêuticos. Considerando o alto potencial nutricional e funcional do extrato ou “leite” de gergelim, torna-se necessário a aplicação de técnicas de conservação que aumentem sua vida de prateleira e deem origem a novos produtos. Muitos processos de secagem têm sido empregados para a produção de alimentos em pó, entre os quais se destaca a secagem por liofilização. Diante deste contexto, foi estudado a tecnologia aplicada no desenvolvimento de um novo produto a partir do extrato de gergelim (leite de gergelim), pré-congelado sob diferentes temperaturas (-20, -60, -100 e -140 °C) abordando a transferência de calor e massa na secagem por liofilização deste produto, introduzindo novos conceitos propostos por Cavalcanti-Mata (2018) a partir do modelo de Fick, dando novo significado as equações propostas por Page, Lewis e Cavalcanti Mata. Dentre os modelos de secagem estudados o de Cavalcanti-Mata modificado foi o que melhor expressou os dados experimentais. Nos modelos de Fick modficado, Cavalcanti-Mata, Page e Lewis modificado por Cavalcanti-Mata, a difusividade de sublimação do extrato ou “leite” de gergelim diminuiu com a diminuição da temperatura de pré-congelamento das amostras. A entalpia e entropia cresceram com a diminuição da temperatura de pré-congelamento e a energia livre de Gibbs foi positiva para toda a faixa de temperatura tendo um comportamento diretamente proporcional a diminuição da temperatura de pré-congelamento, demonstrando assim, ser um processo não espontâneo.
A cultura brasileira tem grande apreço pela utilização de plantas medicinais, na cura de doenças. O processo de secagem é de grande importância para assegurar a qualidade e a estabilidade dessas espécies. O presente estudo objetivou obter as isotermas de dessorção de folhas in natura de juazeiro (Ziziphus joazeiro Mart.) e mororó (Bauhinia cheilantha) e ajustar os dados experimentais a diferentes modelos matemáticos. As isotermas foram obtidas em três temperaturas (20ºC, 30ºC e 40ºC), em condições de dessorção, e os dados experimentais ajustados a três modelos (GAB, Oswin e Peleg), por meio de regressão não linear. O coeficiente de determinação e o desvio percentual médio entre os valores experimentais e os valores preditos foram calculados para cada curva, visando a verificar o modelo que apresentou melhor ajuste. Segundo os parâmetros estatísticos de análise, o modelo de Peleg foi o que descreveu melhor a higroscopicidade das folhas in natura de juazeiro e mororó.
Dentre as frutas produzidas no Brasil, o maracujá pode ser utilizado para preparação dos mais diversos produtos. A geleia, por exemplo, tem se tornado uma alternativa para a utilização de frutas por proporcionar o aumento da vida de prateleira e agregar valor ao produto, por meio da fruta completa ou de seus resíduos, quando possuírem valor tecnológico. A casca do maracujá é rica em pectina, fibras e carboidratos. A inulina é uma fibra solúvel, comumente extraída da chicória ou da alcachofra, que oferece vários benefícios nutricionais e tecnológicos. Com a crescente busca por alimentos com propriedades funcionais e a expressiva quantidade de resíduos gerados pelas indústrias, objetivou-se elaborar uma geleia de maracujá adicionada da farinha da sua casca e inulina e avaliar sua estabilidade. Os parâmetros físicos e físico-químicos analisados foram acidez titulável, pH, atividade de água, sólidos solúveis, teor de água, açúcares redutores e não-redutores e, quanto às análises microbiológicas, realizou-se a contagem de coliformes totais e termotolerantes, e de bolores e leveduras. Observou-se que todas as formulações se enquadraram nos padrões estabelecidos pela legislação para geleias de frutas, com exceção do pH, que somente a formulação F4 mostrou-se adequada. Concluindo-se que a geleia com 1% de farinha da casca de maracujá e 4% de inulina é a mais viável para uma produção em escala industrial.
