Resumo A água de coco vem ganhando espaço no mercado como uma bebida de vasto potencial comercial, pois além de ser um produto natural, possui baixo teor calórico, considerável valor nutricional e apresenta aroma e sabor suaves e agradáveis. Apresentando-se como uma bebida leve, refrescante e pouco calórica, composta de água, açúcares, proteínas, vitaminas e sais minerais, sendo apresentada como possível substituta às bebidas utilizadas para reidratação após os exercícios físicos, cujas características são alteradas na pré, pós-colheita e após processada. Neste contexto este trabalho objetivou avaliar as características físico-químicas de qualidade da água de coco anão verde industrializadas e comercializada no sertão paraibano e cearense durante o armazenamento simulado. Foram coletadas e identificadas, amostras em duas unidades industriais, no dia de sua fabricação, sendo estas transportadas para análise de qualidade até o tempo de vida útil mercadológico, sendo utilizado um planejamento experimental fatorial com as variáveis temperatura (2, 7 e 12 °C) e tempo (1, 15 e 30 dias). Os parâmetros avaliados foram: turbidez, condutividade, viscosidade, pH, sólidos solúveis totais, acidez total e ácido ascórbico. O binômio tempo x temperatura influenciou consideravelmente os parâmetros analisados durante o armazenamento, onde observou-se diminuição nos valores de pH, vitamina C, condutividade elétrica e sólidos solúveis totais para ambas as indústrias e aumentos simultâneos para as indústrias quanto aos parâmetros analisados de turbidez, viscosidade, e acidez total titulável. Sugere-se como forma de garantia da manutenção da qualidade da água de coco à implantação e monitoramento de Boas Práticas de Fabricação para as unidades produtoras. <p>O presente trabalho teve como objetivo estudar as características físicas, químicas e físico-químicas dos frutos da murta (<em>Eugenia gracillima </em>Kiaersk.) no estádio de maturação “maduro”. Os frutos de murta foram colhidos em área de vegetação nativa, na propriedade rural da família Lermen, localizada na Serra dos Paus Dóias - Chapada do Araripe, município de Exu, PE. Após a colheita, os frutos foram transportados para o Laboratório de Ecofisiologia Vegetal da Universidade Estadual do Ceará, para a realização das análises físicas, químicas e físico-químicas: coloração da casca; diâmetros longitudinal e transversal; massas fresca, seca e de água e teor de água; sólidos solúveis totais (SST), acidez total titulável (ATT), pH, relação SST/ATT, carboidratos (amido, açúcares solúveis totais, açúcares redutores e açúcares não redutores); vitamina C; pectinas; fenólicos; antocianinas; flavonoides amarelos e carotenoides. Os frutos da murta (<em>Eugenia gracillima </em>Kiaersk.) são relativamente pequenos com formato levemente ovalado e com coloração 100% violeta quando maduros. Apresentaram ótima qualidade para consumo pelo conteúdo dos sólidos solúveis totais (15,08 °Brix), relação SST/ATT (18,37), açúcares solúveis totais (11,61%) e açúcares redutores (7,80%), como também são frutos ricos em vitamina C (160,62 mg/100 g de massa fresca do fruto) e antioxidantes.</p><p align="center"><strong><em>Physical and physico-chemical fruits characteristics of myrtle</em></strong></p><p><strong>Abstract</strong><strong>: </strong>The present work aimed to study the physical, chemical and physico-chemical fruits characteristics of myrtle (<em>Eugenia gracillima</em> Kiaersk.) in maturation stage "mature". The fruits of myrtle were collected in an area of native vegetation in rural Lermen family property, located in the Serra dos Paus Dóias - Araripe, municipality of Exu, PE. After harvest, the fruits were transported to the Laboratory of Plant Ecophysiology, Ceará State University, to the achievement of physical, chemical and physico-chemical analysis: peel color; longitudinal and transverse diameters; fresh, dry mass and water content and water; total soluble solids (TSS), titulable total acidity (TTA), pH, TSS/TTA, carbohydrates (starch, total soluble sugars, reducing sugars and non reducing sugars, vitamin C, pectins, phenolics, anthocyanins, yellow flavonoids and carotenoids. The myrtle fruit (<em>Eugenia gracillima</em> Kiaersk.) are relatively small with slightly oval in shape and staining with 100% purple when ripe. Showed excellent quality for consumption for the content of total soluble solids (15.08°Brix), TSS/TTA (18.37), total soluble sugars (11.61%) and reducing sugar (7.80%), as well fruits are rich in vitamin C (160.62 mg/100 g fresh weight of fruit) and antioxidants.</p><p><strong> </strong></p>
