The objective of the research lies in the study of the main indices of the chemical composition of strawberries during freezing and storage under its previous treatment in solutions with structure-retaining properties. The main indices of the chemical composition of strawberries during freezing and a six-month storage under previous treatment in the solutions with structureretaining properties were studied, namely in 1 %, 2 % and 3 % solutions of potato starch and 1 % and 2 % sugar-pectin solution. The main components of the chemical composition were identified. The content of soluble solids was determined using refractometer, sugar content was measured by means of ferricyanide method, organic acids were identified by alkali titration, ascorbic acid content was determined by iodometric method. It has been found that during freezing and storage of frozen strawberries there are losses of the main components of chemical composition, the amount of which considerably depends on the type and concentration of the solution for treatment. Application of the previous treatment of strawberries before freezing helps to retain the main components of chemical composition of strawberries during freezing and storage. Losses of soluble solids of previously treated strawberries during freezing were by 0,9-1,2 % lower compared to control. Sugar content went down to1,8-3,3 % as the result of freezing. Previous treatment of berries before freezing promotes their preservation by 0,1-0,7 %. Organic acids content in strawberries remained practically unchanged. Ascorbic acid content during freezing of strawberries suffered essential losses that made up 43,8-50,3 % under the lowest in the sample that were previously treated in 2 % sugar-pectin solution and by 13 % lower than in control. During storage the losses of ascorbic acid in strawberries without previous treatment were by 4,4-7,6 % higher.
The purpose of the work is to study the pretreatment effect of strawberries in structure-retentive solutions before freezing on the indicators of cryoresistance and height index. Cryoresistance was determined by the difference of the mass of frozen berries and that of defrosted ones, and it was expressed in percents; height index was expressed in terms of the correlation between the height of defrosted berries and that of fresh berries in percents; height index of fresh strawberries was taken as 100%. It was established that the treatment of strawberries in structure-retentive solutions before freezing favored the increase of their cryoresistance by 0,4-2,5 %, compared with the control. The berries which were pretreated in 2 % sugar-pectin solution had much higher cryoresistance, namely 98,3 %. Cryoresistance gradually decreased during the storage of frozen strawberries. Freezing of strawberries resulted in their height ranging from to 96,6 (the control) to 97,1 % when berries were treated with 3 % starch solution. Berry treatment with 1 % sugar-pectin solution did not favor the preservation of a berry form. Height index of strawberry samples did not change after 6 months of their storage. While freezing strawberries their mass losses appeared to be at the level of 2-3,6 % of the initial mass. Pretreatment of berries in structure-retentive solutions made it possible to decrease berry mass by 0,9-1,6 %. Direct average correlative connection (r=0,61±0,05) was established between mass losses and cryoresistance, r=0,52±0,06 was between mass losses and height index 2 % sugar-pectin solution appeared to be very efficient for pretreatment of berries before freezing. A limit level of strawberry mass losses during freezing, when high cryoresistance and height index are preserved, is 2 %.
