The use of underutilized resources, with the aim of increasing productivity and creating wealth, will increasingly deserve the attention of the wine sector. The treatment of agricultural by-products will increasingly enter the priority agenda of the agribusiness sector, with a view to its use, the environment's re-cleanliness and, in many cases, whenever possible, for both purposes. Solid waste from the process of grape industrialization, when not adequately disposed, is aggressive to the environment. Such residues release significant amounts of liquid effluents when disposed in the soil, and this liquid contains high content of nutrients, organic matter, and other elements that can change the environment, especially of streams and sources, causing the death of aquatic beings. However, if properly used, they can be used as raw materials for other purposes. The solid residues of industrially processed grapes, which may have some potential economic interest, are pomace, seeds, liquid (lees), and other materials. In this context, this chapter presents the description of these by-products and their potential for use.
ResumoSintomas de impacto nutricional (SIN) e anemia são alterações fisiológicas frequentemente observadas em pacientes oncológicos antes do diagnóstico e durante o tratamento da radioterapia e quimioterapia podendo interferir na condição geral do paciente e na incidência da caquexia do câncer. O objetivo deste estudo foi avaliar a incidência de caquexia, SIN e anemia em pacientes oncológicos. Foi avaliado o peso, sintomas que interferem no consumo alimentar e a hemoglobina (usual/inicial/final) em pacientes com câncer atendidos no ambulatório de oncologia em Guarapuava-PR, vinculado ao Sistema Único de Saúde. Participaram do estudo 147 pacientes, sendo o câncer de mama o mais prevalente (45,6%). A caquexia esteve presente em diferentes graus no momento do diagnóstico ao final do tratamento. Ao agrupar por tipos de câncer no período inicial ao tratamento o câncer de estômago foi o que apresentou maior percentual de caquexia terminal (n=5, 31,3%) e o câncer de mama o que apresentou maior percentual de ganho de peso (n=25; 37,3%), com consequente redução dos indivíduos com caquexia. No período final do tratamento os pacientes com câncer de estômago mantiveram a maior prevalência de caquexia terminal (n=7; 43,8%) e o câncer de mama o que apresentou maior ganho de peso (n=39; 58,2%). Os sintomas de impacto nutricional mais frequentes foram xerostomia (n=84; 57,1%) e constipação intestinal (n=33; 22,4%). Entre os períodos, pacientes com câncer de estômago apresentaram maior percentual de anemia, respectivamente (n=10; 62,5%; n=11; 68,8%), e somente os pacientes com câncer de mama que apresentaram diferença significante (p=0,01). Evidenciou-se no estudo grande prevalência de caquexia, frequente incidência de anemia e de sintomas de impacto nutricional. Palavras-chave:Câncer. Caquexia. Perda de peso. Avaliação nutricional. The goal of this study was evaluate cachexia, NIS and anemia incidence in cancer patients. It was evaluated, weight symptoms that interfere in food consumption and hemoglobin (usual/initial/ending period) in cancer patients attended in oncology clinic at Guarapuava-PR, linked to Brazil's publicly funded health care system (SUS). O objetivo deste estudo foi identificar as barreiras e o estágio de mudança de comportamento para a prática de atividade física no tempo livre em uma amostra de pacientes com hipertensão arterial. Estudo transversal realizado com 55 pacientes (69,1% de mulheres, idade entre 31-89 anos) que frequentavam o Modelo de Atenção as Condições Crônicas de uma Unidade Básica de Saúde de Guarapuava, Paraná. As barreiras para prática de atividades físicas foram determinadas por instrumento padronizado e validado. Dezenove barreiras foram classificadas em “barreira percebida” (sempre e quase sempre) e “barreira não-percebida” (às vezes, raramente e nunca). As barreiras foram categorizadas nas dimensões ambientais, sociais, fisiológicas/físicas e psicológicas/comportamentais. Os estágios de prontidão foram usados para classificar os pacientes em “ativos” (estágios ação e manutenção) e “não ativos” (estágios pré-contemplação, contemplação e preparação). A frequência (%) de barreiras percebidas foi associada à prontidão para prática de atividades físicas por meio do teste Qui-quadrado e Exato de Fisher. As três barreiras mais prevalentes foram: “falta de energia ou cansaço” (54,5%), “falta de clima adequado” (47,3%) e “limitações físicas” (42,6%). Foram identificadas 10 barreiras mais frequentes em pacientes não ativos comparados aos ativos, sendo quatro fisiológicas/físicas, três psicológicas/comportamentais, duas ambientais e uma social. Pacientes obesos apresentaram maior quantidade de barreiras fisiológicas/físicas que os não-obesos. Considerando os fatores limitantes na incorporação de uma vida mais ativa em pacientes hipertensos, o presente estudo pode auxiliar a estabelecer estratégias específicas no contexto da atenção básica.
