A farinha é o principal derivado da mandioca para a alimentação humana no Brasil, visto ser consumida em todo o País, chegando a ser, em algumas regiões do Norte e Nordeste, a principal fonte energética. Apesar de a farinha constituir a forma mais ampla de aproveitamento industrial da mandioca, ela não é um produto muito valorizado, sobretudo pela elevada variabilidade de tipos de farinha, o que dificulta a comercialização.Essas diferenças nas farinhas oferecidas ao mercado são decorrentes de vários fatores como cultivar, clima, solo, ponto de colheita, variabilidade genética, matéria-prima e outros, mas o principal fator responsável é o método de processamento. Segundo Lima (1982), a heterogeneidade da farinha é devida, principalmente, à fabricação por pequenos produtores para seu uso diário.No Estado do Acre, a farinha de mandioca é processada de forma artesanal em pequenas unidades denominadas casas-de-farinha, que utilizam matéria-prima e mão-de-obra provenientes da agricultura familiar, e grande parte está localizada no próprio local de produção da matéria-prima. Nestes estabelecimentos, cada produtor segue um processo próprio de fabricação da farinha. Cereda (2005) cita que fornos muito quentes ou frios, cargas grandes ou muito pequenas, prensagem mais ou menos intensiva são alguns dos fatores que podem influenciar o padrão de qualidade da farinha. Essas variações tornam quase impossível a proposta de um padrão nacional de qualidade. Mesmo em uma única propriedade, por conseqüência do sistema artesanal de produção, é raro ocorrer uniformidade em fabricações sucessivas. AbstractThe goal of this work was to evaluate the physicochemical variability of the cassava flour, sold in the city of Cruzeiro do Sul -in the state of AC (Brazil), by multivaried analysis. The following contents of eighteen different cassava flours were analyzed: moisture, ashes, lipids, protein, fiber, carbohydrates, acidity, and pH. Grouping multivaried analysis according to the Tocher method allowed the establishment of five groups of flours. The groups IV and V were considered high quality groups. The first one due to the lower ashes and higher protein contents; and the second due to the lower moisture and higher carbohydrates contents. The multivaried analysis techniques presented good responses to identify most heterogeneous flours. The physicochemical variability seen in the five different groups probably indicates different production processes. Keywords: cassava flour; heterogeneous; multivaried analysis. O município de Cruzeiro do Sul é conhecido, no estado do Acre, por sua grande tradição em produzir farinha de mandioca; não se conhece, porém, suas características para classifi cá-la como de qualidade. Objetivou-se avaliar as características físico-químicas da farinha de mandioca, produzida no município de Cruzeiro do Sul, Acre. Foram coletadas 10 amostras de cada tratamento, em uma casa-de-farinha nesse município; sendo que os tratamentos foram compostos pelas classifi cações particulares do fabricante: T1= farinha com coco; T2= farinha grossa e T3= farinha peneirada; tendo sido transportadas, via aérea, para Rio Branco, Acre, para o Laboratório de Tecnologia de Alimentos da Embrapa-AC. Foram avaliadas as variáveis: umidade, cinzas, lipídeos, proteína bruta, fi bra bruta, carboidratos totais, acidez e pH. Todas as amostras estão de acordo com os padrões, estabelecidos pela Legislação Brasileira, para farinha de mandioca quanto ao teor de umidade, de cinzas e de carboidratos. As farinhas analisadas apresentam teores, baixos a moderados, de fi bras, sendo pouco ácidas. A incorporação de coco à farinha de mandioca é uma alternativa para aumentar o teor de proteína e de lipídeos no produto.
