A banana é uma das frutas mais consumidas no mundo, sendo produzida na maioria dos países tropicais (SOUSA et al., 2003), representa a quarta fonte de energia depois do milho, arroz e trigo. Sua alta concentração de amido a partir do processamento em farinha é de interesse como fonte alimentar e propósito industrial. Em países como o Brasil e a Venezuela, onde se consome muito trigo importado, este pode ser mesclado com outros cereais e vegetais com alto conteúdo de amido como fontes de nutrientes com menos custos (PACHECO-DELAHAYE;TESTA, 2005).Segundo Adão e Glória (2005), a banana possui variável fonte de minerais, sendo um importante componente na alimentação em todo o mundo. Seu sabor é um dos mais importantes atributos de qualidade, a polpa verde é caracterizada por uma forte adstringência determinada pela presença de compostos fenólicos solúveis, principalmente taninos. À medida que a banana amadurece, ocorre polimerização desses compostos, com consequente diminuição na adstringência, aumento da doçura e redução da acidez (VILAS BOAS et al., 2001).Conforme o Sistema Brasileiro de Respostas Técnicas -SBRT (2006), as farinhas de bananas podem ser obtidas de secagem natural ou artificial, através de bananas verdes ou semiverdes das variedades, Prata, Terra, Cavendish, Nanica ou Nanicão. Quando bem processadas podem ser utilizadas em panificação e alimentos infantis. Sua qualidade depende de vários fatores incluindo matéria-prima, método de secagem, técnicas de procedimentos e forma de armazenamento.Segundo Loures (1989), instalações de fábricas de farinha de médio e pequeno porte podem ser localizadas próximas às fontes de alimento in natura a fim de estimular a agricultura, implantar novas indústrias alimentícias e favorecer criação de novos empregos, promovendo assim o aumento de renda per capita. AbstractThe objective of the present study was the physicochemical characterization and the microbiological control during the processing of the green banana flour (Musa spp.), Prata cultivar, aiming at the use of the flour in bread-making, dietary products and children's food. To obtain the flour, the fruits were cut, immersed in sodium meta-bisulfite, dehydrated, and ground. The following criteria were determined: humidity; ethereal extract; raw protein; raw fiber; ash; glicidic fraction; starch; caloric value; pH; total titratable acidity; vitamin C; macrominerals (K, P, Ca, Mg, S and N); microminerals (B, Cu, Mn, Zn and Fe); coliforms at 45 °C; filamentous fungi and yeast; Bacillus cereus; Salmonella sp.; Staphylococcus aureus; and the quantitative counting of aerobic mesofile. The results indicated that the process for the production of banana flour is viable for Prata green banana due to its rich content of starch, protein, potassium, phosphorus, magnesium, zinc, copper, and high caloric value. Eugenia luschnathiana (O.Berg) Klotzsch ex B.D.Jacks. (Myrtaceae) species, commonly known as pitomba-da-baía, occurs in Restinga region in the state of Ceara and has medicinal potential. The present study aimed to characterize the anatomy of E. luschnathiana leaves in the rainy and dry seasons, as well as in the sun and shade in the Restinga region of Ceara, aiming to generate useful information to understand the adaptive value of morphoanatomic responses to the natural conditions of occurrence of the species. Collections were performed at the State Botanical Park of Ceara, and leaves were completely expanded and fixed in FAA70, being replaced by 70% ethanol after 24 h. Samples were submitted to standard plant anatomy methodologies in order to qualitatively and quantitatively analyze the leaf blade and petiole structures. As a result, there were differences among sun and shade leaves, rain and dry. In relation to luminosity, most determinations were higher in sun leaves: trichome density and frequency; trichome scar frequency; stomatal frequency, stomatal index, length, width and area of stomata; thickness of leaf blade, mesophyll, cuticle, epidermis, palisade and spongy parenchyma; length and width of the central vein, area of the central vein vascular bundle, number of secretory cavities in the central vein; length and width of the petiole, area of the petiole vascular bundle; amount and area of secretory cavities in the petiole. In shade leaves, only the number of druses in the central vein and petiole were larger. Regarding seasonality, all determinations were higher in the rainy season, except for the length and width of the central vein; number of druses in the central vein and petiole; length of the petiole, area of the vascular bundle and secretory cavities of the petiole. Therefore, it could be concluded that E. luschnathiana has great acclimative capacity to conditions of intense luminosity and periods of water deficit.