Актуальність теми дослідження. Суниця садова – популярна ягідна культура, плоди якої високо цінуються як сировина для заморожування, виробництва консервів та споживаються у свіжому вигляді охолодженими. Постановка проблеми. Важливим завданням є дослідження технологічних властивостей ягід суниці, що істотно впливають на зміни маси ягід та їхню товарну оцінку під час зберігання, зумовлюють консистенцію консервів. Аналіз останніх досліджень і публікацій. Технологічні властивості ягід суниці формуються під час достигання під впливом генетичних особливостей сорту, абіотичних та агротехнологічних факторів, віку насаджень, черговості збирання врожаю та післязбиральної обробки. Виділення недосліджених частин загальної проблеми. Проте недостатньо висвітлено питання формування технологічних властивостей ягід суниці залежно від помологічного сорту, абіотичних факторів, віку насаджень та черговості збирання врожаю. Постановка завдання. Метою цієї роботи євстановлення технологічних властивостей, зокрема середньої маси, об’єму та густини ягід суниці садової сортів Русанівка, Фестивальна ромашка, Дукат, Хоней, Полка та Пегас. Виклад основного матеріалу. Досліджували технологічні властивості ягід суниці садової сортів Русанівка, Фестивальна ромашка, Дукат, Хоней, Полка та Пегас за досягнення ними споживної стадії стиглості залежно від віку насаджень та черговості збирання врожаю. Середня маса ягід суниці становила 6,9–15,1 г. Середній коефіцієнт варіації показника на рівні 12,9–13,4 % виявлено в ягодах сортів Полка та Русанівка, із середньою масою на рівні 7,3–10,0 г. Найвищі коливання мала середня маса ягід суниці сорту Хоней – 27,9 %. Дослідження середньої маси ягід суниці залежно від віку насаджень показали зниження рівня цього показника від найвищого в перший рік плодоношення до найнижчого наприкінці п’ятого року використання насаджень. Об’єм ягід суниці суттєво змінювався і залежав від сорту, віку насаджень та черговості збору врожаю. Істотно вищим цей показник за період досліджень був у ягодах суниці Дукат та Пегас –10,2 та 14,6 см3. Густина ягід суниці коливалася в межах від 0,8 до 1 г/см3. Ягоди суниці сорту Хоней мали значно нижчу густину проти інших – 0,8 г/см3. Висновки відповідно до статті. Встановлено, що технологічні властивості ягід суниці садової істотно залежать від сорту, віку насаджень та черговості збору ягід. Залежно від цих факторів середня маса ягід суниці становила 6,9–15,1 г, об’єм – 5,5–13,3 см3, густина – 0,8–1,0 г/см3. У молодих насадженнях та в перші три збори врожаю вказані характеристики ягід значно кращі.
Актуальність теми дослідження. У харчовій промисловості існує проблема хімічного забруднення сировини та харчової продукції, що зумовлено діяльністю людини та неналежною сільськогосподарською практикою. Отже, важливим завданням є дослідження ризиків хімічних небезпек пов'язаних з харчуванням. Постановка проблеми. Одним зі значних ризиків хімічного забруднення сировини та готової продукції є вміст токсичних елементів. Аналіз останніх досліджень і публікацій. Існують дослідження вмісту токсичних елементів у свіжих фруктах та наслідків їх негативного впливу на здоров'я людини. Нормативні документи в Україні та світі регламентують максимально допустимий рівень токсичних елементів для плодово-ягідної продукції та продуктів харчування в цілому. Виділення не вирішених раніше частин загальної проблеми. Проте в науковій літературі не виявлено достатньої інформації про ризики виникнення небезпек, пов'язаних з вмістом токсичних елементів окремо у свіжих, заморожених ягодах суниці та продуктах переробки з них. Мета дослідження. Метою цієї роботи є встановлення ризиків виникнення небезпек, пов'язаних з вмістом токсичних елементів у свіжих, заморожених ягодах суниці та найбільш популярних видах консервів з них. Виклад основного матеріалу. Вміст токсичних елементів досліджували у свіжих, заморожених ягодах суниці сортів Русанівка, Полка, Дукат і Хоней, а також компотах, джемах, варенні та соках з ягід цих сортів методом атомно-абсорбційної спектрофотометрії. Досліджено, що за вмістом токсичних елементів свіжі, заморожені ягоди суниці відповідають Державним гігієнічним правилам і нормам «Регламент максимальних рівнів окремих забруднюючих речовин у харчових продуктах» та є істотно нижчими за ці показники. Вміст свинцю в ягодах виявлено на рівні 0,01…0,03, кадмію-0,00008…0,002, міді-не вище 0,21, а нікелю-0,02 мг/кг. Доведено, що процес заморожування не справив істотного впливу на вміст токсичних елементів в ягодах, що зумовлено неруйнівними технологічними операціями підготовки ягід суниці до заморожування. Встановлено, що вміст кадмію в консервах з суниці не перевищував 0,001 мг/кг продукту, а міді був у 24…500 разів нижче максимально встановленого рівня. Вміст нікелю знаходився в межах від 0,00002 до 0,023, заліза-0,25-1,15 мг/кг, а свинцю-не виявлено. Висновки. За вмістом токсичних елементів досліджувані зразки сировини та готової продукції відповідають Державним гігієнічним правилам і нормам «Регламент максимальних рівнів окремих забруднюючих речовин у харчових продуктах», що затверджені в Україні. Ризик виникнення небезпек, пов'язаних з вмістом токсичних елементів у свіжих, заморожених ягодах суниці та продуктах переробки з них, низький.
