This study aimed to compare the resistance of the Oryctolagus cuniculus L. (rabbit) and Oreochromis niloticus L. (Nile tilapia) skins, as well as to observe the design of the flower of these skins and the morphology of the dermis. Tilapia and rabbit skins were placed inside the same equipment (tannery machine) for the chromium salt tanning process. The flower design of the fish leather distinguishes it from the rabbit leather, the latter being constituted by the opening of the hair follicles and pores, while the fish leather is constituted by the presence of protective lamellae and insertion of the scales. The dermis of rabbit skin consists of thick bundles of collagen fibers arranged in all directions, which differs from the morphology observed in the dermis of fish skin. However, in the Nile tilapia skin dermis, overlapping and parallel layers of longitudinal collagen fiber bundles are observed, these layers are interspersed with fiber bundles crossing the sking surface (transversely), tying the fibers together and providing greater strength, which can be proven by the strength test. The fish leathers, despite having less thickness (1.0 mm), demonstrated significantly greater tensile strength (13.52 ± 1.86 N mm−2) and tear strength (53.85 ± 6.66 N mm−2) than rabbit leathers, that is, (8.98 ± 2.67 N mm−2) and (24.25 ± 4.34 N mm−2). However, rabbit leather demonstrated higher elasticity (109.97 ± 13.52%) compared to Nile tilapia leather (78.97 ± 8.40%). It can be concluded that although the rabbit leather is thicker due to the histological architecture of the dermis (thick bundles of collagen fibers arranged in all directions with no pattern of organization of collagen fibers), it shows less resistance than Nile tilapia leather, which demonstrates an organization of overlapping and parallel layers and intercalating collagen fiber bundles transversally to the surface, functioning as tendons for the swimming process. It is recommended to use a piece of fabric (lining) together with the fleshy side of the rabbit leather, to increase resistance when used in clothing and footwear, as these products require greater tensile strength. Thus, it minimizes this restriction for the use of rabbit leather in the aforementioned purposes.
O objetivo do trabalho foi elaborar petisco tipo palito para cães com inclusão de diferentes níveis de farinha elaborada a partir de carcaça com cabeça de tilápia do Nilo (Oreochromis niloticus) e avaliar a composição química, perfil de ácidos graxos, força de cisalhamento, microbiologia e teste de preferência. Para a elaboração da farinha, as carcaças com cabeça foram cozidas, prensadas, moídas em moedor de carne, desidratadas, moídas em moedor tipo faca e imediatamente embaladas a vácuo. As farinhas foram incluídas em 0%, 10%, 20% e 30% em petisco tipo palito. Houve efeito linear negativo para teor de proteína bruta (Ŷ= 76,11 – 0,85x, R2=0,99), linear positivo para cinzas (Ŷ=10,40+0,116x, R2=0,72) e para extrato etéreo (Ŷ= 1,04 +0,73x + 0,2275x2, R2=0,99) efeito quadrático. A inclusão da farinha nos palitos aumentou os teores de cinzas, ácidos graxos ácido docosaexaenoico (C22:6n3), ácido Palmítico (C16:0) e ácido oleico (C18:1n9c), apesar de reduziu os teores de proteína bruta e extrativo não nitrogenado à medida que aumentou o nível de inclusão da farinha de peixe. Ocorreu redução da força de cisalhamento à medida que houve a inclusão de farinha, cuja equação foi Ŷ = 28,96 – 5,30x (R2=0,63). No teste de preferência, houve uma redução na escolha, ingestão e razão de ingestão dos palitos à medida que aumentou o nível de inclusão de farinha. Sendo assim, o mais indicado é incluir apenas 10% de farinha nos petiscos tipo palitos, caso contrário ocorrerá maior redução na dureza observada através da força de cisalhamento e na aceitação realizada pelo teste de preferência ou palatabilidade para os cães.
This study aimed to assess the effects of light regime and time of slaughter on primal cut and organ weights, peptide transporter 1 (PEPT1) gene expression in the jejunum, arylalkylamine N-acetyltransferase (AANAT) gene expression in the brain, and liver oxidant/antioxidant status in broilers aged 37 days. The experiment was conducted in a factorial completely randomized design, with two light regimes (intermittent light varying according to bird age and continuous light under an 18 h light/6 h dark photoperiod) and four times of slaughter (2:00, 8:00, 14:00 and 20:00 h). There was an interaction effect on PEPT1 and AANAT expression, lipid and protein oxidation and superoxide dismutase (SOD) activity. In both light regimes, PEPT1 expression responded cubically to slaughter time. In the continuous light group, PEPT1 expression was highest in birds slaughtered at 2:00 and 14:00 h, whereas, in the intermittent light treatment, expression was highest at 8:00 h. In the continuous light regime, AANAT expression had a cubic relationship with time of slaughter, with the greatest values recorded at 20:00 h. In the intermittent light regime, slaughter time showed a cubic effect on lipid oxidation, which was highest at 8:00 h. In the continuous light group, there was a cubic effect on nitrite concentration, lipid oxidation, protein oxidation, and SOD activity; nitrite levels, lipid oxidation, and protein oxidation were highest and SOD activity was lowest in birds slaughtered at 14:00 h. Time of slaughter influenced catalase activity, which responded cubically; catalase activity was lowest at 8:00 and 14:00 h. This study is the first to demonstrate that PEPT1 expression in the jejunum of broilers follows a diurnal rhythm and varies according to light regime. The results also suggest that mainly continuous lighting and slaughter at 14:00 h when the animals are possibly more active may be more stressful to broilers.
