Zur Autoxydation der ungesättigten Fettsäuren. VI. Über die Lipoxydase der Gramineen, im besonderen der Gerste

Abstract: Die bisherigen Untersuchungen über die enzymatisch katalysierte Autoxydation der mehrfach ungesättigten Fettsäuren vom Typus der Linol-, Linolen-und Arachidonsäure beziehen sich mit ganz wenigen Ausnahmen auf die Lipoxydase der Leguminosen, im besonderen der Sojabohne 1 .