The objective of this study was to evaluate the post-harvest quality of bananas (Musa x paradisiaca L.) Prata-anã and Nanica after application of exogenous ethylene (C2H4) during maturation. Bananas of Prata-anã cultivar were harvested 18 weeks after the anthesis (WAA) and those of Nanica cultivar with 13 WAA. After harvest, the fruits were submitted to 0, 1, 2, 3, 4 and 5 applications of 15 mL of ethyl-5/m3 in refrigeration chambers at 15ºC and later stored at room temperature (24 to 28ºC) and refrigerated at 15°C for 10 days. Peel color, fresh weight loss, firmness, total soluble solids, total bark chlorophyll, total bark and pulp carotenoids were evaluated at 0, 3, 4, 7 and 10 days after harvest (DAH). The Assistat program was used in statistical analysis. Among the storage conditions, fruits kept under refrigeration had a longer shelf life. The Prata-anã cultivar was superior to Nanica, presenting maturation indexes ideal for transport and commercialization, evaluated for the interactions of storage temperature, ethylene (C2H4) applications and storage time. It was concluded that the banana Prata-anã requires 3 and Nanica 4 applications of ethyl, for the harvest with 18 and 13 weeks, respectively, in order to promote a fast and uniform maturation.
aBstraCt-The myrtle (Eugenia gracillima Kiaersk.) is a native fruit species in the Chapada of Araripe, state of Pernambuco, Brazil. The fruits are collected from the wild and are consumed fresh or processed as pulp, juice, jelly, liquor or desserts. Myrtle fruit production is of significant socioeconomic value for the region and, therefore, the description of myrtle fruit ripening stages may contribute to the development of its production chain. As a result, the objective of the present study was to evaluate the physical, quality and ripening changes of myrtle fruits at different developmental stages. The fruits were picked at five distinctive stages and evaluated for longitudinal and transverse diameters; fresh, dry and water mass; water contents; soluble solids (SS); titratable acidity (TA); pH; SS/TA ratio; carbohydrates (starch, total, reducing and nonreducing sugars); ascorbic acid; total pectin, soluble pectins and percentage of pectin solubilization; polymeric, oligomeric and dimeric phenolics; total anthocyanins, carotenoids and chlorophyll; and yellow flavonoids. Along fruit ripening processes increases in SS, anthocyanins and carotenoids, in the SS/TA ratio and of percentages of pectin solubilization were determined. On the other hand, decreases in TA and total chlorophyll were observed. The ripening stage at which peel color is completely dark red (ripening stage 4) is most appropriate to harvest myrtle fruits for human consumption. index terms: Eugenia gracillima Kiaersk, fruit quality, maturity index. Sabendo que a produção de frutas desta espécie é de grande valor socioeconômico para a região, a caracterização dos estádios de maturação do fruto da murta poderá contribuir com o desenvolvimento de sua cadeia produtiva. Desta forma, objetivou-se com o presente trabalho avaliar as mudanças físicas, de qualidade e de maturação dos frutos da murta em diferentes estádios de maturação. Os frutos foram selecionados em cinco estádios e avaliados quanto aos diâmetros longitudinal e transversal; massas fresca, seca e de água; teor de água; sólidos solúveis (SS); acidez titulável (AT); pH; relação SS/AT; carboidratos (amido, açúcares solúveis totais, redutores e não-redutores); ácido ascórbico; pectina total, solúvel e percentagem de solubilização de pectina; fenólicos dímeros, oligoméricos e poliméricos; antocianinas, carotenoides e clorofila totais; e flavonoides amarelos.
