An evaluation of hydration and thermal decomposition of HAlg and its sodium salt is described using thermogravimetry (TG) and differential scanning calorimetry (DSC). TG curves in N2 and air, were obtained for alginic acid showed two decomposition steps attributed to loss of water and polymer decomposition respectively. The sodium alginate decomposed in three steps. The first attributed to water loss, followed by the formation of a carbonaceous residue and finally the Na2CO3. DSC curves presented peaks in agreement with the TG data. In the IR alginic acid presented bands at 1730 and 1631 cm-1, while sodium alginate presented a doublet at 1614 e 1431 cm-1, evidencing the presence of salified carboxyl groups.
Chitosan is a linear polysaccharide obtained from the deacetylation of chitin. The physico-chemical properties of chitosan dependent on the average degree of acetylation ( DA ) and of the average molar mass ( M ). Several applications of chitosan have been proposed in the literature, mainly in water treatment, cosmetic and drug manufacturing, food additives, semipermeable membranes and development of biomaterials. In this work, three commercial chitosan samples were characterized by proton nuclear magnetic resonance ( 1 H NMR), infrared spectroscopy (IR), conductimetric titration and thermal analysis (TG and DSC) in order to compare commercial chitosans from different supplies. The average viscosimetric molecular weight M v was estimated from the intrinsic viscosity. The results confirmed remarkable differences in relation to the mean degree of acetylation ( DA ) (or desacetylation, DD ). The thermal analysis data permitted to follow the dehydration, decomposition, and glass transition temperature (Tg).
(II), Zn(II) and Cu(II) ADSORPTION. Some commercial samples of vermicompost from bovine manure (humus) were characterized by thermogravimetry with respect to humidity, organic matter and ash contents, the percentages of which range from 6.55 to 5.35%, 53.01 to 69.96% and 46.44 to 66,14%, respectively. The capacity of adsorption of Cu 2+ , Zn 2+ and Co 2+ ions by these samples has been evaluated as a function of pH and time. The contents of several metal ions in the original vermicompost samples have been determined by flame atomic absorption spectrometry after digestion in a microwave oven. The high nitrogen content suggests that the earthworms used in the maturation procedure lead to an efficient degradation of organic matter. The metal retention was affected by both pH and adsorption time. The results also show that adsorption follows the order Cu 2+ > Zn 2+ > Co 2+.Keywords: vermicompost; thermogravimetry; metal ion adsorption.

The pasta is a consumed food a globally with high levels of acceptability in all social classes. As basically consisting of wheat flour is considered an energy food but low in nutrients and high glycemic index. Thus, it is vitally important that research be developed with alternative raw materials to replace partially the flour in the formulation of these products to improve their nutritional quality regarding the content of food fiber. The objective of this study was to develop technology for the production of noodles with the partial replacement of wheat flour by flour babassu mesocarp (FBM), aiming at its nutritional enrichment. Were prepared four formulations of pasta: F1: control (100% wheat flour), F2: 90% flour + 10% flour mesocarp babassu oil, F3: 85% flour + 15% flour mesocarp babassu oil, F4: 80% flour + 20% of babassu mesocarp flour. The results showed that the formulations supplemented with 10%, 15% and 20% showed higher protein content (5.36%, 5.89% and 6.31% respectively), than the control (4.16%) addition of larger amount of fibers. The formulation F3 added in 127% of this nutrient in traditional wheat pasta. It was further found that the FBM pasta supplemented with reduced loss of solids during the cooking of pasta. The pasta products prepared with FBM showed a greater nutritional potential than traditional pasta and can be used as one more nutrition alternative and income for communities who live of extraction of babassu coconut.