Abstract. This study analyzed the mineral content (N, P, K, S, Ca, Fe, Mg, Mn, Fe and Zn), anthocyanins and phenolic compounds in flours produced from residues of different grape cultivars from the wineries in the Southern region of Brazil. Mineral analysis showed a significant difference for all grape cultivar, with the exception for phosphorus content. Residues from cv. Seibel showed higher levels of N, Cu and Mg. The cultivars Ancelotta, Tanat and Bordô present higher contents of K, Zn, Mn, Fe and Ca. For the concentration of anthocyanins, cultivars Cabernet Sauvignon (114.7 mg / 100g), Tannat (88.5 mg / 100 g) and Ancelotta (33.8 mg/100 g) had the highest concentrations. The cultivars Pinot Noir (7.0 g AGE / 100 g), Tannat (4.3 g AGE / 100 g), and Ancelotta (3.9 g AGE / 100 g) had the highest content of phenolic compounds. Considering these results, it became evident the potential of using the residue of winemaking to produce flour for human consumption, highlighting the grapes 'Tannat' and 'Ancellotta'.
A desidratação é uma alternativa viável para utilizar morangos que não possuem formato, tamanho ou cor adequados para a comercialização. Este estudo teve como objetivo avaliar a aceitação sensorial e características físico-químicas de morangos desidratados com diferentes tratamentos. Os tratamentos utilizados foram aplicados antes da secagem em estufa a 60°C e consistiram em 1 - 60% sacarose + ácido ascórbico; 2 - 60% sacarose + ácido cítrico; 3 - 60% sacarose + pectina; 4 - 80% sacarose + ácido ascórbico; 5 - 80% sacarose + ácido cítrico; 6 - 80% sacarose + pectina e 7 - tratamento controle (sem adição de sacarose e/ou ingrediente). Os tratamentos foram avaliados por meio de análise sensorial com escala hedônica com julgadores não treinados. Foram avaliados o teor de sólidos solúveis, acidez titulável, pH, coloração, ácido ascórbico, antocianinas e compostos fenólicos dos frutos desidratados. Os tratamentos osmóticos de 80% sacarose + ácido ascórbico ou pectina foram bem aceitos pelos provadores e mostraram-se melhores que o tratamento controle. O teor de sólidos solúveis variou entre os tratamentos e foi maior para os morangos tratados com 80% sacarose + pectina, também apresentando maior relação sólidos solúveis/acidez titulável. O teor de compostos fenólicos, antocianinas e ácido ascórbico foi maior para os tratamentos 80% sacarose + pectina ou ácido ascórbico ou ácido cítrico, os quais também apresentaram coloração vermelha mais intensa. O morango desidratado com pré-tratamento 80% sacarose + ácido ascórbico ou pectina mostrou-se boa opção de agregação de valor a essa fruta, visto que apresentou boa aceitação e manutenção de compostos bioativos.DOI: 10.12957/demetra.2018.31920
Introduction: Malnutrition is present in 25% to 70% of hospitalized patients, being caused by factors such as may predict an increased risk of complications, reduced response to treatment, lower quality of life, increased costs and length of hospitalization and increased mortality. Thus, the objective was to apply Global Leadership Initiative on Malnutrition (GLIM) to hospitalized patients and the association with age, gender, different pathologies and food intake. Methods: Longitudinal and retrospective study. Sociodemographic, anthropometric, clinical and dietary data were collected from adult patient nutritional records, evaluated between 2015 and 2018, in two hospitals with specialized services and clinics that serve the Unified Health System (SUS). The univariate and multivariate multinomial logistic regression model (RLM) was used to determine the relative risk (odds ratio), adjusted for the following variables: age, sex, pathologies and food intake and compared with the GLIM classification. Results: Patients had significant weight reduction (usual weight to current weight) and % weight loss of -7.6% (95% CI -8.4 - -6.8). Age, pathologies, presence of inflammation, and reduced food intake all contribute to weight loss and malnutrition. The predominant diseases are highly catabolic and have a high response to the presence of systemic inflammation, specifically cancer patients who presented in the multivariate analysis chances of 2.21 times of being with moderate malnutrition and 2.72 times severe malnutrition. Conclusion: The prevalence of malnutrition was 46.8% of the total patients with significant relative risk regarding age, especially with cancer diagnosis and when reported reduced/inadequate food intake.