Algumas características de farinha de mandioca dependem da variedade da raiz utilizada para o processamento. Objetivouse avaliar as características físico-químicas da farinha de mandioca oriundas de variedades utilizadas no estado do Acre. Os tratamentos foram compostos pelas variedades: T1= Paxiubão, T2= Im221, T3 = Caboquinha, T4 = Araçá, T5 = Colonial, T6 = Branquinha, T7 = Panati e T8 = Mansa e Brava. Foram coletadas amostras das oito variedades de mandioca em casas-defarinha no município de Cruzeiro do Sul, Acre. As raízes foram transportadas via aérea para o Laboratório de Tecnologia de Alimentos da Embrapa-AC, na cidade de Rio Branco, Acre. Foram avaliados: teor de umidade, cinzas, lipídios, proteína, fibra bruta, carboidratos, acidez, pH e atividade de água. Todas as amostras se apresentaram de acordo com os padrões estabelecidos pela Legislação Brasileira para farinha de mandioca quanto ao teor de umidade, cinzas e carboidratos. As farinhas analisadas apresentam teores baixos de fibras e baixa acidez. A atividade de água das farinhas analisadas esteve abaixo do limite mínimo capaz de permitir o desenvolvimento de microrganismos. As variedades Araçá, Colonial e Branquinha se mostraram adequadas para a fabricação de farinha de mandioca devido, principalmente, ao elevado teor de proteína e carboidratos presente nas farinhas produzidas.PALAVRAS-CHAVE: farinha de mandioca, qualidade, variedades. Physicochemical characteristics of flours deriving of cassava varieties used in the Vale do Juruá, AcreABSTRACT Some characteristics of the cassava depend on the variety used for the processing. The objectified of this study was to evaluate physicochemical characteristics of the cassava flour from varieties used in Acre. The treatments were composed by the varieties: T1 = Paxiubão, T2 = Im221, T3 = Caboquinha, T4 = Araçá, T5 = Colonial, T6 = Branquinha, T7 = Panati and T8 = Mansa e Brava. Samples of flour of eight cassava varieties were collect in cassava mils in Cruzeiro do Sul. The samples were sent by airmail to Rio Branco, Acre, to be analyzed in the Food and Technology Laboratory at Embrapa-AC. The evaluated parameters were: water percentage, ashes, lipids, protein, fiber, carbohydrates, acidity, pH and water activity. All samples were taken according to the established patterns of the Brazilian Legislation for cassava flour, considering water percentage, ashes and carbohydrates. The analyzed flours presented low fibers levels and low acidity. The water activity of the analyzed flours was below the minimum limit necessary to allow microorganisms development. The varieties Araçá, Colonial and Branquinha were adequate to cassava flour manufacturing, mainly because of the high protein and carbohydrates levels present in the produced flour.
RESUMOA castanha-do-brasil (Bertholletia excelsa H.B.K.) é uma matéria-prima importante que constitui a base de subsistência para os povos da região Amazônica. Em razão do alto teor de lipídios insaturados, cerca de 60 a 70% torna-se altamente perecível. Inadequadas práticas de beneficiamento fazem com que o descascamento resulte alto índice de amêndoas quebradas ou danificadas. Neste trabalho objetivou-se fazer um comparativo das propriedades físico-químicas, teor de minerais, ácidos graxos e perfil de aminoácidos essenciais de amêndoas que sofreram danos mecânicos em comparação a amêndoas intactas, que foram beneficiadas, embaladas e armazenadas nas mesmas condições. O teor de minerais totais de amêndoas danificadas e intactas, armazenadas durante três meses à temperatura ambiente, não apresentaram diferenças significativas entre si. Entretanto, resultou em perdas significativas de ácidos graxos insaturados, como o oléico e o linoléico, além de aminoácidos essenciais, principalmente a lisina. Isso pode implicar na redução do valor biológico da castanha, principalmente na sua qualidade sensorial. Termos para indexação:Castanha-do-brasil, processamento, composição química. ABSTRACTBrazil nut (Bertholletia excelsa H.B.K.) is an important raw material. It constitutes a basic stable of the population living in the Amazon region. Due to high unsaturated lipid content, around 60 to 70% is highly perishable. Moreover, inadequate processing practices result in high broken or damaged nuts. The objective this work was to make a comparative study of the physicochemical properties, mineral contents, lipids, and essential amino acid profiles between intact and highly damaged Brazil nut. All samples were stored in the same conditions. Samples were stored during three months at room temperature.The mineral profile of both samples did not show significant variation in total contents. It resulted, however, in significant loss of unsaturated fatty acids such as oleic and linoleic acid, besides essential amino acid, specially lysine. This fact can imply a reduction in the nutritional and sensory properties of the nut.
This work aimed to evaluate, in the Amazon Forest environment, the effect of time on contamination of Brazil nuts with Aspergillus flavus, Aspergillus parasiticus and aflatoxins after falling of the pods. Samples were collected at three different times and analysed for water activity, potentially aflatoxigenic fungi A. flavus and A. parasiticus, other fungi and aflatoxins. The mean values for the parameters tested were: water activity 0.98; A. flavus and A. parasiticus 1.3×101 colony forming units (cfu)/g; other fungi 3.2×103 cfu/g; aflatoxin B1 0.073 μg/kg, aflatoxin B2 0.009 μg/kg, aflatoxin G1 0.034 μg/kg and aflatoxin G2 0.007 μg/kg. The incidence of A. flavus and A. parasiticus was not significantly affected by the time, during which the pods were on the forest soil. Moreover, aflatoxins levels were low during the whole study period, suggesting that adverse forest conditions were not the main factor that stimulate the production of aflatoxins.
