The metallic complexes of Cu(II), Zn(II), Mn(II), Ni(II), Cd(II), Pb(II), Cr(III), Fe(III), Co(III), ammonium, sodium, Ag(I), alkaline earth metals and of some lanthanides ions are described. INTRODUÇÃOO glifosato [N-(fosfonometil)glicina] é um herbicida sistêmico, pós-emergente e não seletivo largamente utilizado na agricultura 1 . O glifosato pertence ao grupo químico dos aminoácidos fosfonados e tal como seu precursor, a glicina, apresenta comportamento zwiteriônico, com separação de duas cargas em pH neutro, uma positiva no grupo amino e uma negativa no grupo fosfonato. A fór-mula estrutural do glifosato é mostrada na Figura 1.O modo de ação do glifosato consiste na alteração de diferentes processos bioquímicos vitais nas plantas, como a biosíntese de aminoácidos, proteínas e ácidos nucléicos 2 . O herbicida é absorvido pelo tecido vivo e translocado, via floema, através da planta para raízes e rizomas, e sua ação inibe enzimas específicas como a enolpiruvil shikimato-3-fosfato sintase (EPSP) suspendendo a sín-tese de aminoácidos aromáticos 1,3 . As plantas tratadas com glifosato morrem lentamente, em poucos dias ou semanas, e devido ao transporte por todo o sistema, nenhuma parte da planta sobrevive.Em condições normais, a enzima EPSP catalisa, na planta, a reação que envolve a transferência do enolpiruvil do fosfoenolpiruvato (PEP) para o shikimato-3-fosfato (S3P), formando 5-enolpiruvil shikimato-3-fosfato (EPSP) e fosfato inorgânico (P i ). Esta reação está representada na Figura 2. Numerosos estudos usando NMR, fluorescência e calorimetria de varredura diferencial demonstraram que o glifosato forma preferencialmente um complexo ternário estável com a enzima EPSP sintase e S3P (EPSP-S3P-glifosato). Esse provável complexo ternário representa a forma atualmente aceita como responsável pela atividade do herbicida 4 . Na maioria dos casos, o glifosato não é metabolizado pela planta, razão pela qual não apresenta seletividade. Quando aplicado diretamente no solo apresenta baixa atividade, devido à degradação microbiológica para produtos não fitotóxicos 5 (CO 2 , PO 4 -3 e NH 3 ) e à grande adsorção pelos constituintes do solo 6 .O grupo fosfonato R-PO(OH) 2 do composto tem a habilidade de formar complexos fortes com metais. Todos os processos de adsorção, fotodegradação e biodegradação dos fosfonatos são modificados pela presença de íons metálicos, devido à formação de complexos solúveis e não solúveis 7 . The aim of this work is to discuss selected applications of electroanalytical techniques for the detection of pesticides in foods and beverages, published in the last ten years. The applications involved different working electrodes for the electroanalytical determination of pesticides, namely amperometric biosensors, cholinesterase-based biosensors, polymer-modified electrodes, ultramicroelectrodes and hanging mercury drop electrodes. They were used for several voltammetric and amperometric techniques in different analytical procedures for the detection and quantification of different classes of pesticides in different food matrices.Keywords: pesticides; electroanalytical methods; foods. CONSIDERAÇÕES GERAISDe acordo com a União Internacional de Química Pura e Aplicada (IUPAC) 1 , pesticidas são substâncias ou mistura de substânci-as utilizadas na produção, colheita ou no armazenamento de alimentos. Eles são bioativos e capazes de prevenir, destruir ou combater espécies indesejáveis que, de alguma maneira, possam interferir na produção, no processamento, armazenamento, transporte e estocagem de alimentos, produtos agrícolas em geral, madeira e produtos derivados de madeira.Esta definição também compreende substâncias utilizadas no combate a insetos domésticos ou quaisquer agentes preventivos à ação de vetores de doenças que possam ser transmitidas ao homem ou animais domésticos como, por ex., febre amarela, doença de Chagas, malária, entre outras. Substâncias usadas como reguladoras no crescimento de plantas, agentes desfolheantes e dessecantes também são denominadas pesticidas.Existem registros de diferentes substâncias utilizadas como pesticida desde a Antiguidade, tal como piretro de origem natural. No entanto, o uso moderno de pesticidas é datado do século passado, onde substâncias inorgânicas como aceto arsenito de sódio, conhecido como "verde Paris", fluoreto de cálcio, fluorsilicato de cálcio, arseniato de sódio, arsênio branco, entre outras, foram intensamente empregadas 2 . A partir da década de 30, o aumento da produção agrícola e, principalmente, a diversidade de culturas impuseram a utilização de outras substâncias com melhor poder pesticida. Um grande número de substâncias foram formuladas especialmente para uso na agricultura, no entanto, o fator determinante para o aumento na produção de pesticidas foi a descoberta do DDT [1,1,1-tricloro-2-bis-(pclorofenila)-etano], um organoclorado com alto poder inseticida que foi desenvolvido durante a Segunda Guerra Mundial (1939) 2 . Existem cerca de 600 ingredientes ativos, utilizados na formulação de pesticidas, registrados para uso específico na agricultura. Destes, 350 contribuem com 98% dos pesticidas mais utilizados, sendo que 80% deles são rotineiramente usados na agricultura de países da América do Sul, como o Brasil 3,4 .Todos estes pesticidas compreendem uma larga variedade de substâncias químicas com dif...
Este artigo apresenta breve revisão sobre pesticidas muito utilizados no Brasil em culturas de soja, milho e cana-de-açúcar. Foram abordados o mecanismo de ação, a degradação e a toxidez dos herbicidas glifosato, pendimetalina e atrazina e dos inseticidas fenitrotion e fipronil. Verificou-se que o modo de ação desses pesticidas ocorre por meio da inibição de enzimas específicas como a enolpiruvil shikimato- 3-fosfato sintase (glifosato) e a colinesterase (fenitrotion), de proteínas como as tubulinas (pendimetalina), de receptores do sistema nervoso como o ácido gama aminibutírico (fipronil) e da inibição da fotossíntese (atrazina). Em relação à degradação, a rota mais importante para o desaparecimento dos herbicidas glifosato e atrazina e do inseticida fenitrotion é a biodegradação. Fipronil, moderadamente persistente no ambiente, é degradado pela luz (fotodegradação). Para a pendimetalina, tanto os microrganismos quanto a luz são responsáveis pelo desaparecimento desse composto. A toxidez dos pesticidas varia de acordo com o grupo químico em que se enquadram, sendo o efeito tóxico mais agudo para os seres humanos e outros mamíferos apresentado pelo fenitrotion (organofosforado).
