La cerveza es considerada la bebida más importante a nivel mundial; se obtiene de la fermentación de granos de cebada y malta, con una graduación alcohólica relativamente baja. Entender el proceso de elaboración, y como cada uno de sus ingredientes influye en las características sensoriales de la bebida, permite al productor tener mayor control sobre los resultados. El presente trabajo de investigación da cuenta del proceso de elaboración de una cerveza artesanal tipo lager. La metodología utilizada tiene en cuenta las recomendaciones de diferentes autores; sin embargo, se adapta el proceso a las especificaciones del laboratorio de cocina donde se lleva a cabo la experimentación. Se evalúan dos factores diferenciadores, los cuales son la concentración del lúpulo y los rangos de temperatura en el proceso de fermentación en frio, para la levadura tipo lager. Son consumidores habituales los que evalúan el producto. Se analizan las pruebas sensoriales implementadas, y se concluye cuál es la influencia de las condiciones de fabricación sobre la calidad de la cerveza artesanal tipo lager.
Correspondiente con el estilo de vida del ser humano, el rubro de alimentos y bebidas debe ofrecer productos valiosos, con elevado aporte nutricional, sostenibles, de fácil preparación y con gran durabilidad; necesidad que se encuentra alineada con los Objetivos de Desarrollo Sostenible (ODS) número 2, 3 y 12, planteados por la ONU. Entre las alternativas disponibles en el mercado, sobresalen los concentrados, las harinas, las bebidas y los comprimidos. En los últimos años, se ha buscado reutilizar los residuos de diferentes sectores, aprovechando su capacidad de transformación como materia prima o insumo; las industrias del café y la uva no son ajenas a esta tendencia. Diversos estudios exponen el potencial de la cáscara del café y la uva, como fuente de compuestos fenólicos, antioxidantes y fibra dietaria. Por otra parte, la cultura gastronómica exige regresar a las raíces y a lo autóctono, en congruencia con los principios de seguridad y soberanía alimentaria. En los Andes, se dispone de la quinua y el amaranto, caracterizados por contener la totalidad de aminoácidos esenciales; además, son ricos en vitaminas E y C, y calcio, hierro y zinc. El presente proyecto de investigación busca formular un producto comestible integral, tipo harina, que conserve los beneficios ofrecidos por la cáscara de café, el epicarpio de uva, el amaranto y la quinua. Para ello, se desarrollará un estudio cuantitativo experimental, siguiendo un diseño factorial con dos fuentes de variación: tipo de cereal andino y clase de residuo. Como respuesta, se evaluará la calidad bromatológica, antioxidante, microbiológica y sensorial del alimento, con una significancia estadística de α = 0.05. Se espera obtener un alimento aceptado por el consumidor, benéfico nutricionalmente y fácil de vincular a preparaciones gastronómicas; lo anterior, con miras a su transferencia a los actores involucrados en el servicio de alimentos y bebidas.
El mayor reto que se enfrentará a nivel internacional, en los próximos 35 años, será asegurar el abastecimiento de alimentos para la poblaciónmundial; la magnitud de dicha tarea, estará en función de la tasa de crecimiento poblacional, la estabilidad económica, los recursos naturales yla estructura agroindustrial de cada país. Al respecto, son diferentes los eslabones comprometidos con el favorecimiento de una alimentación sana,balanceada, suficiente, sustentable y sostenible, iniciando por el nivel productivo primario, pasando por la cadena de transformación y desembocando en el sector gastronómico. Estos rubros, tanto en Méxicocomo en Colombia, atienden a una demanda creciente de alimentos: de acuerdo con la FAO, durante el 2017, la producción de alimentos en México se incrementó en un 74%; siendo los restaurantes quienes aportaron el 2% del Producto Interno Bruto (PIB), generando alrededor de 5.5 millones de empleos. Por su parte, la Bolsa Mercantil de Colombia asegura que latransformación de alimentos es uno de los rubros más dinámicos, abarcando cerca del 24% del PIB. Específicamente, el crecimiento del subsector de suministro de alimentos preparados ha sido continuo desde 2006, nunca inferior al 3% anual, proyectándose que el foodservice alcance los 38 billones en ventas en 2021.
Nickel is essential in many consumer, industrial, military, transport, aerospace, marine, and architectural products due to its outstanding physical and chemical properties. This work focuses on the calcination and pre-reduction of laterite nickel ore to produce ferronickel. Ferronickel is an alloy containing nickel (about 30% wt.) and iron used for manufacturing stainless steel. Calcination and pre-reduction entail removing chemically bonded water from partially dried ore and removing oxygen from mineral oxides in the calcine. Here we combine a proprietary database with operation data of two rotary kilns and model predictions of Mean Residence Time, shell losses, intraparticle evaporation, and intraparticle temperature distribution. The kilns feature notable differences in length, inclination angle, excess air, but the predicted Mean Residence Times are similar. A fitted profile of experimental solids bed temperature represented particles surface temperature. The model considered slab-like mineral particles with surface-to-center distances of 13, 25, and 38 mm. Results show notable differences in the drying zone length and average surface-to-center temperature differences. Surface-to-center distances higher than 25 mm result in average surface-to-center temperature differences higher than 80°C. The following steps are improvements in the particle model and its coupling with the gas and wall temperature profiles.
In the ferronickel production process, mineral calcination is one of the most energy-intensive stages. In a typical rotary kiln calciner, particulate solids and combustions gases move counter currently, while solids undergo drying, pre-reduction, and partial reduction reactions. The combustion of natural gas provides the thermal energy for drying and reduction reactions. About 80 to 85% of the incoming laterite ore leaves the reactor as calcined ore, while the flue gases entrain part of the solids as dust. This work presents a theoretical analysis contrasted with experimental results to evaluate the partial reduction of laterite ores in two rotary kilns of 185 m and 135 m length. The study focused on the water formed in the process, including a comparative analysis of water consumption by two different solids recovery technologies, a gas scrubber and an electrostatic precipitator. Simulations allowed evaluating the water and greenhouse gas formation in the main streams of the process. Among the tested operation conditions, the moisture content in the pellets, consisting of agglomerated dust, strongly influenced the amount of water released in the process and the energy consumption. Furnace RK-2 needs approximately 56% more energy to evaporate the moisture content in the feedstock. Furthermore, furnace RK-2 released 55.4 m3h−1 of water into the atmosphere, which represented two times the amount released by furnace RK-1. Gas scrubber analysis showed that as the liquid water increased, more H2O in the gases was condensed; however, the destroyed exergy also increased. Electrostatic precipitators appear as an adequate technology for reducing water and energy consumption in the ferronickel industry.