Pear fruits have a high biological and nutritional value; however, they are perishable products, storage of which is accompanied by certain difficulties. You can preserve the quality of fresh pears through the use of various packaging methods, among which the use of polyethylene liners is effective. The article presents the results of studies of weight loss and yield of pears during storage, depending on the variety and method of packaging. Conferencia, Noiabrska, and Osnovianska pears of the highest and first commodity varieties were pre-cooled and packed in wooden boxes №3, with a capacity of up to 25 kg (“control” option) and in boxes with a plastic bag liner inserted inside the package 45–50 μm followed by sealing (option “box with a polyethylene liner”). Pear fruits were stored for four months at a temperature of 0 ... + 3 ± 1 ºС and relative humidity of 92% ± 2%. Fruit weight losses were determined by the method of weighing fixed samples, the yield of marketable products - according to DSTU 8326:2015. It was found that during the storage period of pear fruits, their weight loss was 2.3–5%, depending on the variety and method of packaging. In terms of pomological varieties, according to average data, the highest weight loss was pears of the Osnovianska variety – 2.6%. The use of polyethylene liners during the storage of pears helped to reduce losses by 0.5–2.3% depending on the variety and duration of storage. It was found that in the conditions of free air access the share of standard products was 78.6–88.3% with the minimum value in the fruits of Conference and the maximum in the fruits of Noiabrska Moldova. It is proved that packing pear fruits in wooden boxes with polyethylene inserts caused an increase in the yield of marketable products to 90.2–98.4%, a decrease in the share of non-standard products to 1.6–7.0%, and waste to 2.8%. The weight loss of pear fruits of the Noiabrska Moldova variety was 0.3–1.5 lower compared to similar indicators of other varieties. The fruits of the same variety recorded a higher yield of marketable products – 88.3–98.4% depending on the method of storage.
Key words:ABSTRACT Freezing Strawberry Solution Concentration MicrostructureThe anatomical structure of frozen strawberries, cv. Ducat, depending on pre-treatment in potato starch solutions with concentration 1, 2, and 3% and sugar-pectin solutions with concentration 1 and 2% in equal correlation of sugar and pectin, was studied.It has been found out that mesocarp cells of strawberries at a consumer stage have large parenchyma cells with thin membranes, large intercellular walls as thick as 50-75 µκ, and as long as 150-225 µκ. They are long in strawberries cv. Polka, Honey and Rusanivka, and they are round and angular-oval in Ducat strawberries. Mesocarp cells of strawberries are filled with cellular sap, and large intercellular walls -with air.The microscopy of the received samples of frozen strawberries showed the formation of ice crystals of various sizes in intercellular space and distinct changes in the structure of parenchyma tissues, which were seen in the change of the form and the loss of integrity. Instead, epidermis cells did not lose their form and integrity. The membrane thickness on a surface in the strawberries treated with 1%-starch solution was 0,1 mm, and in those treated with 2 and 3% of starch solution -more than 0,1 mm. The treatment of strawberries in sugar-pectin solutions of different concentrations resulted in the formation of membrane on strawberry surface -0,05 and 0,1 mm.The tissue microstructure of frozen strawberries, which were pre-treated in the solutions with structure-maintaining properties, remained in a better condition, which was due to the decrease of mass loss during freezing and the prevention of cell moisture loss during defrosting.A serious preservation of the form and structure, compared with other variants, was found when strawberries were treated in 3% starch solution and 2% sugar-pectin solution.
