<p><em>Rumah Tahfidz atau Yayasan Al Amaliyah Cikidang merupakan mitra binaan Universitas Al Azhar Indonesia. Yayasan diketahui memiliki UMKM pangan, berupa produk keripik. Namun, produk keripik UMKM Yayasan Al Amaliyah Desa Cikidang ditemukan belum memiliki izin edar (nomor P-IRT) dan masih dipasarkan secara terbatas. Banyak permasalahan yang ditemui masyarakat dalam pengurusan P-IRT dan pengembangan produk UMKM keripik, diantaranya adalah: (1) kurangnya pemahaman SDM mengenai produksi keripik yang baik sebagai salah satu syarat pengajuan izin edar, (2) kurangnya pemahaman mengenai manajemen tata kelola P-IRT, (3) belum berkembangnya pemasaran produk yang berkaitan karena tidak memiliki izin edar. Pelaksanaan abdimas pendampingan pengurusan P-IRT di Desa Cikidang dilakukan dalam 2 tahap utama, yaitu (1) Pengembangan kualitas dan wawasan SDM anggota UMKM mengenai sistem dan standar produk UMKM yang baik, (2) pelatihan keamanan pangan dan izin produk. Hasil pelaksanaan kegiatan Abdimas pendampingan pengurusan P-IRT bagi UMKM Pangan di Desa Binaan Cikidang memberikan sejumlah perubahan kepada para pelaku usaha keripik di bawah yayasan. Standarisasi produk keripik saat ini menjadi lebih baik dengan penggunaan label kemasan yang telah memenuhi kriteria label serta hasil pemeriksaan sarana produksi yang telah memenuhi standar persyaratan yang ditetapkan.</em></p><p><strong>Kata kunci: <em>Cikidang, Izin edar, Keipik, P-IRT, UMKM</em></strong></p>
<p><em>Abstrak</em>-<strong>Kesadaran konsumen dalam membaca label pangan dan untuk memahami isi label pangan masih sangat rendah. Diperlukan analisis mengenai tingkat kepatuhan mahasiswa dalam membaca label pangan, sehingga mahasiswa memiliki pemahaman yang lebih baik terhadap label pangan. Responden pada penelitian ini adalah mahasiswa dari Fakultas Sains dan Teknologi Universitas Al Azhar Indonesia angkatan 2015-2018. Metode pengambilan data pada penelitian ini adalah melalui kuisioner. Responden akan mengisi sendiri kuisioner yang diberikan dengan mengikuti instruksi yang akan dijelaskan sebelum pengisian kuisioner oleh tim pengambil data. Responden pada penelitian ini berjumlah 90 orang dengan jumlah perempuan 53,33% dan laki-laki 46,67%. Pengetahuan responden mengenai label pangan ada pada kategori baik yaitu 82,22% dan kategori cukup 17,78%. Sedangkan untuk tingkat kepatuhan, responden yang memiliki tingkat kepatuhan tertinggi berada pada kategori cukup yaitu 61,11%, kategori baik 36,67%, dan kategori kurang 2,22%. Data pada penelitian ini menunjukkan bahwa pengetahuan responden mengenai label pangan ada pada kategori baik dan tingkat kepatuhan dalam membaca label pangan ada pada kategori cukup.</strong></p><p><em>Abstract</em>- <strong>Consumer awareness in reading food labels and understanding the contents of food labels are still very low. An analysis is needed on the level of student compliance in reading food labels, so students have a better understanding of food labels. Respondents in this study were students from the Faculty of Science and Technology of Al Azhar University Indonesia class of 2015-2018. The data collection method in this study was through a questionnaire. Respondent’s will fill in the questionnaire given themselves by following the instructions that will be explained before filling out the questionnaire by the data collection team. Respondents in this study numbered 90 people with 53,33% women and 46,67% men. Respondents knowledge about food labels is in the good category that is 82,22% and 17,78% enough category. As for the level of adherence, respondents who had the highest level of adherence were in the sufficient category, namely 61,11%, the good category 36,67%, and the less 2,22% category. The data in this study indicate that respondents' knowledge about food labels is in the good category and the level of compliance in reading food labels is in the sufficient category.</strong></p><p><strong><em>Keywords</em></strong>–<em>Food Label, Food Label Knowledge, Decision-Making,Level of Compliance</em></p>
<p><strong>The MBKM program is a program to prepare graduates who are ready to work with areas of expertise and the needs of the world of work. The purpose of this study was to determine the perception of students, especially students of the Food Technology Study Program, Al-Azhar University, Indonesia, on the relationship between the MBKM program and the competencies of graduates that must be possessed in the future, or post-lecture period. The data source is obtained from an online survey conducted by the Ministry of Education, Culture, Research, and Technology Directorate General of Higher Education by involving 25 students of the Food Technology Study Program. The perceptions of those students towards the realm of graduate competence after participating in the MBKM program are: (1) the MBKM program is considered very useful, (2) The improvement of soft skills for graduates shows that there is a fairly good improvement, (3) MBKM activities are quite important in preparation for the post-campus period, (4) MBKM activities are by the needs of graduates, (5) Interested and intend to choose internships or work practices as learning activities outside the study program of interest.</strong></p><p><strong><em>Keywords</em> - </strong><em>Food Technology, Graduates, Learning outcomes, MBKM Program, Perception</em></p>
Cronobacter sakazakii is a foodborne pathogen, one of which due to the possession of invasion gene ompA. Ten C. sakazakii previously isolated from dried foods in Indonesia were found to own the ompA gene. This study aimed to evaluate the genetic relationship among these local isolates and their similarity with C. sakazakii references based on the ompA gene. DNA isolation was carried out using Chelex, the ompA gene was amplified with PCR followed by agarose gel electrophoresis and sequencing. The sequences were subjected to contig analysis using Bioedit software, and the results were analyzed for homology by the BLAST on NCBI website. The phylogenetic tree was constructed using MEGA v.6 with the maximum-likelihood algorithm and 1000 replication bootstrap. The result shows that C. sakazakii FWHb6 and FWHd16 were in one cluster with C. sakazakii ATCC 29544 known to invade the human intestine. In general, the ompA gene of the local isolates had a close genetic relationship with C. sakazakii references. This study suggests that local C. sakazakii possess similar invasion to other C. sakazakii. This finding can contribute to Cronobacter classification.
Pathogenic Escherichia coli (E. coli) has been implicated in a wide range of disease causing infections. It is essential to generate a method for detecting and differentiating each pathotype of E. coli which is more quickly and efficiently by using less reagent. This study aimed to evaluate a SYBR Green multiplex real-time PCR method for detecting four types of pathogenic E. coli. Two of multiplex real-time PCR system, 6-plex and 3-plex, were set to detect six different virulence factors from ETEC, EPEC, EHEC, and EIEC and evaluate the melting curves and specificity compared to simplex method. The results showed that 3-plex rt-PCR method gave more reliable melting curves than 6-plex. The 3-plex rt-PCR also provided similar melting value (Tm) to simplex system. The results of this specificity assay supported the selection of 3-plex rt-PCR conditions for detection of pathogenic E. coli.
