Nous avons mesuré la composition chimique (teneur en eau, matières grasses, minéraux, protéines et énergie) et de la carcasse de 8 0 jeunes bovins mâles entiers de différentes races (37 Frisons, 21 Chavolais, 12 Limousins et 10 Salers) âgés de 9 à 17 mois. Parallèlement à cette mesure directe de la composition des carcasses, nous avons enregistré à l'abattage les valeurs d'un certain nombre de critères (poids de carcasse, poids des dépôts adipeux périrénaux et précruraux, compacité de la cuisse, poids des os canon). Nous avons également mesuré la composition tissulaire d'un morceau monocostal situé au niveau de la « i W côte » et la composition chimique de la viande désossée de ce morceau (muscles T gras). Nous avons relié par régression progressive le poids de, constituants chimiques de la carcasse à ces différents critères. Nous avons tenu compte dans les équations d'estimation de l'effet de la race des animaux s'il était significatif. Nous avons également mesuré l'effet de l'âge des animaux sur les équations. Les principaux critères d'estimation retenus ont été le poids de carcasse, le poids des dépôts adipeux et des muscles de la a me côte » et le poids des os canon. Les poids des constituants chimiques de la viande désossée de la « me côte n n'ont pas apporté d'information significative supplémentaire. La race a eu une influence significative sur les équations d'estimation des poids d'eau et de minéraux. L'âge a eu un effet sur l'équation d'estimation du poids des protéines, mais cet effet n'a pas été pris en considération pour des raisons discutées dans le texte. Les coefficients des différentes équations sont rapportés au tableau 4. Les écarts-tvpes résiduels de ces équations sont faibles. Exprimés en pourcentage du poids de carcasse des animaux, ils sont égaux à 1 , 14 p. 100 (eau), 1 , 21 p. 100 (matières grasses), o,_ 34 p. 1 00 (protéines), 0, 73 p. 100 (minéraux) et m cal/g (énergie). La précision de ces équations a été comparée à celle qu'ont obtenue d'autres auteurs.