RESUMO:O presente trabalho teve por objetivo observar o uso de plantas medicinais por moradores de Quixadá-Ceará. A amostragem adotada foi 5% da população urbana adulta na sede do município, o que resultou em 263 domicílios visitados, onde foi aplicado um questionário semi-estruturado. De acordo com os resultados ainda temos um número expressivo de pessoas que fazem uso de plantas medicinais na cidade de Quixadá-Ceará (57,41%), e que a maioria dos entrevistados (97%) considera que o uso indiscriminado de plantas medicinais não causa nenhum problema à saúde. A maioria dos entrevistados foram mulheres (63,57%) e o maior número de informações e conhecimentos sobre plantas medicinais concentrou-se na faixa de 51-60 anos (24,71%). Com relação ao nível de escolaridade, 34,22% dos entrevistados afirmou ter ensino médio completo. A família botânica mais representativa foi a Lamiaceae (21,05%) e a espécie mais citada foi a erva-cidreira. Dos entrevistados 93,37% consideraram utilizar o chá como medicamento e 6,63% alegaram fazer a utilização do mesmo como alimento. Quanto à frequência do uso de plantas medicinais de forma contínua, 27% alegaram fazer o uso diariamente. This study aimed to observe the use of medicinal plants by residents from Quixada-Ceara. The sample used was 5% of the adult urban population in the county seat, which resulted in 263 households visited, where we applied a semi-structured questionnaire. According to the results, there is still a significant number of people who uses medicinal plants in the city of Quixada-Ceara (57.41%), and the majority of participants (97%) consider that the indiscriminate employment of medicinal plants do not cause any health problem. Most respondents were female (63.57%) and the highest number of information and knowledge about medicinal plants were concentrated among 51-60 years old individuals (24.71%). In regard of the educational level, 34.22% of the participants claimed to have completed high school. The botanical family Lamiaceae was the most representative (21.05%) and the most cited specie was the lemongrass. 93.37% of the respondents pledged to use tea as medicine and 6.63% claimed to use it as food. A espécie Cryptostegia madagascariensis Bojer ex Decne., natural de Madagascar, na África, após ser introduzida no Brasil vem proliferando-se rapidamente em extensas áreas no Nordeste brasileiro. Sua presença no bioma caatinga vem causando grande preocupação para as comunidades extrativistas, visto que essa invasora causa morte de espécies nativas de alto valor socioeconômico como a Copernicia prunifera (Mill) H. E. Moore., popularmente chamada de carnaúba. O presente trabalho objetivou avaliar a estrutura de um fragmento de caatinga infestado por C. madagascariensis. Próximo ao município de Pacatuba-CE uma área de carnaubal foi delimitada e para realizar uma avaliação da estrutura da comunidade invadida, foram utilizados cálculos que são referências em estudos fitossociológicos como, índice de valor de importância, índice de Shannon-Wiener (H’), índice de impacto ambiental de espécies exóticas (IIAE), além das densidades e frequências relativas e absolutas dos indivíduos. A elevada frequência e densidade relativa da invasora, o baixo H’ (1,86) e IIAE de 0,69, demonstram como a estrutura e diversidade da comunidade está sendo afetada pela invasão. Concluímos que é urgente a intervenção e controle dessa invasora, uma vez que a vegetação nativa está sendo ameaçada. Structure of a Fragment of Caatinga Infested by Cryptostegia madagascariensis Bojer ex DecneA B S T R A C TThe species Cryptostegia madagascariensis Bojer ex Decne., natural from Madagascar, in Africa, after being introduced in Brazil, is pullulating quickly extensive areas of Brazilian Northeast. Its presence in the caatinga bioma is causing considerable preoccupation to the extractivist communities, since this invader is causing the death of native species with high socioeconomic value as the Copernicia prunifera (Mill) H. E. Moore., popularly known as carnaúba. The objective of the present study was to evaluate the structure of a fragment of caatinga infested by C. madagascariensis. Nearby the city of Pacatuba, CE, an area of carnauba forest was delimited to perform an evaluation of the invaded community structure. We utilized calculations that are reference in phytosociological studies as, importance value index, Shannon-Wiener Function (H’), environmental impact of alien species (IIAE), densities, relative and absolute frequencies of the subjects. The high frequency and relative density of the invasive species, the low H’ (1.86) and 0.69 IIAE, demonstrate how the structure and diversity of the community is being affected by the invasion. We concluded that an intervention is urgent the intervention and control of this invasive species, since the native vegetation is being threatened.Keywords: Invasion, biodiversity, carnaúba palm.

