Die bisherigen Untersuchungen über die enzymatisch katalysierte Autoxydation der mehrfach ungesättigten Fettsäuren vom Typus der Linol-, Linolen-und Arachidonsäure beziehen sich mit ganz wenigen Ausnahmen auf die Lipoxydase der Leguminosen, im besonderen der Sojabohne 1 . Auch die vorausgehende Mitteilung dieser Reihe hatte sich mit der Soja-Lipoxydase befaßt 2 , wobei vor allem die grundsätzliche Gleichartigkeit des Reaktionsablaufs bei der enzymatisch und bei der früher studierten 3 , rein chemisch (mit Kobaltsalz) katalysierten Autoxydation herausgestellt worden war. Ähnliche vergleichende Versuche wurden fast gleichzeitig von Bergström 4 ' 5 ausgeführt, der auch die lange offene Frage nach der Natur des primären Autoxydationsprodukts -Brückenperoxyd oder Hydroperoxyd-Derivat -im Sinne der letzteren Möglichkeit (konjugiert-ungesättigtes Fettsäure-Hydroperoxyd) klärte.Über die Verbreitung der Lipoxydase im Pflanzenreich liegen nur gelegentliche Beobachtungen vor 1 , denen sich aber bereits entnehmen läßt, daß das Ferment keineswegs generell in Pflanzen vorkommt. Süllmann 6 fand stärkere Verbreitung außer in Leguminosen nur in Solanaceen und Labiaten. Die Angaben über das Vorkommen in Gramineen, das uns hier besonders interessierte, lauten widersprechend: während Strain 7 das Ferment im Maiskorn und im etiolierten Gersteiikeimling vermißte, fanden es Sumner 8 sowie Miller und Kummerow 9 in Weizenkeimen, wenn auch nur in der Größenordnung eines Prozents vom Gehalt der Sojabohne; Kolessnikow 10 gibt eine nicht unbeträchtliche Aktivität für Gerstenblätter nicht näher präzisierten Alters und daraus hergestellte Acetonpräparate an.Wir fanden in orientierenden Versuchen die Samen der am häufig-sten bei uns angebauten Getreidearten (Roggen, Weizen, Gerste, Hafer, 1 Neuere Zusammenfassungen über Lipoxydase: a) S.