Com o enorme desperdício de resíduos de filetagem pela indústria de processamento de peixes, têm sido buscados alternativas tecnológicas para melhor utilização de resíduos considerado de excelente qualidade, para incluí-la principalmente em alimentos de alto teor em carboidratos. O objetivo do trabalho foi avaliar características de composição química e microbiológica de pão caseiro com a inclusão da farinha de peixe elaborada a partir de carcaças de tilápia do Nilo (Oreochromis niloticus) por diferentes metodologias de processamento. Utilizou-se um delineamento inteiramente casualizado com quatro tratamentos, sendo Trat1- sem inclusão de farinha de peixe e demais tratamentos com 7% de inclusão de farinha sendo: FPC- carcaças cozidas; FCA - carcaças cozidas e aromatizadas; FPA - carcaças cozidas submetidas à aromatização. Os pães com inclusão de farinha cozida, aromatizada e cozida-aromatizada apresentaram maiores teores de umidade e teores de cinzas, que variam de 24,72% a 25,72% e 3,83% a 4,21%, respectivamente. Os pães com inclusão da farinha cozida (8,21 ± 1.32%) apresentaram maior teor de proteína bruta, apesar de não ter diferido estatisticamente dos pães que receberam farinha cozida aromatizada (8,05 ± 0,76%).). Os pães que apresentaram menor teor de extrato etéreo foi o que teve a inclusão de farinha cozida aromatizada (,47 ± 0,61%). Os pães com a inclusão das diferentes farinhas apresentaram um valor nutricional mais elevado comparado aos que não receberam a farinha de peixe. Conclui-se que a farinha a partir de carcaças de tilápia proporcionou excelente valor nutritivo ao pão, devido ao seu alto teor de proteína e cinzas. O mais recomendado entre as metodologias utilizadas neste estudo seria a inclusão da farinha elaborada pela metodologia do cozimento de carcaças de tilápia. A análise microbiológica mostrou que os pães estavam aptos à alimentação humana, estando dentro dos padrões microbiológicos exigidos pela legislação.
O presente trabalho teve como objetivo avaliar as características de composição química, sensorial e microbiológicas de panquecas sem glúten, elaboradas com farinha de arroz enriquecida com mix desidratado de peixe (salmão e tilápia). Para a obtenção desse mix desidratado de salmão (20%) e tilápia (80%) foram utilizadas carcaças (espinhaço sem filés, sem nadadeiras e cabeça) de salmão e tilápia do Nilo. Os níveis de inclusão do mix desidratado nas massas de panquecas foram de 0%, 5%, 10% e 15%, totalizando-se quatro tratamentos. As panquecas avaliadas estavam aptas para o consumo, pois estavam dentro dos padrões microbiológicos abordados pela legislação brasileira. Em relação à análise de composição centesimal, observou-se que o teor de proteína apresentou um efeito linear positivo e o carboidrato linear negativo, sendo que à medida que aumentou a inclusão do mix desidratado de peixe, ocorreu um aumento nos teores de proteína de 7,67% para 9,91% e redução de 43,01% para 39,68%, nos teores de carboidratos. Já para os demais nutrientes observou-se um efeito quadrático. A inclusão do mix desidratado de peixe na massa e na panqueca recheada não interferiu nos atributos sensoriais (aroma, sabor, textura, cor e aparência). Para a intenção de compra, a nota média foi 3,62 para a massa de panqueca, porém quando recheada os provadores deram a nota 4,16 (possivelmente compraria) quando incluído 15% de mix desidratado. O índice de aceitação foi muito bom para massa de panqueca quanto para a panqueca recheada, obtendo aceitação de 77,53% e 83,50% respectivamente. Portanto, o mix desidratado proteico de salmão (25%) e tilápia (80%) pode ser incluído no produto em até 15%, sem restrição, aumentando seu valor nutricional. Sendo assim, mais uma opção de produto sem glúten para os celíacos, além de colaborar com a preservação ambiental.