Cupuaçu [Theobroma grandiflorum (Wild ex Spreng.) K. Schum] seeds have been employed for a long time in the Amazon region for food purposes. Similar to cocoa, processed cupuaçu pulp and seeds can be used to produce juices, ice creams, confectionary products and cupulate®, which is a similar product to chocolate. However, its market penetration requires the mastery of all processing stages to improve the food quality and safety and to make possible an efficient technology transfer to the local small farmers and communities. Based on the above, the current research work aimed at monitoring and optimizing the consecutive fermentation and drying processes of cupuaçu seeds over 7 days each, as well as storage for 90 days. A greenhouse structure incorporating the fermenter and solar drying terrace was designed to be inexpensive, versatile, easily scalable, and easy to maintain and operate by the local small farmers after a short period of training. This research effort also aimed at giving a vision for the future creation of an integrative and sustainable cupuaçu system covering the economic, social, cultural and environmental vectors. The experimental design comprised 5 batches of 100 kg of seeds each. Several microbiological and physicochemical parameters were performed and correlated with processing variables. Microbiological parameters encompassed viable counts of mesophilic microorganisms, coliforms, yeasts, and molds, whereas physicochemical measures included fermentation and drying temperature, pH, acidity, dry matter, ashes, water activity, color, total proteins, lipids and carbohydrates, and energy. The average seed fermentation temperature varied from ca. 28 to 44 °C, reaching the maximum on day 3 and a final value of ca. 31 °C. Regarding solar drying, the average seed temperatures ranged from ca. 24 °C (at the end) to 39 °C on day 3, and an initial value of ca. 29 °C. The average final seed pH value of drying was 5.34 and was kept during storage. During storage, results demonstrated the existence of significant correlations among several experimental parameters under scrutiny. Finally, bean viable counts obtained during storage unfolded acceptable values of total mesophilic bacteria well below the maximum limit. Viable counts of yeast and molds were generally found between 3 and 4 log(CFU/gsample), and total coliforms were also detected, although both were at acceptable levels and well beneath the established maximum limits for food safety.
have demonstrated that atrazine has toxic effects in algae, aquatic plants, aquatic insects, fishes and mammals. Owing to the toxicity and persistence of atrazine in the environment, the search of microbial strains capable of degrading it is fundamental to the development of bioremediation processes, as corrective tools to solve the current problems of the irrational use of agrochemicals. This work aimed the isolation and identification of atrazine degrading bacteria from rizospheric soil, as well as the evaluation of their degradation capacity. Two different atrazine degrading bacteria were isolated and identified as belonging to the genera Arthrobacter and Corynebacterium. Arthrobacter sp. proved to be a better atrazine degrader by the appearance of transparent halos around the colonies when atrazine (0.1 g L −1 ) was the sole carbon and nitrogen source in the medium. In liquid medium, higher specific growth rate (0.0499 hour −1 ) was observed with Arthrobacter sp. when sodium citrate (1 g L −1 ) was an additional source of carbon.
Resumo: Foram avaliados os efeitos da substituição da ração de peixes por 4 níveis de silagem biológica de resíduos de pescado para evolução de ganho de biomassa de alevinos de tilápia. Foi utilizado 150 alevinos machos e fêmas com aproximadamente 90 dias de idade, em um delineament o inteiramente casualizado, com 2 tratamentos pa ra cada tanque (T), To a T 4 , rações com 0; 10; 20 e 30% de silagem biológica de resíduos de pescado. O ganho de biomassa inicial dos alevinos de tilápia ( Oreochromis niloticus) foi de 95,0 ± 9,61 a 97,15 ± 8,55g, alcançando valores entre (T 1 ) 272,90±36,62 e (T 4 ) 326,54 ± 76,6g. As rações foram formuladas para conter 25% de proteína bruta. Não houve efeito significativo sobre as características estudadas. Conclui -se que a adição de até 30% de silagem biológica de resíduos de pescado (T 3 ) favoreceram o bom desempenho dos peixes com relação ao ganho de biomassa.Palavras-chave: alevinos de tilápia, silagem biológica, resíduos de pescado. Abstract:The effects of substituting fish ration for 4 fish residual biological silage levels aiming biomass evolution gain in tilapia alevins were evaluated. The experiment was made, in an experimental delineation entirely at random within 150 male and female alevins which were approximately 90 days old. There were two different kinds of treatment for each tank: (T) To to T4. The rations contained 0; 10; 20 and 30% of fish residual biological silage. The initial biomass gain was from 95,0 ± 9,61 a 97,15 ± 8,55g, reaching values between (T 1 ) 272,90±36,62 e (T 4 ) Souza et al., Revista Brasileira de Higiene e Sanidade Animal (v.3, n.1) p. 1 -14 (2009) 2 326,54 ± 76,6g. The rations were formulated to contain 25% of crude protein. There was no meaningful effect over the studied characteristics. We got to the conclusion that the addition of up to 30% of fish residual biological silage (T3) favors the good performance of the fish concerning biomass gain.
