RESUMO:Os processos de compostagem têm se estabelecido como formas eficientes de minimizar a problemática ambiental e de reduzir o volume de resíduos sólidos orgânicos descartados. Esse trabalho tem como objetivos monitorar o processo de compostagem de resíduos agroindustriais e avaliar a qualidade do composto final com base na Portaria N° 01/83 do Ministério da Agricultura, Pecuária e Abastecimento. Para isso foram montadas pilhas de resíduos agroindustriais em solo exposto com monitoramento dos parâmetros: temperatura, pH, sólidos voláteis, umidade e relação C/N. Ao final da compostagem foi avaliado a qualidade do composto produzido, o qual alcançou parcialmente os requisitos mínimos exigidos pela legislação brasileira, mostrando-se eficiente para o tratamento de resíduos agroindustriais. O feijão é um dos alimentos mais produzidos em todo o território nacional, sendo intensa a busca por cultivares produtivas, com boas características culinárias e diferentes propriedades nutricionais. Com o presente estudo, visou-se avaliar a influencia do cozimento na composição centesimal de oito cultivares de feijão-caupi: Costela de Vaca, BRS Marataoã, BRS Itaim, BR 17-Gurguéia, BRS Novaera, Paulistinha, Setentão e Patativa. Os grãos foram submetidos a dois procedimentos diferentes para realização das análises: in natura (farinha) e cozido (com maceração) sob pressão. Foram realizadas as determinações de umidade, cinzas, lipídios, proteínas, carboidratos, valor energético, pH, acidez e açúcares. Todas as análises foram realizadas em quadruplicata nas cultivares in natura e cozidas, sendo os resultados expressos como média ± desvio-padrão. Os resultados mostraram que o conteúdo de umidade variou de 7-11% nas cultivares cruas, com aumento após o cozimento (60-70%). Ao passo que, o conteúdo de proteínas, cinzas, carboidratos, valor energético e açúcares, diminuíram em todas as cultivares cozidas. Pode-se concluir que, dentre as cultivares analisadas, a Setentão foi a que apresentou o maior teor de proteína, antes e após o cozimento. Mesmo com redução nos demais parâmetros, as cultivares de feijão-caupi mantiveram características nutritivas e funcionais relevantes, apresentando um tempo de cocção entre 8 a 10 minutos, sendo consideradas de rápido cozimento e, portanto adequadas para atender a demanda atual dos consumidores.
O consumo de frutas in natura é crescente em todo o mundo devido a fatores que levam a modificações nos hábitos alimentares das pessoas, como o cuidado com a saúde e os aspectos nutritivos dos alimentos. O presente trabalho teve como objetivo avaliar a qualidade, quantificar os compostos bioativos e a capacidade antioxidante dos frutos de noni em cinco estádios de maturação. O trabalho foi desenvolvido no Laboratório de Tecnologia de Produtos de Origem Vegetal do Centro de Ciências e Tecnologia de Alimentos da Universidade Federal de Campina Grande, no Campus de Pombal - PB. Os frutos foram provenientes de plantios localizados na cidade de Fortaleza – CE, sendo colhidos diretamente na copa da planta, tomando-se como índice de colheita a coloração da casca. Foram realizadas avaliações físicas, físico-químicas, de compostos bioativos e capacidade antioxidante nos frutos. O delineamento experimental utilizado foi o inteiramente casualizado (p˂0,05). Características físico-químicas de sólidos solúveis, açúcares solúveis totais, açúcares redutores e relação SS/AT, aumentaram com o avanço da maturação. Para os compostos bioativos, o teor de ácido ascórbico aumentou de forma considerável com o avanço da maturação, assim como também valores representativos para os compostos fenólicos. Os frutos estudados apresentaram propriedade antioxidante, aumentando o poder redutor com o amadurecimento. Conclui-se que os frutos avaliados apresentaram quantidades consideráveis de compostos biologicamente ativos, podendo constituir como uma boa fonte de antioxidantes naturais.
O araçá (Psidium cattleianum) pertence a uma classe de frutos amplamente distribuídos no território brasileiro apresentando diferentes espécies. Embora ainda pouco explorado, pesquisas relatam a presença de compostos bioativos na composição das espécies atribuindo a estes frutos propriedades nutricionais e funcionais. Neste trabalho, avaliaram-se os aspectos físicos, físico-químicos, compostos bioativos e a capacidade antioxidante do araçá em diferentes estádios de maturação. As avaliações foram realizadas no Laboratório de Tecnologia de Produtos de Origem Vegetal do Centro de Ciências e Tecnologia de Alimentos da Universidade Federal de Campina Grande, no Campus de Pombal - PB. Os frutos foram provenientes de plantios localizados na cidade de Areia – PB, sendo colhidos diretamente na copa da planta, tomando-se como índice de colheita a coloração da casca. O delineamento experimental utilizado foi o inteiramente casualizado (p˂0,05). Características físico-químicas de sólidos solúveis, açúcares solúveis totais e relação SS/AT, aumentaram com o avanço da maturação. Para os compostos bioativos, o teor de ácido ascórbico aumentou consideravelmente e observou-se redução do teor de flavonoides com o avanço da maturação. Os compostos fenólicos apresentaram valores máximos nos frutos no estádio I e redução de mais de 50% para o estádio IV, assim como a capacidade de reduzir o radical DPPH diminuiu com o avanço da maturação. Com os resultados é possível concluir que os araçás avaliados, independente dos estádios de maturação apresentaram quantidades consideráveis de compostos biologicamente ativos, podendo constituir como uma boa fonte de antioxidantes naturais.