RESUMOObjetivou-se, neste trabalho, avaliar a estabilidade físico-química e microbiológica da pré-mistura de bolo elaborada com 60% de farinha de banana em substituição à farinha de trigo, durante 120 dias de armazenamento. O delineamento experimental utilizado foi o inteiramente casualizado, com cinco tratamentos (tempo de armazenamento -0, 30, 60, 90 e 120 dias) e cinco repetições. Durante o armazenamento, a cada 30 dias foram realizadas as determinações de umidade, pH, acidez total titulável (ATT), vitamina C, coliformes a 45ºC, Bacillus cereus, Salmonella sp., fungos filamentosos e leveduras. A avaliação físico-química da pré-mistura manteve suas características com pequenas variações durante o armazenamento em temperatura ambiente. A variação mais expressiva foi observada quanto aos parâmetros pH e ATT. A pré-mistura não apresentou alterações durante o armazenamento com relação ao desenvolvimento dos patógenos: coliformes a 45ºC, Bacillus cereus, Salmonella sp., fungos filamentosos e leveduras.Termos para indexação: Musa spp., banana, panificação, vida de prateleira, armazenamento. ABSTRACTThe objective of work was to evaluate the physicochemical and microbiological stability of a cake pre-mixture made with 60% of green banana flour instead of wheat flour during a storage period of 120 days. The experimental delineation utilized was entirely randomized, with 5 treatments (time of storage -0, 30, 60, 90 and 120 days) and 5 repetitions. During storage, the following determinations were made for each 30-day period: moisture, pH, total titratable acidity (TTA), vitamin C, coliforms at 45ºC, Bacillus cereus, Salmonella sp., filamentous fungi and yeasts. The physical-chemical evaluation showed that the pre-mixture kept its characteristics with small variations during storage at room temperature. The most expressive variation was observed in the pH and TTA parameters. The pre-mixture remained without alterations during the storage with regard to the growth of the pathogens: coliforms at 45ºC, Bacillus cereus, Salmonella sp., filamentary fungus and yeasts. PHYSICAL AND CHEMICAL CHANGES DURING TOMMY ATKINS MANGOES DEVELOPMENT IN SÃO FRANCISCO VALLEY, PETROLINA, PE, BRAZILABSTRACT -The objective of this study was to characterize the mango (Mangifera indica L.) fruit growth, cv. Tommy Atkins, from anthesis to commercial harvest, identifying when the mango reaches the harvest maturity stage based on physical and physicochemical determinations. The fruits were harvested at 35, 49, 63, 70, 77, 84, 98 and 112 days after the anthesis (DAA), and the following determinations were made: longitudinal diameter, ventral diameter, transversal diameter, product of the diameters, fresh mass, dry mass, water content and percentage, Blush scale for skin color and soluble solids. This study indicated that mango cv. Tommy Atkins delayed 98 DAA to reach the maturity and the dry mass, among those studied, is the best growth indicator.

RESUMO -O gênero Croton L., pertence à família Euphorbiaceae presente no bioma Caatinga do Nordeste brasileiro. O estudo objetivou avaliar a infl uência do ciclo circadiano e da sazonalidade no rendimento e na composição química dos óleos essenciais de Croton blanchetianus Baill., Croton nepetifolius Baill. e Croton zehntneri Pax & K. Hoff m. Para estudo do ciclo circadiano, as folhas foram coletadas no horário de 8, 12 e 20h e para a sazonalidade as coletas foram realizadas no horário de 8h. O ciclo circadiano e a sazonalidade infl uenciaram o rendimento apenas de C. zehntneri, indicando maior rendimento na colheita às 12 horas e na estação seca. A composição química das espécies estudadas foi infl uenciada pelo ciclo circadiano e a sazonalidade, constatando-se que determinados compostos só são produzidos em horários e estações específi cas. Portanto, os fatores ambientais estudados interferem no rendimento e composição química dos óleos essenciais das espécies de Croton spp. To study the circadian cycle, the leaves were collected at 8:00, 12:00 and 20:00 and for the seasonal collections they were carried out at 8h. The circadian cycle and seasonality only infl uenced the yield of C. zehntneri, indicating a greater yield in harvest at 12:00 and in the dry season. Chemical compositions of C. blanchetianus, C. nepetifolius and C. zehntneri oils were infl uenced by the circadian cycle and seasonality demonstrating that certain compounds are only produced at specifi c times and seasons. Therefore, the studied environmental factors aff ect the yield and chemical composition of essential oils of species of Croton. Palavras

The species Eugenia punicifolia (Kunth) DC. (myrtle) occurs in the coastal region of the state of Ceará and has ecological and medicinal importance. This study aimed to characterize the leaf anatomy of myrtle (E. punicifolia) in the rainy and dry seasons, as well as in the sun and shade in the restinga region of the state of Ceará and to contribute to the understanding of the morphoanatomic variations in response to the natural conditions of the occurrence of this species. For this, collections of fully expanded leaves were performed at the Botanical Park of Ceará and fixed in FAA70, being replaced by 70% ethanol after 24 hours. The usual anatomical procedures were then performed in order to qualitatively and quantitatively analyze the leaf blade, petiole and epidermis structures. As a result, it was found that myrtle has xeromorphic characteristics such as thick cuticle, hypoestomatic leaf and sclerenchyma fibers in the median vein vascular bundles. It was concluded that E. punicifolia has great plasticity to adjust well under the analyzed conditions.
