Queijos de coalho elaborados a partir de leite tratado termicamente e inoculado a 1% com cultura termofílica (Streptococcus thermophyllus e Lactobacillus bulgaricus) foram comparados com queijos obtidos tradicionalmente. Considerou-se no estudo a intensidade de cura e a aceitabilidade do produto. A maturação foi realizada a temperatura ambiente (29 °C) e em câmara fria (12 °C) durante dez dias. Os queijos apresentaram índices de maturação próximos e valores ligeiramente maiores para aqueles inoculados com fermento lático e maturação a temperatura ambiente. A média de aceitabilidade (ao nível de 5% de significância) evidenciou a possibilidade de obtenção de queijo de coalho a partir de leite pasteurizado e inoculado com S. thermophyllus e L. bulgaricus. As médias atribuídas pelos provadores indicaram certa preferência por este queijo, quando maturado a temperatura ambiente.
RESUMO -O objetivo deste trabalho foi promover uma avaliação nutricional da mistura protéica desengordurada, obtida do gergelim (Sesamum indicum L.), com a farinha extrudada do caupi (Vigna unguiculata L. Walp), utilizando-se métodos físicos, bioquímicos, nutricionais e sensoriais. Usando-se semente integral do gergelim, com 54,08% de óleo e 21,83% de proteína, obteve-se a semente descascada com baixa concentração de oxalatos, que foi usada para a produção de farinha desengordurada de gergelim (FDG) contendo 2,81% de óleo e 59,16% de proteína. A principal característica desta farinha foi sua alta concentração de aminoácidos sulfurados (30,88 mg/g proteína). Esta FDG foi usada como complemento da proteína da farinha do caupi obtida pelo processo de cozimento por extrusão (FEC), o que ocasionou a inativação de grande parte dos inibidores de tripsina. A proteína da farinha FEC mostrou uma concentração de 24,29%, um baixo conteúdo de aminoácidos sulfurados (17,22 mg/g proteína) e alto teor de lisina (58,47 mg/g proteína). EFFICIENCY OF DEFATTED SESAME FLOUR AS A PROTEIC SUPPLEMENT OF EXTRUDED COWPEA FLOURABSTRACT -The purpuse of this work was to evaluate the nutritional and organoleptic efficiency of the defatted proteic mixture obtained from gergelim, with extruded flour from cowpea beans, using physical, biochemical, nutritional and sensory methods. The physical chemistry analyses showed out 100% of samples were in accordance with the Federal Legislation, while microbiological evaluation observed 96.43% of agreement. Queijos de coalho, elaborados com leite cru e pasteurizado/inoculado com 1% de cultura termofílica (Streptococcus thermophylus e Lactobacillus bulgaricus), maturados sob temperatura ambiente (29 oC) e temperatura de refrigeração (10 oC) foram estudados aos 4, 7, 30, 60, e 90 dias, quanto aos aspectos físico-químicos e microbiológicos. Os valores de pH foram maiores para os queijos produzidos com leite pasteurizado do (QLP) como resultado da ação das colônias do fermento lático sobre a lactose, implicando em alteração do sabor e textura do queijo. Quanto aos valores de estafilococos coagulase positiva, apesar de ter ocorrido redução no número de colônias/g de queijo, durante a maturação, quase todas as contagens apresentaram-se acima do limite permitido pela legislação, evidenciando más condições do produto. Abstract Cheeses known as queijo de coalho made with raw and pasteurized milk with 1% of Streptococcus thermophilus and Lactobacillus bulgaricus, maturated at room and refrigeration temperature (29 ºC), were studied at 4, 7, 30, 60 and 90 days its physicalchemical and microbiological aspects. The pH values were greater for the cheeses produced with pasteurized milk (QLP) as result of the action of the starter colonies in lactose, leading to taste and texture alteration. For positive coagulase staphylococcus values, a reduction in the number of colonies/g of cheese occurred, during maturation, almost all counting were above the limit allowed by the legislation, evidencing product bad conditions.
Procedeu-se estudo bioquímico e sensorial de queijos de coalho, elaborados a partir de leite cru (QLC) e leite pasteurizado/inoculado com Streptococcus thermophilus e Lactobacillus bulgaricus (QLP), mantidos sob temperatura ambiente (TA) e temperatura de refrigeração (TR). A maturação dos queijos foi avaliada mediante análise eletroforética das frações da caseína, utilizandose gel de poliacrilamida na presença de sódiododecilsulfato (SDSPAGE). Também foram determinados o teor de tirosina e o índice de maturação. O método SDSPAGE não apresentou resultados diferenciais entre os mesmos tipos de queijos sob diferentes temperaturas no período estudado, já os teores de tirosina elevaramse durante o mesmo período. O índice de maturação evidenciou que o QLP foi o tipo de queijo que mais maturou. Os resultados da análise sensorial mostraram que não houve diferença significativa ao nível de 5% entre o QLCTR e QLPTR aos 4, 30 e 60 dias. Verificouse certa preferência dos provadores pelo QLCTR aos 4 e 60 dias. Abstract Cheeses known as queijo de coalho made from raw milk (QLC) and pasteurized milk inoculated with Streptococcus thermophilus and Lactobacillus bulgaricus (QLP) were analyzed in the biochemical aspects during 4, 7, 30, 60 and 90 days of maturation at room temperatureTA (29oC) and refrigerated temperatureTR (10oC) and sensorial evaluation was carried out in the 30th and 60th day of maturation at TR. The maturation of the cheeses was evaluated through electrophoresis of the casein fractions by using poliacrylamida gel in the presence of sodiumdodecylsulfato (SDSPAGE), tyrosine and maturation index. SDSPAGE presented no difference among the same types of cheeses under different temperatures. The tyrosine index increased during the same period. The maturation index showed the highest value to QLP followed by QLCTR, QLPTR and QLCTA. The results of the sensorial evaluation showed no significant difference at the level of 5% between QLCTR and QLPTR to the fourth, thirty and sixty days in spite of QLCTR have presented a certain preference to the 4 and 60 days.
